HONEY-GLAZED HENS WITH FRUIT STUFFING

- In a large skillet over medium heat, melt butter. Add onion and celery; cook and stir until tender. Stir in the bread, fruit bits, water and allspice; cover and cook for 2-3 minutes or until heated through., Loosely stuff hens with stuffing. Tuck wings under hens; tie drumsticks together. Sprinkle with salt and pepper. Place breast side up on a rack in a shallow roasting pan. Combine butter and honey; drizzle over hens., Bake, uncovered, at 350° for 1 to 1-1/2 hours or until a thermometer reads 180° for hens and 165° for stuffing, basting occasionally with pan drippings. Cover loosely with foil if hens brown too quickly. Cover and let stand for 10 minutes before serving.

- Tie legs of each hen together; tuck wings under hens. Place on a greased rack in a roasting pan. In a small saucepan, combine cornstarch and apple juice concentrate until smooth. HONEY-GLAZED APPLE-STUFFED CORNISH HENS

Steps:
- In a microwave-safe bowl, add ½ cup of butter and 2 tablespoons of honey.
- Microwave for 20 seconds, or until the butter is melted.
- Add 2 tablespoons brown sugar and mix with a spoon
- Add in ¼ teaspoon ground clove or cinnamon. Mix.
- Set aside.
- Empty the cavity of the cornish hens and rinse under cool water.
- Dice the apples.
- Stuff the cavity of the cornish hens with apples.
- Use butcher string to tie the legs together.
- Line a baking dish with foil (helps with the clean up process.
- Place the hens breast down and brush with a tablespoon of melted butter.
- Cover the baking dish with foil and bake at 350 for 20 minutes.
- Remove from the oven and brush cornish hens with the glaze.
- Place back in oven, uncovered, for 25 minutes.
LIGHT HONEY-GLAZED CORNISH HENS
Steps:
- Gather the ingredients. Preheat oven to 350 F.
- Place game hens breast-side down on a cutting board and cut in half along the backbone. Remove skin and trim excess fat.
- In a small microwave-safe dish, combine orange peel, lemon juice, orange juice concentrate, soy sauce, honey, garlic, onion powder, and thyme. Bring to boiling point in a microwave oven; set aside.
- Lightly grease a baking dish or spray with cooking spray.
- Divide chopped onion into 4 portions in baking dish; place hens bone-side down on onions.
- Pour orange juice mixture over hens.
- Bake hens in preheated oven for 45 minutes, basting every 10 to 15 minutes with cooking juices. If they brown too quickly, cover them loosely with aluminum foil.
- When hens are done, remove from baking dish, onions and all, to warm dinner plates.
- If desired, garnish with orange slices. Skim fat off juices in baking dish. If desired, thicken pan juices with a teaspoon of cornstarch mixed with 1 teaspoon of cold water. Serve juices on the side.
- Serve with hot cooked rice and a green vegetable. Enjoy!

- Remove giblets from hens and discard.
- Rinse hens under cold water and pat dry.
- Using a long, sharp knife, split the hens lengthwise.
- You may also buy precut hens.
- Place the hens, cavity side up, in a roasting pan.
- Dilute 1/4 cup of the apple juice concentrate with the water.
- Pour juice over the hens.
- Bake uncovered at 350F for 45 minutes.
- Turn breast side up.
- In a small pan over medium heat, combine the remaining apple juice concentrate, cornstarch and cinnamon; mix well.
- Add 2 lemon slices and continue cooking until thickened.
- Remove from heat and brush hens with the sauce.
- Return the hens to the oven and continue to bake for an additional 15 minutes.
- Transfer the hens to a serving platter and garnish with remaining lemon slices.
