HONEY NUT OATMEAL COOKIES
Lightly sweet, soft baked oatmeal cookies. I liked this recipe because I was searching for a way to bake with less refined sugar while keeping a good flavor and texture. It took some tweeking to get the wet/dry ratio and cooking temp. down. Try with dried fruits if you like.

Steps:
- Preheat oven to 325 degrees.
- Beat together brown sugar with wet ingredients in one bowl using an electric hand mixer. Mixture won't cream together, but mix as thoroughly as you can.
- In another bowl combine your dry ingredients and mix well.
- Fold wet ingredients into your dry ingredients until well combined and moistened. I use a spatula since mixture gets very sticky.
- Chill dough for 20 minutes before spooning onto a cookie sheet. Cookies do not spread while cooking, so you'll want to flatten them with a fork.
- Bake cookies for about 10-15 minutes depending on size. They should be done when they are light brown around the edges. Be careful not to overbake.

HONEY-OAT GRANOLA BARS
I found this recipe on one of our monthly Brown County REA newsletters. My husband and I eat a few of these bars each day. It's a basic recipe to which you can add any of your favorite flavors...coconut, chocolate or different flavored chips, nuts or dried fruits.

- Preheat oven to 350°. In a large bowl, combine oats, brown sugar, peanuts, chocolate chips and sunflower kernels. Stir in butter, honey and vanilla until combined (mixture will be crumbly). Press into a greased parchment-lined 15x10x1-in. baking pan., Bake 15-20 minutes or until browned and bubbly. Cool 15 minutes on a wire rack; cut into squares. Cool completely before removing from pan. Freeze option: Wrap each cooled bar in plastic; freeze until firm. To use, thaw bar at room temperature or, if desired, unwrap and place on a microwave-safe plate and microwave on high for 15-20 seconds or until heated through.

HONEY OATMEAL CHEWY BARS
Quick to mix and quicker to disapear. I like to slightly underbake these for a more softer bar. Dont over bake or you will have rocks! For a really flavorful bar, toast the nuts and coconut in the oven while preheating...watch closely it will burn quickly.

- Preheat oven to 350.
- Cream butter, honey and sugar until light and fluffy.
- Add egg and vanilla.
- Mix together dry ingedients.
- Slowly add to creamed mixture.
- Stir in oatmeal, coconut and nuts.
- Spread into greased 13x9 pan.
- Bake 20-25 minutes in 350 degree oven.
- Cool and cut into bars.
- Store airtight with a piece of fresh bread to keep them soft.
HONEY NUT OAT BISCOTTI
Crunchy and crispy, these twice baked cookies are ideal for dunking into coffee, tea or a tall glass of milk.

- In bowl, beat butter with sugar until fluffy; beat in honey.
- Beat in eggs, 1 at a time; beat in vanilla.
- Mix together flour, rolled oats, pecans, cinnamon, baking powder, baking soda and salt; stir into butter mixture until moistened.
- On large greased baking sheet, spoon batter into two 10 x 2 inch logs, smoothing surface with floured fingers.
- Bake in 350 F.
- oven for 30 minutes or until lightly browned.
- Let cool on pan for 5 minutes.
- Transfer logs to cutting board; cut diagonally into 1/2 inch thick slices.
- Stand slices up, slightly apart, on baking sheet.
- Reduce heat to 325 F.
- ;bake for 25 to 30 minutes or until golden and almost firm to the touch.
- Remove to rack and let cool.
- (Cookies can be stored in airtight container for up to 1 week.) Makes 30 cookies.
- VARIATION: Honey Nut Apricot Biscotti: For this softer, less crunchy version of the classic biscotti, reduce pecans to 3/4 cup and add 1/3 cup chopped dried apricots.
