1kg (2lbs) chicken breasts, skin removed and cut into bite-sized pieces
15ml (1 tbsp) onion powder
5ml (1 tsp) garlic granules
15ml (1 tbsp) smoked paprika
5ml (1 tsp) salt
30ml (2 tbsp) vegetable oil
150g (5 oz) ketchup
30ml (2 tbsp) Worcestershire sauce
15ml (1 tbsp) peanut oil
15ml (1 tbsp) mild mustard
30ml (2 tbsp) brown sugar

Steps:

  • Place the chicken in a large bowl and mix in the onion powder, garlic, paprika, salt and vegetable oil.
  • When everything is evenly coated, cover with clingfilm and place in the fridge for at least 1 hour to marinate. Ideally, leave it overnight in the fridge for extra flavour.
  • Place the ketchup, Worcestershire sauce, peanut oil, mild mustard and brown sugar in a small saucepan.
  • Heat the sauce on a low heat until well blended and the sugar has dissolved.
  • Thread the chicken pieces on wooden skewers.
  • Place the chicken skewers on medium heat on the Gas2Coal barbecue.
  • Cook for around 71/2 minutes on each side or until the chicken is cooked through.
  • Serve with potato salad and your favourite BBQ side dishes.

1 1/2 lbs boneless skinless chicken breasts or 1 1/2 lbs boneless skinless chicken thighs, cut into bite size pieces
1 red pepper, seeded, membranes removed and cut into 1 inch squares
1 green pepper, seeded, membranes removed cut into 1 inch squares
3 garlic cloves, crushed
1 small onion, finely chopped
2 teaspoons brown sugar
1 teaspoon curry powder
1 cup tomato juice
1/2 teaspoon ginger
1/2 teaspoon cayenne
1 teaspoon fresh lemon juice
salt & pepper

Steps:

  • Thread chicken alternating with a square of red & then green pepper on 4 skewers.
  • Mix all the remaining ingredients, mix well.
  • Place skewered kebabs in a shallow dish and pour the marinade over the kebabs Cover, place in fridge for at least 2 hours, turn occasionally so all sides are well coated. Grill kebabs over medium heat about 6" from heat source, turn so they do not overcook on any side, approximately 15 minutes or until the chicken is done- overcooking will produce dry chicken so watch them.

1 cup plain Greek yogurt
1 tablespoon vegetable oil
1/2 tablespoon fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon coriander
1/2 teaspoon paprika
2 cloves garlic, smashed and chopped
Kosher salt and freshly ground black pepper
2 pounds boneless, skinless chicken breast, cut into 1-inch cubes

Steps:

  • Mix the yogurt, oil, lemon juice, oregano, coriander, paprika, garlic, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl until fully blended. Add the chicken and mix to coat. Cover and refrigerate for 2 to 4 hours.
  • Preheat a grill pan or outdoor grill for cooking over medium-high heat. Thread the marinated chicken onto the soaked skewers, about 5 pieces per skewer, taking care not to pack the chicken pieces too tightly.
  • Grill the skewers until the chicken is cooked through (an instant-read thermometer should register 165 degrees F), about 4 minutes per side. Serve immediately.

Tangy and flavorful. You may also do these skewers in the oven 325 F apprx 20 min. check to see that no pink remains when cut through. If you do not like yogurt use sour cream or whipped cottage cheese with a couple of tbsp of low fat cream cheese added. A short cut to the final BBQ time is to partially cook the chicken in the marinade in a skillet until the chicken is just beginning to brown, then thread it onto the skewers and keep in fridge until you are ready to BBQ - only takes 10 minutes on a pre heated grill. Do not miss squeezing the fresh lime juice on as you are BBQing them - it gives a lovely zing.

1/2 cup nonfat yogurt
2 garlic cloves, minced
1 tablespoon grated fresh ginger (or 1 tsp ground ginger)

Steps:

  • In a large"Ziplock" bag or a shallow glass dish mix yogurt, garlic, ginger, curry powder, sugar, salt and cayenne pepper.
  • Mix well.
  • Add chicken to marinade, turn to coat and refrigerate for 15 minutes.
  • Thread chicken on skewers, discard marinade.
  • BBQ over medium heat 4" from heat.
  • Baste with half of the lime juice.
  • Turn once while cooking, basting with the remaining lime juice (about 6 minutes each side or until there is no pink inside).
  • Place skewers on serving plate garnish with lime wedges.

4 skinless chicken breasts , cut into bitesize chunks
2 red peppers , cut into chunks
1 red onion , cut into chunks
4 flatbread or pittas
chilli sauce and shredded lettuce to serve
1 tsp turmeric
1 tbsp mild or hot curry powder
2 tsp smoked paprika
1 tbsp tomato purée
150g natural yogurt , plus more to serve
1 tbsp vegetable oil , plus a little for brushing
1 garlic clove , crushed
2 tbsp lemon juice , plus wedges to serve

Steps:

  • Mix the marinade ingredients with some seasoning. Add the chunks of chicken, mix well, cover and chill. Leave to marinate for at least 2 hours or overnight.
  • Soak 12 bamboo skewers in cold water - this will prevent them burning when cooking (or use metal skewers). Thread the marinated chicken onto the skewers (discard any remaining marinade), alternating with pieces of pepper and onion. Brush the skewers lightly with oil and season.
  • Heat the grill to high. Grill the kebabs for 15 minutes, turning every few minutes, until golden and lightly charred. The veg should be tender, and the chicken cooked through, so it easily slides off the skewers.
  • Warm the flatbreads in a griddle pan or dry frying pan on a medium heat until golden and toasted. Serve with the kebabs, lettuce, chilli sauce, extra yogurt and squeeze over some lemon just before eating.

  • In a large bowl, toss the chicken and salt together. Cover with plastic wrap and refrigerate for at least 30 minutes and up to 1 hour.
  • Turn all grill burners to high, close lid, and heat grill until hot, about 15 minutes. Scrape cooking grate clean with grill brush. Leave primary burner on high and turn off other burner(s).
  • While the grill heats, pat the chicken dry with paper towels. In a small bowl, combine the sweet paprika, sugar, and smoked paprika. Process bacon in a food processor until a smooth paste forms, 30 to 45 seconds, scraping down bowl twice during processing. Add the bacon paste and spice mixture to the chicken; mix with hands or rubber spatula until the ingredients are thoroughly blended and the chicken is completely coated. It is ok to have small pieces of bacon intermixed with the chicken. Thread the chicken meat onto the skewers, rolling or folding meat as necessary to maintain 1-inch cubes. The chicken pieces should be just touching each other. If the bacon puree didn’t completely coat the chicken (i.e. you have clumps of bacon mixture) just grab little bits of it and smash it in between the chicken on the skewers.
  • Place the chicken kebabs over the primary burner and grill, covered, turning one-quarter turn every 2 to 2 1/2 minutes until well browned and slightly charred, 8 minutes for breasts or 10 minutes for thighs. Brush the top surface of kebabs with BBQ sauce; flip and cook until sauce is brown in spots, about 1 minute. Brush second side with remaining ¼ cup sauce; flip and continue to cook until brown in spots about 1 minute longer and until the chicken is cooked completely through. Remove the kebabs from the grill and let rest for 5 minutes. Serve, passing additional BBQ sauce, if desired.
