THE MOST ADDICTING PAN FRIED POTATOES

Steps:
- Add olive oil to skillet and turn on high heat until oil is hot. Add diced potatoes. Add seasoning to taste.
- Let potatoes sit and fry for 1 minute. Flip with spatula.
- Turn heat down to medium-low.
- Continue letting potatoes sit and fry for 1 minute then flipping with spatula for 6-10 minutes depending on the amount of potatoes.
- I like to add a tablespoon of butter half-way though frying. Add more oil or butter as need if the potatoes start to burn or the skillet looks dry.

- Place potatoes in two large resealable plastic bags. Combine the Parmesan cheese and seasonings; add to potatoes. Seal bag and shake to coat. , Pour oil into two 15x10x1-in. baking pans; pour potatoes into pans. Bake, uncovered, at 375° for 40-50 minutes or until tender.

SPICED UP POTATOES
Sliced potatoes with seasonings to give it an excellent flavor. This is a great side dish for any main course meal. You can add more of the seasonings for your liking. I suggest a little more paprika, it gives it a great flavor. You can also put in bacon bits when cooking if you would like.

- Preheat the oven to 450 degrees F.
- Leaving peel on, cut the potatoes into 6 lengthwise to make long wedges, about 3/4-inch to 1-inch wide. Combine the potatoes, oil, salt and cayenne on the baking sheet and toss to combine. (1 less bowl to wash) Arrange the potatoes on a baking sheet in a single layer, so a cut side is in contact with the pan, but evenly spaced so the potatoes aren't touching each other. Bake until golden brown and cooked through, about 30 minutes. Slip a spatula under the potatoes to turn them over and cook for 5 minutes more.
- Transfer potatoes to a serving dish and serve immediately.
SMASHED AND FRIED POTATOES
As enjoyable as pounding the lights out of an innocent garlic clove or olive may be, probably the most satisfying flat food to prepare are these smashed and fried potatoes from Susan Spungen, which draw in part from a technique used to make tostones. You steam baby potatoes until they're just tender, let them cool enough to be handled, then press them between your palms until they flatten a bit and you hear their skins begin to snap. Next, you heat up some oil in a skillet and fry the potatoes until they're nice and brown on their flat sides. Each potato is then crisp and caramelized but still moist inside.

- Place a steamer basket in a large pot filled with an inch of water and add the potatoes and salt. Cover and bring to a boil over medium heat. Steam until the potatoes are just tender when pierced with a paring knife, about 25 minutes. (Don't overcook: they won't hold together when flattened.) Remove the basket and let the potatoes cool enough to be handled.
- Gently squeeze the potatoes, one at a time, between your palms so that they flatten slightly but remain in one piece (some will break, but they can still be used). Pour 1/4 inch of oil into a medium frying pan set over medium-high heat. Add the potatoes in batches to avoid crowding, and fry on both sides until crisp and browned, 2 to 3 minutes per side. Drain on a plate lined with paper towels. Arrange on a platter and sprinkle with sea salt.

- Mix in mayonaise and onions and put into a baking dish.
- Top with bacon and then with cheese.
- Bake in 350 degree oven until hot all the way through, bacon is cooked and cheese is melted.

DRESSED UP FRIED POTATOES
I got this recipe from my friendly bartender at the pub I frequented in Seoul. His were latka style potatoes, but mine didn't turn out that way. LOL Regardless, I found a great way to make some very tasty fried potatoes. Cooking time does not include cooling potatoes in the fridge.

Steps:
- Boil potatoes with skin on until tender.
- Drain and place in fridge until completely cool, about 2-3 hours.
- When they are somewhat cooled, you can cut them into thirds to speed up cooling process.
- Chop onions and mushrooms in food processor.
- Once the potatoes are completely cool, either put through rice mill or shred in food processor.
- Using scissors, cut bacon into small bite sized pieces, fry til almost crisp in a deep non-stick skillet.
- Without removing bacon or the fat, add onions and mushrooms, mixing well and cook til translucent.
- Add shredded potatoes and fry, stirring frequently until heated through.
- Cooking time does not include cooling potatoes in the fridge.
