Ingredients

4 ripe peaches
1/4 cup honey
1 cup plain yogurt
1/4 - 1/2 cup sugar (adjust according to how sweet your peaches are)
1/8 teaspoon fine sea salt
1/2 teaspoon almond extract

Steps:

Preheat oven to 425 degrees. Split the peaches in half and remove the pits. Place the peach halves, cut side up in a baking dish. Drizzle generously with honey. Roast for 15-20 minutes, until very tender. Remove from the oven and place in the blender. If there are juices in the pan, add them to the blender as well.
Blend the peaches until smooth. Add the remaining ingredients and blend until combined. Transfer to an airtight container and chill in the refrigerator until cold, preferably overnight. Once cold, pour into the ice cream machine and freeze according to manufacturer's directions. Serve immediately for soft-serve ice cream or transfer to an airtight container and freeze for a firmer frozen yogurt. Enjoy!

2 cups fresh or frozen unsweetened sliced peaches, thawed
1 envelope unflavored gelatin
1/4 cup cold water
1/4 cup sugar
2 cups vanilla yogurt

Steps:

Place the peaches in a blender; cover and process until pureed. Set aside. , In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Stir in sugar. Cook and stir over low heat until gelatin and sugar are dissolved., In a large bowl, combine the yogurt, peach puree and gelatin mixture until blended. Pour into an ungreased 9-in. square dish. Cover and freeze for 3-4 hours or until partially set. , Cut into pieces and place in a large bowl; beat on medium speed until smooth. Transfer to a freezer container. Cover and freeze until firm, about 2 hours.

3 cups peaches (peeled, pitted,and chopped) or 3 cups nectarines (peeled, pitted,and chopped)
32 ounces nonfat vanilla yogurt
1/4 cup honey

Steps:

Place 1 1/2 cups of the chopped peaches in a food processor or blender with the yogurt and honey. Blend until smooth.
Stir reamining chopped peaches with peach-and yogurt puree.
Add mixture to your ice cream maker and freeze according to directions.
Store in an air-tight container in your freezer. Let it stand at room temperature for 10 to 15 minutes before serving.
