HONEY-GARLIC PORK RIBS
This is a great recipe I discovered recently. I make it often because we really enjoy it...hope you do, too!

- Cut ribs into serving-size pieces; place in a large resealable plastic bag. Combine remaining ingredients; pour half the marinade over the ribs. Seal bag and turn to coat; refrigerate for several hours or overnight, turning bag occasionally. Cover and refrigerate remaining marinade. , Drain and discard marinade from ribs. Place ribs on a rack in a greased shallow baking pan. Cover and bake at 350° for 1 hour. Drain. Pour reserved marinade over ribs. Bake, uncovered, for 30-45 minutes or until meat is tender, brushing occasionally with pan juices.

SMOKED PORK RIBS
If you don't own a smoker, this is a great way to do ribs on the grill. I first saw this technique done by Adam Perry Lang, who is not only a great barbecue chef but a great all-around chef. In fact, he knows more about meat than practically anybody I've met. For this recipe I use pork spareribs, but the technique works just as well with lamb ribs too, though cook times will vary. Feel free to substitute your favorite BBQ sauce.

- Mix to combine all the rub ingredients. Moisten the ribs with lemon juice and then coat all sides with the rub, making sure to distribute evenly.
- Arrange the grill or smoker for indirect heating so the ribs will not be directly over the heat source. Using low heat and applewood chips (about half a pound), place ribs on cool part of the grill, wrap in foil, make a few incisions in the foil and smoke for 1 hour.
- Meanwhile, whisk together all glaze ingredients.
- After 1 hour, pour a third of the glaze on top of the ribs and seal tightly in the foil, being careful not to tear it. Do the same with remaining racks. Return ribs to the grill and cook meat-side down for 30 minutes, maintaining low heat. Occasionally check the grill to make sure it remains low. After 30 minutes, flip the foil bundles and continue cooking.
- After 1 hour of cooking, remove the ribs from the grill and let rest in the foil for 30 minutes. Meanwhile, raise grill heat to medium-high. Cut the lemon in half and grill flesh-side down until nicely marked and slightly soft, 3 to 5 minutes.
- When done resting, remove the ribs from the foil and place on the grill meat-side down and cook for 4 minutes. Flip and cook for another 2 minutes. Remove the ribs from the grill and garnish with the grilled lemon, sea salt, oregano and extra virgin olive oil and a little drizzle of honey.
HERB-RUBBED PORK SPARERIBS WITH HONEY-LEMON GLAZE
Many cooks boil or bake spareribs before grilling to render their tough meat tender, but that method leaves a lot of flavor behind in the pot or the baking pan. This recipe has you grill them in foil so they cook quickly in their own juice, and all the flavor is trapped inside the foil. Finishing the ribs with a simple glaze gives them extra flavor and crisp edges. This recipe can be made with standard spareribs or with St. Louis-cut spareribs-the former may take slightly more time to cook.

- Whisk the rub ingredients together in a small bowl. Whisk the glaze ingredients together in another small bowl. Set both aside.
- Sprinkle the spice rub evenly on both sides of the ribs. Put a rib slab on one half of a large double thickness of heavy-duty aluminum foil, fold the other half of the foil over the ribs, and fold the edges tightly closed on all three sides to prevent leakage. Repeat with the remaining ribs. Put the foil-wrapped ribs on a large rimmed baking sheet and let stand while the grill heats.
- Prepare a charcoal or gas grill fire for direct grilling over medium (350°F) heat.
- Arrange the foil-wrapped ribs on the grill grate in a single layer and cover the grill. Have a spray bottle of water ready for any flare-ups, and grill for 45 minutes. Carefully turn the packets over, taking care not to pierce them, or the juices will run out. (If using a charcoal grill, add about 1 quart charcoal to the coals, if necessary, to maintain the temperature.) Cover and cook until the meat has pulled away from the ends of the rib bones and is very tender when pierced with the tip of a knife (carefully open the foil to check), about 45 minutes more.
- Open the foil and transfer the ribs to a platter. Add any juice to the glaze.
- For a charcoal grill, if necessary, add more charcoal to the coals to maintain a temperature of 350°F.
- Clean and oil the grill grate. Arrange the ribs on the grill grate and brush with half of the glaze. Cover and cook until sizzling, 3 to 5 minutes. Flip and brush with more glaze. Cover and cook until sizzling, 3 to 5 minutes. Flip again and cook for 2 minutes. Transfer to a cutting board, let rest for about 5 minutes, and then cut between the bones into individual ribs. Transfer to a platter, season lightly with salt, and serve with any remaining glaze for dipping.

