Number Of Ingredients 4

4 pounds Yukon Gold potatoes, washed and rinsed
1 gallon whole milk
4 ounces unsalted butter, melted
1 tablespoon kosher salt

Steps:

  • Peel the potatoes and slice as thinly as possible on a mandoline directly into a large, 8-quart container filled with 4 quarts of cold water. Cover and refrigerate overnight.
  • Drain the potatoes and rinse with clean, cold water; spin dry in a salad spinner. Transfer the potatoes to an 11-quart pot, cover with the milk and set over medium heat. Bring to a simmer, about 35 minutes. Reduce the heat in order to maintain a simmer and cook, uncovered, until the potatoes are fork tender and beginning to fall apart, 25 to 30 minutes.
  • Reserve 1 cup of the cooking milk. Drain the potatoes thoroughly in a colander and return them to the pot. Press the potatoes through a ricer into a large mixing bowl. Add the reserved hot milk, butter and salt and use an electric hand mixer to whip on low speed for 15 to 30 seconds. Do not overwhip.

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 6

2 pounds Russet potatoes, cleaned and quartered (3 to 4 potatoes)
Fine sea salt
3/4 cup heavy cream
1/2 cup whole milk
8 tablespoons (1 stick) salted butter, cubed, room temperature
1/2 teaspoon freshly ground black pepper

Steps:

  • Put the potatoes in a saucepan and add enough water to cover generously. Salt the water, bring to a slow simmer over medium heat, and cook until the potatoes are tender when poked with a fork, 15 to 20 minutes.
  • Meanwhile, combine the cream and milk in a small saucepan and bring to a simmer. Keep warm until ready to mix with the potatoes.
  • Drain the potatoes, and push them through a ricer into a mixing bowl. Begin whipping the potatoes ¿ either in a stand mixer fitted with the whisk attachment or with a handheld mixer ¿ adding the butter as you go. When the butter has melted, gradually add three-quarters of the hot cream mixture, whipping until the potatoes are soft and fluffy. Add 1/2 teaspoon salt and the pepper, and then any additional cream mixture as needed for the potatoes to achieve the texture of stiffly whipped cream. Serve immediately, or cover and set over a double boiler to keep warm.

WHIPPED POTATOES RECIPE

Whipped Potatoes Recipe image

These light and fluffy Whipped Potatoes are a unique and delicious alternative to traditional mashed potatoes. Great taste, great texture!

Provided by LifeMadeSimpleTeam

Categories     Side Dish

Time 45m

Number Of Ingredients 8

4 lb russet potatoes (peeled and cut until 1-inch cubes)
6 tbsp unsalted butter
2 cloves garlic (minced and mashed into a paste)
1 1/2 cup whole milk
2 tsp coarse kosher sea salt (or 1 1/2 tsp. fine sea salt)
1/2 tsp ground black pepper
1/4 tsp garlic powder
1/8 tsp paprika

Steps:

  • In a large stockpot or Dutch oven set over medium-high heat, add 1 inch of water. Set steamer basket inside and bring water to a boil.
  • Fill steamer basket with potatoes and cover. Reduce heat to medium and cook for 20-25 minutes or until potatoes are fork tender.
  • Meanwhile, in a small saucepan set over medium heat, add butter. Once the butter has melted add the garlic and cook until fragrant, about 1-2 minutes. Add milk, salt, pepper, garlic powder and paprika. Continue cooking for 5 minutes, then cover and remove from the heat.
  • Remove stockpot or Dutch oven from the heat, drain water, then pour the potatoes directly into the pan. Return to the stovetop and cook for 1 minute to allow any excess moisture to evaporate.
  • Pour into the bowl of a stand mixer fitted with the whisk attachment (or a large mixing bowl with a hand held mixer) and mix on low for 1 minute. Slowly add the warm butter/milk mixture until fully incorporated. Beat on medium-high until potatoes are light and fluffy, about 1-2 minutes.
  • Let potatoes stand for 5 minutes before transferring to a serving dish. Garnish with freshly chopped parsley, if desired.

THE FLUFFIEST WHIPPED POTATOES

The Fluffiest Whipped Potatoes image

Although this comfort-food classic only calls for a handful of simple ingredients, its success lies within the technique. Potatoes with high starch and low-moisture- like russet, Yukon and Idaho -result in the creamiest mashed potatoes. It's important to nail the timing to achieve best results. Hot liquid causes potato starch to swell and thicken; when overworked, it becomes gummy. It's also important to add the butter first. When the water in the heavy whipping cream combines with the starch, it can make your potatoes gluey. By incorporating the butter before, you coat the starch with fat while establishing a rich, buttery flavor.

Provided by Teresa Sabga

Time 35m

Yield 6 servings

Number Of Ingredients 6

4 1/2 pounds russet potatoes (Yukon or Idaho, about 8)
1/2 tablespoon salt
1 tablespoon unsalted butter, softened
1/4 cup heavy whipping cream
1/8 teaspoon black pepper
Parsley, for garnish

Steps:

  • 1. Remove the skin from the potatoes and cut into 1-inch cubes.
  • 2. Fill a large pot with enough water to cover the potatoes. Stir in the salt, bring to a boil and cook for 15-20 minutes, or until the potatoes are soft enough to pierce easily with a fork.
  • 3. Strain in a colander and allow it to sit undisturbed for at least 5 minutes. This will allow excess water to drain away.
  • 4. Transfer the potatoes and butter to the mixing bowl for a stand mixer. Using the paddle attachment, beat on a low speed for 2 minutes. (This can also be done by hand with a whisk.)
  • 5. Switch to the whisk attachment and scrape the sides to remove any lumps.
  • 6. Heat the cream in the microwave for 15 seconds. Gradually stream it into the bowl on the lowest speed; then whip on medium for 2 minutes.
  • 7. Transfer to a serving dish and garnish with parsley. Freeze leftovers; reheat with a splash of milk.

BASIC MASHED (WHIPPED) POTATOES

Basic Mashed (Whipped) Potatoes image

I didn't really know what to call these....we call them mashed potatoes, but I use an electric mixer, not a potato masher! So I compromised on the name. This is a required side dish for meatloaf, country fried steak, or fried chicken at my house. Anytime someone just needs some comfort food, we seem to have these. They are quick and easy to make, very basic, and totally uncomplicated! I hesitated to post these, because I think everyone makes these. But then I remembered when I first got married, and I didn't even know how to make toast! So I posted it! We normally serve this as posted, but you can add chopped green onions, cheese, garlic, etc if you'd like. You can substitue sour cream for the half and half as well....especially nice if you add some chives.

Time 40m

Yield 6 serving(s)

Number Of Ingredients 5

4 lbs idaho potatoes, peeled and sliced 2 inches thick
1/2 cup butter
1 cup half-and-half, warmed
1 1/2 teaspoons salt (or to taste)
1 1/2 teaspoons black pepper (or to taste)

Steps:

  • Place the potatoes in a large cooking pot and cover with cold water. Bring to a boil. Reduce the heat to medium low. Simmer until the potatoes are just tender (20 to 30 minutes).
  • Drain water. Reserve 1 cup if you want to substitute the potato water for the half and half to save calories. Mix on low speed of an electric mixer.
  • Add the butter after cutting it into several pieces so it melts faster (melt it first if you want to so that the potatoes remain steaming hot). Add the warmed half and half or the 1 cup reserved potato water.
  • Mix again with the electric mixer, starting on low and increasing the speed to reach the desired consistency. Add the salt and pepper.
