Delicious spiced rubbed chicken cooked to tender and juicy perfection. It gets glazed with the most amazing honey lime sauce and is sure to be a huge hit!

1 1/2 pounds boneless skinless chicken thighs (chicken breasts will also work)
2 Tablespoons olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup honey
Juice of one lime
zest of one lime
2 Tablespoons soy sauce
1 garlic clove (minced)

Steps:

  • In a medium sized skillet over medium heat add olive oil. In a small bowl combine cumin, chili powder, salt and pepper. Rub on chicken and place in skillet. Cook for 3-4 minutes on each side or until chicken is no longer pink and 165 degrees. Remove chicken and set aside on plate.
  • Add honey, lime juice and zest, soy sauce and garlic. Bring to a boil over medium high heat and reduce heat and whisk until it starts to thicken. About 2 minutes.
  • Add the chicken back to the skillet and coat in the sauce. Garnish with lime wedges if desired.

A beginners recipe for roast chicken. The glaze gives it a subtle honey & lime flavour. I also do my turkey at Christmas like this.

1 chicken
1 onion, quartered
3 garlic cloves, peeled
1 lime, quartered
1/2 lime, juice of
1 teaspoon paprika
2 tablespoons honey
1 tablespoon olive oil
salt and pepper, to taste

Steps:

  • Preheat your oven to 200°C/400°F/Gas 6.
  • Rinse your chicken well, inside and out and dry thoroughly with a paper towel.
  • Stuff the cavity with the quartered lime, onion and the garlic.
  • Rub the olive oil all over the chicken and season with salt and pepper.
  • Place the chicken in a roasting tin and place in the middle of your preheated oven.
  • Roasting time depends on size of chicken.
  • Roast for 20 mins per lb plus an extra 20 minutes for the whole chicken (example: 4 lb chicken: 4x20+20=1hr40mins).
  • Using the juices from the roasting tin, baste the chicken every 30 mins to stop it from drying out.
  • While the chicken is roasting mix the lime juice, honey and parika in a small bowl.
  • 30 mins before your chicken will be done take it out of the oven and brush with the lime& honey glaze.
  • Return to the oven to finish roasting, at the end of the roasting time make sure all juices run clear by inserting a skewer into the thickest part of the thigh.

3 cloves garlic, minced
2 tablespoons honey
1.5 tablespoon soy sauce
2 tablespoons lime juice
3 dashes cayenne pepper
1 big pinch salt

Steps:

  • Preheat the oven to 400°F (207°C).
  • To debone the chicken thighs but keep the skin on, please refer to this video and post for the step-by-step. The skin makes this recipe extremely delicious.
  • Rub the minced garlic on the chicken thighs with your hands. Add honey, soy sauce, lime juice, cayenne pepper and salt to the chicken. (Double the marinade if you want it to be more "saucy"). Stir to combine well. Transfer the chicken and the honey mixture to a baking sheet lined with aluminum foil. Cover the chicken with aluminum foil to prevent burning.
  • Bake the chicken for 20 minutes, or until cooked. If the sauce pools at the bottom of the foil, spoon and brush the sauce over the chicken. Broil the chicken for 1 minute or until the chicken skin is charred. Remove from heat, garnish with parsley. Squeeze the lime wedges over the chicken before serving.

1/4 cup cilantro, packed
4 tbsp lime juice
2 garlic cloves
2 tsp honey
1/2 tsp kosher salt

2 tbsp plain nonfat yogurt

Steps:

  • Add the cilantro, lime juice, garlic, honey, salt, cumin, red pepper flakes, olive oil, and yogurt to a food processor. Pulse until a marinade/sauce is formed.

2 cooked chicken breast halves, shredded
⅓ cup honey
¼ cup freshly squeezed lime juice
2 teaspoons chili powder
2 teaspoons minced garlic
1 (14 ounce) can green enchilada sauce
½ cup heavy whipping cream
12 corn tortillas
2 cups shredded queso asadero (white Mexican cheese)

Steps:

  • Place shredded chicken in a bowl.
  • Whisk honey, lime juice, chili powder, and garlic together in a bowl; pour over chicken and toss to coat. Marinate chicken in refrigerator for at least 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix enchilada sauce and cream together in a shallow bowl. Dip 1 tortilla in enchilada sauce mixture and place in the bottom of a 9x13-inch baking dish. Repeat dipping tortillas and arranging in the dish until bottom of dish is covered.

  • Heat oven to 375°F.
  • Whisk the lime juice, garlic, chili powder, and honey together and set aside.
  • Pat chicken dry.
  • Heat an ovenproof skillet on the stove top, add oil. When it ripples, carefully add the chicken, skin side down. Shake the pan a little to prevent sticking. Brown on one side until it turns a deep, dark golden colour (about 4-5 minutes), then flip and brown on the other side.

2 large limes (cut into wedges)
1/4 cup honey

Steps:

  • In a medium bowl, whisk together flour, chili powder, salt, pepper and cayenne (or paprika). Add egg and milk and whisk until smooth.
  • Add chicken tenders to the flour-egg mixture and toss to coat well.
  • Place panko breadcrumbs onto a medium size plate. One by one, coat each chicken tender in panko and set onto a clean plate.
  • Heat up oil and butter in a large pan over medium heat.

  • In a medium bowl, whisk together the flour, chili powder, salt, pepper and cayenne. Add the egg and milk and whisk until smooth. Add the chicken tenders to the flour mixture and stir to coat well. Place the panko in a medium-sized bowl. Set a plate next to the panko. Using your fingers or a set of tongs, dip and thoroughly coat each piece of chicken in the panko crumbs. Set the crumb- coated chicken strips on the plate. STOVE TOP DIRECTIONS: Warm the oil in a large stainless steel skillet over medium-high heat. When the oil is shimmering, use the tongs to carefully and quickly place half of the chicken in the skillet in a single layer. Let the chicken cook undisturbed for about 2 minutes, until it has lightly browned, then flip it over and cook the second side for 2 minutes (or until cooked through). Juice of 2 limes
4 cloves garlic, smashed
3 jalapeno peppers, halved, seeded and thinly sliced
1/2 cup extra-virgin olive oil

3 half chickens (about 1 1/2 pounds each)
3 tablespoons unsalted butter, cut into pieces

Steps:

  • Strip the thyme leaves from the stems; combine the leaves and stems with the lime juice, garlic, jalapenos, olive oil, honey and 1 teaspoon salt in a large bowl. Add the chicken and turn to coat. Cover and marinate 30 minutes to 1 hour at room temperature.
  • Position a rack in the upper third of the oven; preheat to 425 degrees F. Put the chicken, skin-side up, on a foil-lined rimmed baking sheet and tuck the wing tips underneath. Pour the marinade on top, season with salt and dot with the butter.
  • Roast the chicken, basting with the pan juices halfway through, until the skin is amber and a thermometer inserted into the thigh registers 160 degrees F, about 45 minutes. Transfer to a platter and top with the pan juices.
