Rich chocolate frosting-sweetened with toffee bits-tastefully tops off a tender butter cake.

1 box Betty Crocker™ Super Moist™ butter recipe yellow cake mix
Water, butter and eggs called for on cake mix box
3 cups semisweet chocolate chips
1 1/2 cups whipping cream
1 bag (8 oz) toffee bits (1 1/2 cups)
Pirouette cookies, if desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pans). Grease or spray bottoms and sides of two 9- or 8-inch round cake pans with baking spray with flour.
  • Make, bake and cool cake as directed on box for 8- or 9-inch rounds. Refrigerate layers about 45 minutes for easier handling.
  • Meanwhile, in medium microwavable bowl, microwave chocolate chips and whipping cream uncovered on High 1 minute 30 seconds to 2 minutes 30 seconds, stirring every 30 seconds, until cream is hot. Stir until chocolate is melted and smooth. Refrigerate 30 to 40 minutes or until cool. Stir just until mixture is thick enough to spread but is still glossy.
  • Slice each cake layer in half horizontally to make a total of 4 layers. Reserve 1 top layer. Place 1 cake layer bottom, cut side up, on serving plate. Spread with thin layer of frosting; sprinkle with 1/3 cup of the toffee bits. Repeat with 2 more layers. Place reserved layer on top, rounded side up. Frost side and top of cake with remaining frosting. Sprinkle remaining toffee bits on top of cake. Garnish with pirouette cookies. Store covered in refrigerator.

1 cup sugar
4 extra-large eggs at room temperature
1 1/3 cups Hershey's chocolate syrup
1 tablespoon pure vanilla extract
1 cup all-purpose flour
1/2 cup heavy cream
8 ounces good semisweet chocolate chips
1 teaspoon instant coffee granules
Candied violets or edible gold leaf, for decoration (optional)

Steps:

  • Preheat the oven to 325 degrees. Butter and flour an 8-inch round cake pan, then line the bottom with parchment paper.
  • Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy. Add the eggs, one at a time. Mix in the chocolate syrup and vanilla. Add the flour and mix until just combined. Don't overbeat, or the cake will be tough.
  • Pour the batter into the pan and bake for 40 to 45 minutes, or until just set in the middle. Don't overbake! Let cool thoroughly in the pan.
  • For the ganache, cook the heavy cream, chocolate chips, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally.
  • Place the cake upside down on a wire rack and pour the glaze evenly over the top, making sure to cover the entire cake and sides. You can tilt the rack to smooth the glaze. Decorate with candied violets, if desired, or gently crumble the gold leaf and place it on the center of the cake. Do not refrigerate.

4 cups granulated sugar
6 large eggs
4 cups strong coffee
2 teaspoons white vinegar
1 cup good-quality dark chocolate chips

1 1/2 cups Dutch process or dark cocoa powder
4 teaspoons baking soda
1 teaspoon salt
1 cup canola oil
1/4 cup sour cream
2 sticks (1 cup) salted butter
1 1/4 cups brown sugar
1 1/2 cups heavy cream
1 teaspoon vanilla extract
2 2/3 cups good-quality dark chocolate chips
2 2/3 cups heavy cream
1 stick unsalted butter
6 to 7 large egg yolks
2 cups granulated sugar
2 sticks salted butter, at room temperature
4 sticks unsalted butter, at room temperature
1 to 2 teaspoons vanilla extract
1 vanilla bean, split and seeds scraped out
Toffee bits (store-bought or homemade), for decorating

Steps:

  • For the cake: Preheat the oven to 350 degrees F and grease two 8-inch round cake pans.
  • Whip the granulated sugar and eggs with a stand mixer fitted with the whisk attachment. Meanwhile, put the coffee, butter, vinegar and 1/2 cup of the chocolate chips into a microwave-safe bowl. Microwave until the chocolate and butter are melted, about 3 minutes; then whisk together until well-blended. In a separate mixing bowl, add the flour, cocoa powder, baking soda and salt; whisk together. Add the oil and sour cream to the bowl with the chocolate mixture and mix well.
  • Add a third of the flour mixture to the egg mixture and mix well to incorporate. Then mix in half of the chocolate mixture. Continue to alternate with the flour and chocolate mixtures, scraping down the sides of the bowl occasionally and finishing with the flour. Divide the batter between the prepared cake pans. Fill each pan slightly below the top edge (you may not use all the batter). Sprinkle the remaining 1/2 cup chocolate chips over the top of each. Bake until the centers bounce back when touched, 30 to 35 minutes.
  • For the toffee sauce: Melt together the butter and brown sugar in a heavy saucepot and cook until simmering. Remove from the heat, then add the heavy cream and vanilla, and stir. Return to the heat and allow the sauce to boil for another 3 minutes. Remove from the heat and pour into a metal mixing bowl. Cool completely, then refrigerate.
  • For the chocolate ganache: Place the chocolate chips, heavy cream and butter in a microwave-safe bowl and microwave for 3 minutes. Stir until all the chocolate is melted and the ingredients are incorporated. Cool in the fridge until the consistency is like a paste.
  • For the buttercream: Add the egg yolks to a mixing bowl and whip with an electric mixer until light.
  • In the meantime, mix the sugar and 1/2 cup water in a heavy saucepan and bring to a boil. Wet a pastry brush with water and wash down the sides of the pan to avoid crystallization. Continue to cook until the sugar syrup registers 235 degrees F (softball stage) on a candy thermometer. Remove from the heat and, with your mixer running constantly at medium speed, immediately but slowly pour the hot sugar into the egg yolks in a steady stream.
  • Continue to beat with the mixer until the mixture cools down completely. Add the butter, vanilla extract and vanilla bean seeds. Continue to beat until all of the butter is incorporated and the icing is smooth, glossy and spreadable (see Cook's Note). Add some buttercream to a pastry bag.
  • To assemble the cake: Place 1 cake layer on a cake plate. With the pastry bag, pipe a border around the top edge of the cake layer for a "frosting dam" to hold in the toffee sauce. Poke holes into the top of the cake layer and pour at least 1/4 cup toffee sauce (or more to taste) over the top so that it penetrates the cake. Then spread a thin layer (about 1/8-inch thick) of ganache over the top. Put in the freezer for 5 minutes to make the ganache solidify. Then spread a layer of buttercream over the top of the chilled ganache. Generously sprinkle some English toffee bits over the buttercream and drizzle with more toffee sauce and ganache. Place the second cake layer on top and ice with the buttercream. Drizzle the top with more ganache and toffee sauce, then sprinkle toffee bits over the top. Serve immediately or refrigerate, covered. Take out of the fridge 1 hour prior to serving, to bring to room temperature.

