SOFT VANILLA NOUGAT
Use this recipe to make Milk Chocolate Cup-of-Fluffs . Nougat has a light, chewy consistency, a bright white color, and a charming ability to hold on to crunchy things like nuts or caramel pieces.

Steps:
- 1 Put the ice in a medium bowl and set aside.
- 2 Put the egg whites in the bowl of an electric mixer fitted with the whisk attachment and set aside.
- 3 Stir together the sugar, corn syrup, and water in a medium saucepan. Bring to a boil over medium heat and continue to boil without stirring until the mixture reaches 235°F/114°C on a candy thermometer, about 6 minutes.
- 4 Begin whipping the egg whites on low speed for about 1 minute, just until they are a little frothy. Continue cooking the sugar syrup until it reaches 245°F/118°C. (If your temperature goes higher, shock the syrup by setting the pan in the bowl of ice.) Pour a splash of the syrup into the egg whites, aiming for the space between the rim of the bowl and the whisk attachment. Continue whisking as you slowly add the rest of the hot sugar syrup. Increase the mixer speed to medium and whip until the nougat reaches a full, frothy foam, about 2 minutes.
- 5 Add the vanilla seeds and salt to the nougat. Keep whipping until it forms stiff peaks, about 3 minutes more. Allow to cool in the bowl. Once it is at room temperature, it's ready to use in candy-bar production.
HONEY GRAHAM CRACKERS

- Sift together the whole wheat flour, all-purpose flour, baking powder and baking soda; set aside.
- In a medium bowl, cream together the margarine, brown sugar and honey until light and fluffy. Stir in the sifted ingredients alternating with the milk and vanilla. Cover dough and refrigerate overnight.
- Preheat the oven to 350 degrees F (175 degrees C). Divide the chilled dough iinto quarters. On a well floured surface, roll the dough out one quarter at a time iinto a 5x15 inch rectangle. Divide into rectangles using a knife. Place rectangles ointo ungreased cookie sheets. Mark a line down the center of each one, and prick with a fork. For a cinnamon flavored cracker, sprinkle with a cinnamon sugar mixture before baking.
- Bake for 13 to 15 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.

- Whisk together first 8 ingredients; cut in butter until crumbly. In another bowl, whisk together honey and water; gradually add to dry ingredients, tossing with a fork until dough holds together when pressed., Divide dough in half. Shape each into a disk; cover and refrigerate until firm enough to roll, about 30 minutes., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to an 8-in. square. Using a knife or fluted pastry wheel, cut each into sixteen 2-in. squares. If desired, prick holes with a fork. Place 1 in. apart on parchment-lined baking sheets. , Bake until edges are light brown, 10-12 minutes. Remove from pans to wire racks to cool. Store in an airtight container.

- Line a 9x9-inch square pan with whole graham crackers (break crackers, if necessary). Prepare pudding with milk as directions indicate; let stand 5 minutes, then blend with whipped topping. Then spread cherry pie filling over the top. Cover, and refrigerate 3 hours.

MILK AND HONEY GRAHAM COCONUT CAKE

- 1. In medium bowl stir together graham crumbs, flour, baking powder and salt. Set aside.2. In small mixing bowl beat egg whites on high speed of electric mixer until stiff peaks form. Set aside.3. In large mixing bowl beat granulated sugar and shortening on medium speed of electric mixer until combined. Add egg yolks and 1/2 teaspoon vanilla. Beat until fluffy. Alternately add crumb mixture and buttermilk, beating until just combined after each addition.4. Gently fold egg whites and 3/4 cup coconut into graham mixture. - 1. In large mixing bowl combine graham crumbs, flour, granulated sugar, baking powder and salt.2. In small bowl combine egg, milk, oil and vanilla. Add to graham mixture. Stir until just combined. Stir in nuts.3. Spread batter in 8 x 4 x 2-inch loaf pan coated with nonstick cooking spray. Bake at 350°F for 50 to 55 minutes or until toothpick inserted near center comes out clean.
