HONEY CHICKEN BREASTS WITH HABANERO TOMATILLO SAUCE image

4 small bone in chicken breasts
salt and pepper
1 T minced fresh basil
`1 tsp minced fresh oregano
1 pinch fresh lavender, minced
1 T flour
1 T grapeseed oil
1/2 cup fresh OJ
1 T honey
1 T dijon mustard
1 tsp chopped fresh thyme
1 recipe habanero tomatillo sauce

Steps:

  • Prehat the oven to 450F. Place a large ovenproof skillet over medium high heat. Generously season the chicken with salt and pepper. In a small bowl, combine the flour and minced herbs. Place this mixture on a shallow plate and dredge the breasts in the herbed flour. Shake off any excess. When the pan is hot, add the oil and swirl to coat. Place the chicken breasts skin side down in the pan, and sear for 3 minutes. Use tongs to flip breasts over, and place the pan in the oven for about 15 minutes. Remove and test for doneness (165F). Remove from the oven, place on plate and keep warm. Place pan back on the stovetop over medium heat. Add the OJ, honey and mustard and bring to a simmer. Cook, stirring constantly, for about 2 min to thicken. Stir in the thyme, remove from heat, and set aside. Spoon some of he habanero tomatillo sauce in center of 4 plates and place chicken breast on top. Drizzle the warm orange mustard sauce equally over hte breasts, and serve hot.

  • Heat olive oil in a skillet over medium heat; cook and stir chicken in hot oil until lightly brown, about 5 minutes. Pour honey mixture into skillet and continue to cook and stir until chicken is no longer pink in the center and sauce is thickened, about 5 minutes more.

I had a jar of tomatillo salsa in the pantry and decided to create an easy week night dish full of flavor. This sure fit the bill. DH asked me to write it down before I forgot what I did so I could duplicate it again. I'm watching fat, so I didn't add cheese or sour cream to my portion, but it was still delicious. Cleanup is a breeze -just throw the foil away!

4 boneless skinless chicken breast halves
garlic powder
salt and pepper
1/4 teaspoon cumin seed
1/2 medium onion, halved and sliced
1 (1 pint) jar tomatillo salsa (mild or hot)
4 slices monterey jack pepper cheese
1/4 cup loosely packed chopped cilantro
4 tablespoons sour cream
8 flour tortillas

Steps:

  • Line baking tray with aluminum foil.
  • Place chicken breasts on foil.
  • Sprinkle with garlic powder, salt, and pepper to taste.
  • Sprinkle with cumin seed.
  • Place 1/4 of onion slices on each chicken breast half.
  • Cover all with tomatillo salsa.
  • Place another sheet of aluminum foil on top of chicken breasts and fold all four sides until sealed very tight.
  • Bake foil packet on tray in 375 oven for 30 minutes.
  • Remove from oven and carefully remove top foil sheet.
  • Place a slice of pepper jack cheese on each chicken breast half.
  • Sprinkle all with chopped cilantro.
  • Return to the oven uncovered.
  • Remove from the oven when cheese has melted.
  • Meanwhile heat tortillas.
  • Serve one chicken breast per person.
  • Place a tbsp of sour cream on top of each chicken breast half.
  • Serve with hot tortillas and refried or borracho beans.

1 teaspoon orange zest, grated
1 clove garlic, minced

1/2 teaspoon vegetable oil

Steps:

  • In small bowl, combine honey with juice concentrate, orange zest, garlic, salt and red pepper flakes.
  • Rinse chicken with cold water and pat dry. Season lightly with salt.
  • In large non-stick skillet, heat margarine and oil over medium-high heat. Add chicken and cook about 4 minutes, until seared.