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add egg and vanilla; beat for 2 minutes. Combine buttermilk and sour cream. Combine the flour, cocoa, baking soda and salt; add to creamed mixture alternately with buttermilk mixture, beating well after each addition. , Pour into two greased and waxed paper-lined 9-in. round baking pans. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely. , In a heavy saucepan, melt chocolate with cream over low heat. Remove from the heat; stir in vanilla. Transfer to a small mixing bowl; chill until slightly thickened, stirring occasionally. Beat on medium speed until light and fluffy. Chill until mixture achieves spreading consistency. , For ganache, in a heavy saucepan, melt chocolate and butter. Gradually add cream; heat until just warmed. Chill until slightly thickened., Place one cake layer on a serving plate; spread with filling. Top with remaining cake layer. Slowly pour ganache over top of cake. Refrigerate until serving.

1/3 cup caster sugar
3/4 cup self-raising flour
1 1/2 tablespoons baking cocoa
1/4 cup milk
1 egg
1/2 teaspoon vanilla essence
3 cups milk chocolate melts
1 cup cream
30 g butter
3 cups dark chocolate melts
1 cup cream
30 g butter

Steps:

  • Cream butter & sugar together until light & fluffy.
  • Sift flour and cocoa together, set aside.
  • Whisk together remaining ingredients.
  • Fold flour mixture into creamed mixture alternately with milk mixture until well combined- begin & end with flour.
  • Pour into a lined 10 x 20cm loaf tin. Bake at 180 C for 20-25 mins or until cooked when tested.
  • Cool in tin for a few mins and then turn onto a wire rack to cool completely.
  • Wash & dry loaf tin and then line with plastic wrap leaving a large overhang.
  • Prepare milk ganache: Place milk melts into a heatproof bowl.
  • Combine cream & butter in a saucepan and bring to the boil. Pour mixture over melts.
  • Cover bowl with plastic wrap. Allow to stand for 5 mins, stir to combine and set aside to cool & thicken.
  • Prepare dark ganache: Repeat steps as per milk ganache.
  • Place cake into the lined tin. Pour over milk ganache & refrigerate until very firm.
  • When firm spread dark ganache over cake & refrigerate covered until dark ganache is firm.
  • Serve in squares with cream.
  • Keep leftover cake refrigerated in an airtight container.

This ganache recipe can be used for making truffles or for icing and filling a cake. The proportions are right for semi-sweet to bittersweet chocolate. Ganache is best make with darker chocolate. Use real chocolate, preferably in bars. If you use chips read the ingredients carefully as you don't want a brand that uses extra additives and emulsifiers. This recipe can be halved or doubled - just keep the proportions right. The salt, coffee and cinnamon can be omitted but it's best if you use them as they bring out the chocolate flavor. The yield is for truffles. Cook time does not include chill time. If using as icing this is enough to fill and frost an 8 or 9 inch cake.

1 lb semisweet chocolate or 1 lb bittersweet chocolate, chopped fine
1 tablespoon unsalted butter, cut in small pieces
1 cup heavy cream
2 teaspoons vanilla extract
1/4 teaspoon salt (preferably gray salt)
2 tablespoons brewed coffee
1 cinnamon stick

Steps:

  • Place the chocolate in a large bowl.
  • Put cream and cinnamon stick (if using) in a saucepan over medium heat. Bring just to the boiling point. Add the butter and stir. Pour the cream mixture through a fine mesh sieve over the chocolate. Rotate the bowl a bit so all the chocolate is covered in cream. Let stand for two minutes. With a rubber or silicone spatula gently stir the mixture working all the cream into the chocolate until all the chocolate is melted and the mixture is smooth and creamy. If using chocolate chips break up any little lumps with the back of the spatula. Add vanilla, coffee and grey salt if using and stir.
  • If using as cake filling and icing: Cool the ganache to room temperature. If desired, you can take out about one cup of ganache and refrigerate it to decorate the cake with a pastry bag after it's been filled and frosted. Use about half the mixture to fill your cake. To frost the cake use a lazy susan if you have one. Put four strips of parchment or wax paper under the cake all around. This is so that any extra ganache will fall on the paper and you can gently pull them out. Use the rest of the ganache to frost the cake. Use a flat metal spatula to smooth the ganache around the top and sides of the cake.
  • If using for truffles: Chill ganache for at least two hours. To make this as mess free as possible use food grade vinyl or silicone gloves and a cookie scoop. Scoop out the ganache, roll in your choice of toppings to coat evenly and set aside. Truffles can be stored in the refrigerator but should be served at room temperature.
  • Suggested toppings for truffles: Cocoa powder (preferably Dutch process), finely chopped nuts, finely crushed toffee bits, finely crushed peppermint candy, cookie crumbs.
  • Truffles can also be coated in dark, milk or white chocolate but that's another recipe.
