Dukkah is an Egyptian dry spice mix used in recipes or for dipping. Serve with marinaded grilled chicken on a casual sharing platter

6 chicken breasts , sliced into long, thin strips
2 large aubergines , cut into 3cm cubes
3 tbsp cumin seed
1 tbsp ground cumin
4 tbsp clear honey , plus 2 tbsp for drizzling
2 tbsp olive oil
zest and juice 1 lemon
2 tbsp sesame seed
2 tsp cumin seed
2 tsp coriander seed
50g shelled pistachio
1 tsp sweet paprika
1 tsp crushed black pepper

Steps:

  • Pre-soak wooden skewers in warm water for 20 mins. (You will need about 32 skewers and they must be able to fit inside a griddle pan or frying pan.) Meanwhile, mix the marinade ingredients and some seasoning in a large bowl, then tip half into another bowl. Add the chicken to 1 bowl and the aubergine to the other. (If you're not catering for vegetarians, you can mix them together in one bowl.) Leave to marinate in the fridge for at least 20 mins, or up to 24 hrs.
  • To make the dukkah, toast the sesame, cumin and coriander seeds in a dry pan until aromatic. Meanwhile, tip the pistachios into a small food processor and blitz until finely chopped, but still with some texture, then transfer to a bowl. Tip the toasted seeds and spices into the processor and blitz again until finely chopped, then add these to the pistachios, along with the paprika, black pepper and a good pinch of salt. Mix, then set aside until ready to serve.
  • Heat oven to 220C/200C fan/gas 7. Thread the aubergine onto skewers, about 4-5 chunks per skewer, and place on 2 parchment-lined trays. Bake for 20-25 mins until tender and golden, turning the skewers and swapping the trays halfway through cooking.
  • Meanwhile, heat a griddle pan or a frying pan (or use both to speed up the cooking) over a medium-high heat. Thread the chicken pieces onto the remaining skewers. Cook the chicken skewers in batches in the hot pan, turning regularly to prevent the honey burning. When nicely charred, but not cooked through, transfer to a baking tray. When all the chicken skewers are browned, drizzle them and the aubergine skewers with the remaining honey. Pop the chicken into the oven with the aubergine for the final 5-10 mins cooking, or until they are cooked through and sticky. Serve the skewers with a bowl of dukkah for dipping.

1/4 cup Greek yogurt
1 tablespoon mayonnaise
1 teaspoon zaatar
1/4 teaspoon kosher salt
1 teaspoon grated lemon zest (from 1 lemon)
2 tablespoons lemon juice (from 1 large lemon)
2 tablespoons raw honey
1 tablespoon olive oil
1/2 teaspoon kosher salt
1 tablespoon coriander seeds, toasted and cracked
2 boneless, skinless chicken breasts (about 1 1/4 pounds)

Steps:

  • For the sauce: In a small bowl, whisk together the yogurt, mayonnaise, zaatar and salt. Set aside.
  • For the chicken: In a medium bowl, whisk together the lemon zest, lemon juice, honey, olive oil, salt and coriander seeds. Slice the chicken breasts lengthwise into 1/3-inch strips; add to the bowl and toss to coat. Let sit at room temperature for about 15 minutes to marinate.
  • Preheat a grill pan over medium heat. Thread the chicken strips onto 8-inch skewers. Grill for about 4 minutes per side, until the chicken is cooked through and golden brown. Remove to a platter. Serve warm with the dipping sauce.

1/3 cup liquid honey
4 tablespoons soy sauce
2 tablespoons barbecue sauce
3 large fresh garlic cloves (chopped in quarters or large pieces)
1 green onion (sliced into about 1-inch pieces)
1/4 teaspoon black pepper
8 large boneless skinless chicken breasts
wooden skewer (soaked in cold water a minimum of 30 minutes or longer before threading)

Steps:

  • Slice the chicken breasts in half or into thirds or whatever size you you desire to thread on the skewers.
  • In a large glass bowl (use a large enough bowl to hold the marinade and the chicken strips) whisk together oil, honey, soy sauce, barbecue sauce and black pepper until well combined; add in garlic pieces and green onion.
  • Add in the chicken strips and toss with the marinade to combine well.
  • Cover and refrigerate for a minimum of 8-24 hours (tossing the strips once or twice during chilling won't hurt!).
  • Remove the chicken strips and discard the marinade.
  • Thread chicken strips on the wooden skewers piercing at least 3 times through the skewers (make certain to soak the skewers for a minimum of 30 minutes before threading).
  • Grill over medium heat.

3 cloves garlic, minced
1 teaspoon pepper
3 chicken breasts, cubed
1 red onion
2 red bell peppers
2 orange bell peppers
2 yellow bell peppers
fresh parsley, to taste
wooden skewer, soaked in water

Steps:

  • Soak the skewers in water for 5-10 minutes and set aside.
  • In a bowl with the chicken, add the ingredients for the marinade.
  • Mix until coated. Cover with plastic wrap and refrigerate for 30 minutes to 2 hours.
  • If baking, preheat the oven to 400°F (200°C).
  • Prepare the vegetables by cutting them into 1-inch (2 ½ cm) squares.

12 (10 inch) wooden skewers
4 boneless skinless chicken breasts, cut into strips (make certain that you cut the strips large enough to thread through the wooden sticks)
4 crushed fresh garlic cloves
2 -4 tablespoons honey
1/4 cup ketchup
1/4 cup Worcestershire sauce
2 teaspoons Dijon mustard
2 teaspoons Tabasco sauce
salt and pepper

Steps:

  • For the marinade: combine all ingredients.
  • Coat the chicken strips in the marinade to coat well.
  • Transfer to a glass dish.
  • Cover and marinate overnight.
  • Thread the chicken strips on the water-soaked wooden skewers.

8 skinless, boneless chicken breast halves - cut into 1 inch cubes

Steps:

  • In a large bowl, whisk together oil, honey, soy sauce, and pepper. Before adding chicken, reserve a small amount of marinade to brush onto kabobs while cooking. Place the chicken, garlic, onions and peppers in the bowl, and marinate in the refrigerator at least 2 hours (the longer the better).
  • Preheat the grill for high heat.
  • Drain marinade from the chicken and vegetables, and discard marinade. Thread chicken and vegetables alternately onto the skewers.
  • Lightly oil the grill grate. Place the skewers on the grill. Cook for 12 to 15 minutes, until chicken juices run clear. Turn and brush with reserved marinade frequently.
