SOFT VANILLA NOUGAT



Soft Vanilla Nougat image

Use this recipe to make Milk Chocolate Cup-of-Fluffs . Nougat has a light, chewy consistency, a bright white color, and a charming ability to hold on to crunchy things like nuts or caramel pieces.

Yield Makes about 4 cups (785 g)

Number Of Ingredients 7

3 cups/355 g ice
3 egg whites
1 cup/200 g sugar
1/2 cup/120 ml corn syrup
1/4 cup/60 ml water
2 vanilla beans, scraped and seeded or 1 tablespoon vanilla extract
1/2 teaspoon salt

Steps:

  • 1 Put the ice in a medium bowl and set aside.
  • 2 Put the egg whites in the bowl of an electric mixer fitted with the whisk attachment and set aside.
  • 3 Stir together the sugar, corn syrup, and water in a medium saucepan. Bring to a boil over medium heat and continue to boil without stirring until the mixture reaches 235°F/114°C on a candy thermometer, about 6 minutes.
  • 4 Begin whipping the egg whites on low speed for about 1 minute, just until they are a little frothy. Continue cooking the sugar syrup until it reaches 245°F/118°C. (If your temperature goes higher, shock the syrup by setting the pan in the bowl of ice.) Pour a splash of the syrup into the egg whites, aiming for the space between the rim of the bowl and the whisk attachment. Continue whisking as you slowly add the rest of the hot sugar syrup. Increase the mixer speed to medium and whip until the nougat reaches a full, frothy foam, about 2 minutes.
  • 5 Add the vanilla seeds and salt to the nougat. Keep whipping until it forms stiff peaks, about 3 minutes more. Allow to cool in the bowl. Once it is at room temperature, it's ready to use in candy-bar production.

2 cups whole wheat flour
1 cup unbleached all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ cup margarine, softened
½ cup packed brown sugar
⅓ cup honey
1 teaspoon vanilla extract
½ cup milk

Steps:

  • Sift together the whole wheat flour, all-purpose flour, baking powder and baking soda; set aside.
  • In a medium bowl, cream together the margarine, brown sugar and honey until light and fluffy. Stir in the sifted ingredients alternating with the milk and vanilla. Cover dough and refrigerate overnight.
  • Preheat the oven to 350 degrees F (175 degrees C). Divide the chilled dough iinto quarters. On a well floured surface, roll the dough out one quarter at a time iinto a 5x15 inch rectangle. Divide into rectangles using a knife. Place rectangles ointo ungreased cookie sheets. Mark a line down the center of each one, and prick with a fork. For a cinnamon flavored cracker, sprinkle with a cinnamon sugar mixture before baking.
  • Bake for 13 to 15 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.

1 cup whole wheat flour
3/4 cup all-purpose flour
1/2 cup toasted wheat germ
2 tablespoons dark brown sugar
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
6 tablespoons cold butter, cubed
1/4 cup honey
4 tablespoons ice water

Steps:

  • Whisk together first 8 ingredients; cut in butter until crumbly. In another bowl, whisk together honey and water; gradually add to dry ingredients, tossing with a fork until dough holds together when pressed., Divide dough in half. Shape each into a disk; cover and refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to an 8-in. square. Using a knife or fluted pastry wheel, cut each into sixteen 2-in. squares. If desired, prick holes with a fork. Place 1 in. apart on parchment-lined baking sheets. , Bake until edges are light brown, 10-12 minutes. Remove from pans to wire racks to cool. Store in an airtight container.

  • Line a 9x9-inch square pan with whole graham crackers (break crackers, if necessary). Prepare pudding with milk as directions indicate; let stand 5 minutes, then blend with whipped topping. Spread half of the pudding mixture over graham crackers. Place another layer of graham crackers on top. Spread remaining pudding mixture over crackers. Add another layer of crackers. 1/2 teaspoon vanilla extract
1 cup buttermilk
3/4 cup flaked coconut
FROSTING
1 1/2 cups whipping cream
3 tablespoons sifted powdered sugar
1 teaspoon vanilla extract
1/3 cup flaked coconut (optional)

Steps:

  • 1. In medium bowl stir together graham crumbs, flour, baking powder and salt. Set aside.2. In small mixing bowl beat egg whites on high speed of electric mixer until stiff peaks form. Set aside.3. In large mixing bowl beat granulated sugar and shortening on medium speed of electric mixer until combined. Add egg yolks and 1/2 teaspoon vanilla. Beat until fluffy. Alternately add crumb mixture and buttermilk, beating until just combined after each addition.4. Gently fold egg whites and 3/4 cup coconut into graham mixture. Spread in two 9 x 1 1/2-inch round baking pans coated with cooking spray and lined with parchment paper. Bake at 350°F for 25 to 30 minutes or until toothpick inserted near center comes out clean. Cool in pans for 10 minutes. Remove from pans. Cool completely.5. In small mixing bowl beat cream, powdered sugar and 1 teaspoon vanilla on medium speed of electric mixer until soft peaks form.
