Honey Roasted Almonds image

These are great for snacking!

Number Of Ingredients 6

2 cups whole almonds
¼ cup white sugar
½ teaspoon kosher salt
3 tablespoons honey
3 tablespoons water
1 tablespoon almond oil

Steps:

  • Spread almonds in a single layer on a baking sheet and place in a cold oven.
  • Turn oven on to 350 degrees F (175 degrees C). Bake almonds, stirring occasionally, until light tan and fragrant, 12 to 15 minutes. The nuts will continue to cook after removing from oven.
  • Meanwhile, mix sugar and salt together in a small bowl; sprinkle about 1 tablespoon sugar mixture into a large bowl.
  • Stir honey, water, and almond oil together in a saucepan; bring to a boil. Add almonds; cook and stir until almonds have absorbed all the liquid, about 5 minutes.
  • Transfer coated almonds to the large bowl sprinkled with sugar mixture. Sprinkle remaining sugar mixture over almonds; toss to coat evenly.
  • Spread almonds onto waxed paper to cool completely. Store at room temperature in a tightly covered container or plastic bag.

Maple Honey Roasted Almonds and Cashews image

Number Of Ingredients 8

1 Pound Almonds
1 Pound Cashews
2 Tablespoons Honey
2 Tablespoons Maple Syrup
2 Tablespoons Butter
1 Teaspoon Vanilla
1/4 Teaspoon Ground Nutmeg
1/4 Teaspoon Ground Cinnamon

Steps:

  • Preheat to 350 degrees
  • Melt the Butter, Syrup and Honey in the microwave for 30-45 seconds and then stir in the Vanilla, Nutmeg and Cinnamon
  • Place the Almonds and Cashews in a large mixing bowl and fold in the syrup mixture. Spread the nuts onto a half sheet pan lined with heavy duty aluminium foil
  • Roast in the oven for 6-8 minutes and then stir them around on the sheet
  • Roast for another 6-8 minutes until they've developed a nice color and great smell
  • Sprinkle kosher salt over the nuts immediately after they come out of the oven. They'll be gooey while they are still warm and be much less sticky once cooled

4 Cups Whole Cashews (raw or roasted) (( 480 g / 13 oz))
2 Medium - large Egg Whites
2 tsp Water
3/4 Cup Sugar ((150 g / 5.5 oz))
6 TBSP Light Brown Sugar ((90 g / 8.5 oz))
3 tsp Cinnamon
1/4 tsp Nutmeg (optional)

Steps:

  • Preheat oven to 300F.
  • Mix the cinnamon and sugars in a bowl and set aside.
  • With a hand whisker, beat the egg whites until frothy, about 1 minute. Add the water and whisk for about an extra minute.
  • Add the nuts to the egg whites and toss to evenly coat the nuts.
  • Add the sugar mixture into the nuts and toss to evenly coat.
  • Spread the nuts on a cookie sheet lined with parchment paper and baker for 25-30 minutes. Use a wooden spoon to mix the nuts halfway through baking.
  • Remove from oven and allow to cool.

Flavorful and fragrant sweet roasted nuts with a touch of spices. These candied almonds and cashews will be enjoyfull to the whole family!

1 lbs Raw Almonds
3 tbsp Honey
1 1/2 cup Brown Sugar
1 tsp Ground Cinnamon
1 stick Cinnamon Stick
4 buds Clove
4 pieces Peppercorn
Salt
Water
1 lbs Raw Cashews
2 Egg Whites
1 1/2 cups Brown Sugar
2 tsp Ground Cinnamon
Salt

Steps:

  • Prepare all the required ingredients.
  • Warm pan on a medium heat. Add almonds and toast for 4-5 min until slightly browned. They should have a nice roasted smell.
  • Add about 3-4 tbsp of water and honey. Quickly mix in the almonds, so that all the nuts are covered. Add cloves, peppercorn, and a cinnamon stick. Cook for another 5 min or until almonds absorb all the liquid.
  • Meanwhile mix sugar, ground cinnamon and a dash of salt in a large bowl. Prepare large baking tray with a sheet of baking paper or aluminum foil on top.
  • Transfer almonds to the bowl and quickly mix them with the sugar blend until all nuts are evenly covered. If the nuts are too hot, do it with a spoon or spatula. The nuts will be very sticky.
  • Spread almonds evenly on a baking tray. Bake for about 5 min. Remove from the oven and transfer to a clean tray and let them cool for 30 min. Shake the nuts a couple of times during this time so they don't stick to each other.

  • Mix cashews with the sugar blend until all nuts are evenly covered.
  • Spread cashews evenly on baking tray. Bake for about 5 - 8 min. Remove from the oven and transfer to a clean tray and let them cool for 30 min. Shake the nuts a couple of times during this time so they don't stick to each other.

  • Preheat oven to 250 degrees F (120 degrees C). Lightly grease a 10x15 inch jellyroll pan.
  • Lightly beat the egg white; add water, and beat until frothy but not stiff. Add the nuts, and stir until well coated. Mix the sugar, salt, and cinnamon, and sprinkle over the nuts. Toss to coat, and spread evenly on the prepared pan.
  • Bake for 1 hour in the preheated oven, stirring occasionally, until golden. Allow to cool, then store nuts in airtight containers.
