This easy, healthy banana muffin recipe comes together in one bowl in just 30 minutes with options to add a delicious crunch from walnuts! The perfect healthy breakfast or snack that's freezer-friendly, too.

3 VERY overripe bananas, mashed (about 1 1/3 cup mashed banana, make sure they are almost all the way brown)
⅓ cup honey
1 large egg, at room temperature
½ tablespoon vanilla extract
¼ cup olive oil
1/4 cup unsweetened vanilla almond milk (or milk of choice)
Dry ingredients
1 ¾ cup whole wheat pastry flour*
1 teaspoon baking soda
1 teaspoon cinnamon
½ teaspoon salt
Mix-ins
½ cup chopped walnuts, plus ¼ cup chopped walnuts for sprinkling on top of muffins

Steps:

  • Preheat the oven to 350 degrees F. Line a muffin pan with liners and spray the inside of the liners to prevent sticking.
  • In a large bowl, mix together mashed bananas, honey, egg, vanilla, olive oil and milk until well combined. Add in whole wheat pastry flour, baking soda, cinnamon and salt and use a wooden spoon to mix together until the batter is just combined. DO NOT overmix. Fold in ½ cup chopped walnuts.
  • Divide batter evenly into muffin liners, sprinkle each muffin with chopped walnuts. Bake for 20-25 minutes or until the toothpick comes out with just a few crumbs attached.
  • Cool muffins for 5 minutes then remove and transfer to a wire rack to finish cooling. Muffins are best served warm and even better the next day. Makes 12 muffins.

3 large ripe bananas
3/4 cup white sugar
1 large egg
1/3 cup vegetable oil
1 1/2 cups all purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg (optional)
3/4 cups chopped walnuts
3/4 cups chopped walnuts
2 tablespoons brown sugar
1 tablespoon melted butter

Steps:

  • Preheat your oven to 350 degrees Fahrenheit and prepare a 12-cup muffin tin with paper liners (or grease very well with butter or cooking spray if you prefer not to use paper liners).
  • Mash the bananas in a large bowl and mix in the sugar and egg with a wooden spoon until well blended.
  • Add the vegetable oil and mix well.
  • Add the flour, baking powder, baking soda, salt, cinnamon and nutmeg, along with 3/4 cup of the chopped walnuts. Adding the walnuts with the dry ingredients helps prevent over-mixing.
  • Mix everything together just until the flour disappears and the walnuts are distributed evenly throughout the batter.
  • In a small bowl, combine the remaining 3/4 cup walnuts, brown sugar and melted butter and mix until the walnuts are coated.
  • Spoon the muffin batter evenly into the 12 muffin cups and spoon a bit of the coated walnuts onto the top of each one, making sure the topping is well distributed onto the top of each muffin (not in one big clump or it might sink into the muffin as it bakes!).
  • Bake for about 20-23 minutes, or until the muffins are golden brown on top and a toothpick inserted into the center of one of the muffins comes out clean.
  • Let the muffins cool in their tins for a few minutes before removing them to a wire rack to cool completely.

1 tablespoon white whole wheat flour
1 1/2 cups blueberries

Steps:

  • Preheat oven to 375 degrees F.
  • In a large bowl, add bananas. Using a fork mash up bananas until just very small lumps are left. Add honey, applesauce, coconut oil, vanilla extract and egg.
  • Using a fork mix until combined.
  • Next add in whole wheat flour, baking soda, cinnamon and salt. Using a spatula, mix until wet and dry ingredients are completely combined!
  • In a small bowl - combine 1-1/2 cups blueberries & 1 tablespoon of white whole wheat flour & toss to coat.
  • Gently fold blueberries into the batter.
  • Spoon the batter into muffin pan filling each hole about 3/4 of the way full (line or spray with cooking spray if not using the cupcake liners)
  • Bake for 15-17 minutes, or until toothpick comes out clean. Serve.

1/2 teaspoon nutmeg
1/4 teaspoon ground ginger
1/2 cup chocolate chips (optional)
1/2 cup walnuts (chopped - optional)

Steps:

  • Preheat oven to 350 degrees and prepare a lined or greased muffin pans
  • In a bowl, mash bananas with a fork until slightly clumpy. You can microwave them for 20 seconds prior to mashing to make it easier.
  • Stir in honey, egg, and oil to banana mixture.
  • Add in whole wheat flour, baking powder, baking soda and spices
  • Fold in chocolate chips.