HONEY GARLIC RIBS
Easy to make, these ribs are delicious served either hot or at room temperature. So this is a great recipe for a casual dinner party that you can make ahead. The sauce is great served over rice.

- Preheat oven to 375 degrees F (190 degrees C).
- Slice the ribs into individual pieces. In a large bowl, combine the honey, soy sauce, vinegar, garlic and brown sugar. Stir until honey and sugar are completely dissolved, then stir in the baking soda. The mixture will begin to foam. Transfer ribs to the bowl, and turn to coat.
- Cover a cookie sheet with foil, and arrange the ribs meat side up on the sheet. Pour excess sauce over all, and sprinkle with the garlic salt.
- Bake for 1 hour, turning every 20 minutes.

LEMON PORK RIBS
This is an unusual recipe that you'll find irresistible. The lemonade acts as a tenderizer, so the pork steaks stay nice and juicy.

- In a large resealable plastic bag, combine the first five ingredients. Set aside 1/2 cup for basting and refrigerate. Add pork to remaining marinade and turn to coat. HONEY-GLAZED BABY PORK RIBS

- Make the marinade by mixing the ingredients together in a flat deep pan. Add the pork ribs, cover, and refrigerate at least two hours or overnight.
- Prepare the sauce by combining the sake, marinade drained from the ribs, cilantro and mint in a saucepan. Bring the liquid to a boil, then reduce by two-thirds over medium heat. Whisk in the butter, then strain the sauce.
- Preheat the oven to 350 degrees.
- Roast the ribs in a flat pan for one hour and 15 minutes, until tender and cooked through. The ribs may be finished over a charcoal grill or heated in a wok with a little peanut oil and a sprinkling of sugar. Toss the ribs with the sauce in the wok, or serve on a platter with the sauce on top. Garnish with thinly sliced scallions.
LEMON PEPPER BONELESS PORK COUNTRY STYLE RIBS WITH BACON
This is such an easy recipe, I hated to post but it is so tender and time saving. Some of the simplest recipes are the best. Country ribs have quite a bit of meat on them.

Steps:
- Spray a glass 8 X 10 flat dish with pam.
- Preheat oven to 375*.
- Place the bonless country style ribs in the glass dish.
- Sprinkle the top with All Seasoning.
- Then Sprinkle the Lemon Pepper all over, tops and sides.
- Lay the bacon strips over the top of the ribs.
- Push the ribs together so the bacon strips cover all of the ribs.
- Sprinkle Lemon Pepper over the slices of bacon.
- Cover tightly with alumimum foil.
- Cook for 45 minutes. Then Peek, should be fork tender, if not a few minutes longer.
- I wrap up medium potatoes, coat with margarine, foil and cook at the same time. Serve with Coleslaw, or other Salad.
- I have never had any leftovers. There is something about the flavor of lemon pepper and bacon with pork that is tantalizing to the taste buds.

HONEY BBQ RIBS
The winter season is perfect for BBQ flavours - even cooked indoors. Ribs are a cheap and simple to cook cut of meat that the whole family will enjoy tucking into, particularly in chilly weather.

- Steam the ribs in an oven tray covered in cling film for 2-3 hrs on about 140C.
- Then remove the cling film and pour over the sauce and bake in a moderate oven for 20-30 minutes.
- Sauce
- Bake the tomatoes in a hot oven (220C) for 10-15 minutes, untill they start to brown.
- Add all ingredients to a sauce pan and simmer for 5 minutes, then place into a blender and blend on high before straining through a sieve. Add water to make a thick sauce.
- Season to taste with salt pepper and more English mustard as required.

- Prep the ribs: Remove the membrane or silverskin from the bottom side of the ribs. Flip over the rib rack so you are looking at the bottom side (the side without the meat.) Go to one end of the rib rack, using a knife slide it under the silverskin and pull. It should peel right off in one swipe. Set aside.
- Glaze: Preheat oven to 375 F degrees. Mix all of the glaze ingredients together in a large bowl. Place the ribs on a large roaster fitted with a rack and then brush the glaze all over the pork ribs thoroughly on both sides. If there's any of the glaze left over, just pour it over the ribs.
- Cook: Add 1/2 inch of water to the bottom of the roasting pan and transfer the roasting pan to the oven. Bake in the oven for about 1 hour and a half. Every 20 minutes or so, baste the ribs with the drippings from the pan. If the ribs start to brown too much, cover them with foil and finish cooking them.
