- Preheat grill for medium heat and lightly oil the grate.
- Place potatoes in a bowl; add 2 tablespoons olive oil and toss to coat.
- Cook on preheated grill until tender, about 30 minutes. Cool potatoes, 10 to 15 minutes; cut into quarters.
- Whisk 1/2 cup olive oil, vinegar, salt, black pepper, garlic, and sugar together in a bowl until dressing is smooth. Toss potatoes, bacon, green onions, and parsley with dressing in a bowl until evenly coated.

- Sprinkle beef with 1 teaspoon steak seasoning and garlic. Place cola in a large bowl. Add beef; toss to coat. Set aside., Place potatoes and water in a microwave-safe bowl. Microwave, covered, on high just until tender, 4-5 minutes; drain. Return to bowl. Add tomatoes, pepper, oil and remaining steak seasoning; gently toss to coat., Drain beef, discarding marinade. On 8 metal or soaked wooden skewers, alternately thread beef, vegetables and pineapple. Grill, covered, over medium heat or broil 4 in. from heat until beef reaches desired doneness and pepper is crisp-tender, 6-8 minutes, turning occasionally.

MEAT LOAF AND POTATO CUPCAKES

- 1.) Heat oven to 375°F. Place foil baking cup in each of 12 regular-size muffin cups.
- 2). In 2-quart saucepan, make 1 pouch potatoes as directed on box. Stir in cheese. Set aside.
- 3.) In large bowl, mix meat loaf mixture ingredients. Press about 3 tablespoons meat mixture in each muffin cup.
- 4.) In small bowl, mix all sauce ingredients except parsley. Spread about 2 teaspoons sauce over meat loaf mixture in each muffin cup. Place potato mixture in decorating bag fitted with #847 or desired tip. Pipe potatoes on cupcakes.
- 5.) Bake 14 to 16 minutes or until meat thermometer inserted in center of cupcake reads 160°F. Sprinkle with parsley; serve immediately.
- * Skip the homemade sauce and just use, ketchup or barbecue sauce.
- * Skip the potato piping. Just spoon the potatoes over the sauce.
- * Make sure to use extra-lean ground beef so there is less fat in foil baking cups after baking.

- Preheat the oven to 350 degrees F (175 degrees C). Crumble 4 slices of bread.
- Mash up baked beans in a large bowl. Add ground beef, crumbled bread, 1 cup barbecue sauce, 1/4 cup mustard, 1/4 cup ketchup, and eggs; mix until well combined, adding more liquid or bread as needed to reach desired consistency.
- Reserve about 1 1/2 cups meat mixture. Press remaining mixture into the bottom and around the sides of two 9x5-inch loaf pans, leaving a large trough in the center. Fill troughs with mashed potatoes then cover with Cheddar cheese. Spread reserved meat mixture over top.
- Bake in the preheated oven until cooked through, about 1 hour.

CHICKEN KEBABS WITH HERB POTATO SALAD

Steps:
- Slice the chicken into kebab size pieces.
- Put the garlic along with a sprinkling of salt and pepper in a bowl large enough to hold all the chicken.
- Add the thyme, lemon juice and olive oil- mix together in the bowl.
- Mix the chicken into the marinade, stirring to coat completely.
- Cover and chill while you make the salad.
- Boil the potatoes in salted water until tender but not mushy.
- Drain.
- Cut into thick slices and put in a serving bowl.
- Pick the leaves off the basil or mint and place in a blender.
- Do the same to the rosemary and add those too.
- Add the garlic, vinegar and virgin olive oil and some salt and pepper.
- Blitz until you have a green purée.
- Spoon the purée over the potatoes and mix thoroughly.
- Now it's time to cook the kebabs.
- Make sure your cooking instrument of choice (BBQ or grill) is nice and hot.
- Thread the chicken onto skewers, shaking off any excess marinade.
- Lay on the cooking surface and cook for about three minutes a side, turning as the chicken forms a thick, golden crust.
- Serve with potato salad and side dishes of your choice.

- Heat coals or gas grill for direct heat. Cut six 18x10-inch pieces of heavy-duty aluminum foil. Spray with cooking spray. Mix beef, soup mix (dry), egg, milk and bread crumbs. Shape into 6 loaves, 4x2 1/2x1 inch. Place loaf on one side of each foil piece; top each with about 1 tablespoon of the ketchup. Place about 1/2 cup potatoes and 1/2 cup carrots around each loaf.
- Fold foil over loaf and vegetables so edges meet. Seal edges, making tight 1/2-inch fold; fold again. Allow space on sides for circulation and expansion.
- Cover and grill packets 4 to 5 inches from medium heat 25 to 30 minutes, rotating packets 1/2 turn after 15 minutes, until vegetables are tender, beef is no longer pink in center and juice of beef is clear. Place packets on plates. Cut large X across top of each packet; fold back foil. Garnish with parsley.
