SESAME TERIYAKI/HONEY GLAZED PORK RIBS

2 tablespoons olive oil
1/4 cup dried garlic and herb rub with Cajun spices
2 pounds pork spare ribs
1/2 cup sesame seed teriyaki marinade
2 tablespoons honey
Hickory wood chips, soaked

Steps:

  • Pat olive oil and dry rub over the ribs making sure all the ribs are covered completely in the rub and let sit overnight, refrigerated, in a non-reactive container.
  • Combine the sesame teriyaki marinade and honey, mix well and using hands completely cover the ribs with mixture. Let stand for at least 1 hour.
  • Light gas grill and set on a low to medium flame, placing soaked hickory wood chips wrapped in foil over the flames. Slow roast the ribs turning occasionally for about 1 hour.
  • Remove when done and serve.

  • Remove the membrane from the racks by using a dull knife and sliding the tip under the membrane that covers the back of each rib rack. Holding a paper towel in your hand, grip the membrane at one end of the slab of ribs and tug. It usually pulls right off.
  • In a skillet over medium heat, warm the oil. Add the ginger, garlic, and sesame seeds and cook, stirring often, until fragrant and softened, 2 to 3 minutes.

  • In a food safe bowl, mix the salt, pepper, garlic, paprika and cinnamon. Trim the pork ribs of any excess fat and carefully remove the membrane on the back of the ribs. Lather with dijon mustard and season thoroughly. Place in the fridge for 2 hours to set.
  • Preheat your Oklahoma Joe’s Highland Smoker for indirect cooking around 250F. Add some wood chips or wood chunks to the smoker for added flavor.
  • Add the ribs to the smoker on the indirect heat side. Cook for 3 hours. Every 30 minutes, spritz the ribs with the apple cider vinegar.
  • After 3 hours, pull your ribs off the smoker. Lay down a layer of aluminum foil with 3 tbsp of butter spaced out on the foil. Add some brown sugar and drizzled honey over the butter. Top the butter mixture with one of the pork ribs with the bone side facing up. Add more butter, honey and brown sugar on top of the rib. Carefully wrap in the foil until tight and secure. Repeat this step for all of the pork ribs.
