SARITA'S MULTI PURPOSE TOMATO SAUCE
This is the sauce that I use to top almost all my recipes that ask for a sauce topping. I also serve it on the side as a dipping sauce. It is simple and easy to make.

Steps:
- On medium high, melt butter in small sauce pan. Add the onions, bell pepper and tomato. Let veggies saute in butter for about 2-3 minutes.
- Add Tomato sauce, ketchup and water. Stir and add the cumin. Add salt to taste, add cilantro and let simmer for about 5-7 minutes or until the sauce has thickened enough to cover the back of a metal spoon when dipped in the sauce.
- Serve on top of cabbage salads or on the side as a dipping sauce.

ALL PURPOSE GORGONZOLA SAUCE, AS I LIKE IT!
This sauce can be served as sauce for pasta, gnocchi, or as a meat sauce, especially as a steak support sauce.

Steps:
- Cut gorgonzola into small pieces and put into a pan. Add cream, sage, salt and pepper.
- Heat slowly making sure that does not boil. When cheese is melted, serve.
- You can serve it over pasta or gnocchi, or with steaks. If you use it as a pasta sauce, cover with grated parmesan cheese.

Homemade tomato sauce that doesn't take hours to make! This sauce can be different every time or can be your own signature sauce, but the basics are the same! Included are directions for using real tomatoes, but if time doesn't permit canned tomatoes will work nicely as well. Enjoy!

- Puree tomatoes in a food processor until smooth; strain through a fine-mesh sieve into a bowl.
- Heat olive oil in a large, deep pot over medium heat. Stir strained tomatoes, onion, Parmesan cheese, basil, garlic, and red wine together in the pot with the oil; season with salt and pepper. Bring the mixture to a boil, reduce heat to medium-low, and cook at a simmer until thickened, about 25 minutes.

- Wash the tomatoes and cut steam side off. Place tomatoes on sheet pan, steam-cut side down. Cut an 'x' on bottom-side now facing up of larger tomatoes.
- Roast tomatoes for 45 minutes. When done switch oven to broil and roast for an additional 3-5 minutes or until tomatoes start to brown up on top.
