Steps:

  • Boil the chicken with a pinch of salt for 20 minutes. Chop 4 tomatoes and fresh parsley into very small pieces. Shred 1 cup of mozzarella cheese, if you haven't yet. (You can also buy shredded cheese) Cut the boiled chicken into small pieces, or take through a food processor (but not too much, you don't want it grounded.) Slice 1 baguette into thin slices. Mince 2 cloves of garlic. In a medium sized bowl, add in the chopped tomatoes, 1 cup of shredded cheese, 1 Tablespoon of mayonnaise, 2 cloves of minced garlic, a pinch of salt, shredded or chopped chicken pieces, and a handful of chopped parsley. Turn oven on to broil. On an oven sheet, spread slices of baguette. Put the chicken and cheese mix on each slice. Transfer to the oven to broil for 5 mins.

2 teaspoons garlic, (fresh or puréed)
1 teaspoon salt
½ teaspoon pepper
3 teaspoons italian seasoning
2 teaspoons olive oil
3 medium tomatoes, diced
¼ red onion, chopped
1 clove garlic, grated
salt, to taste
2 tablespoons olive oil
4 tablespoons fresh basil
½ cup balsamic vinegar
½ cup shredded parmesan cheese, for topping

Steps:

  • Combine chicken and marinade ingredients and set aside.
  • Combine bruschetta ingredients.
  • Place balsamic vinegar in a small saucepan and bring to a boil over high heat. Reduce heat to simmer for 8-10 minutes, until mixture has thickened and formed a glaze (be careful not to over-reduce).
  • Cook chicken in a large skillet over high heat about 5-6 minutes per side. Once cooked, top with bruschetta, a drizzle of balsamic glaze, and a sprinkle of Parmesan cheese.

2 cups milk
1 (8 ounce) package cream cheese
4 slices canned jalapeno peppers, chopped
2 teaspoons Dijon mustard

3 dashes hot sauce, or to taste
2 cups shredded Cheddar cheese
1 cup dry bread crumbs
2 tablespoons butter
2 tablespoons chopped fresh parsley

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 to 10 minutes. Drain.
