HOT HONEY ROASTED VIDALIA ONIONS
Steps:
- Preheat the oven to 375 degrees.
- Slice the Vidalia onions into wedges or slices, depending on how they will be used (see info above).
- Place onions cut-side down in a baking dish and drizzle with water. Cover with foil and bake for 30 minutes.
- Melt together the hot honey and butter.
- Flip the onions over and brush with half of the honey mixture. Bake for an additional 15-20 minutes, uncovered.
- Flip the onions over and brush with the remaining honey mixture. Bake for another 15-20 minutes, uncovered. Remove from oven when onions are fork-tender and beginning to carmelize.
HONEY ROASTED VIDALIA ONIONS
The owner of the company I used to work at sent everyone a 5 lb box of Vidalia onions every year. This was included on a recipe brochure one year from the farm. I was surprised at how much I liked them, and they are healthy too.

- Preheat oven to 350 degrees.
- Peel onions and cut in half crosswise.
- Place onions, cut sides down, in an 8 inch square baking dish, drizzle with water. Cover with foil and bake for 30 minutes.
- Combine honey and remaining ingredients.
- Turn onions over. Brush half of the honey mixture over the onions.
- Bake, uncovered, an additional 30 minutes or until tender, basting with remaining honey mixture after 15 minutes.

CREAMED VIDALIA ONIONS
Steps:
- Preheat the oven to 350 degrees F. Melt 4 tablespoons butter in a stoveproof gratin dish over medium-high heat; add 4 pounds Vidalia onions (cut into wedges) and cook 5 minutes. Add a pinch each of nutmeg, cayenne, salt and black pepper, then add 3 tablespoons white wine and simmer 2 minutes. Whisk 1 1/4 cups half-and-half and 3 tablespoons flour; stir into the onions and bring to a boil. Mix 2 tablespoons melted butter, 1 cup panko (Japanese breadcrumbs), 2 tablespoons chopped chives, and salt and pepper. Sprinkle over the onion, cover with parchment paper and bake 30 minutes. Uncover and broil until golden, 5 more minutes.

- Quarter onions halfway through and open slightly. Place each on a 18x12-in. piece of heavy-duty foil. Place 2 teaspoons butter in center of each onion; sprinkle with salt, pepper and, if desired, garlic salt. Fold foil to seal tightly. Bake at 350° until onions are tender, 50-60 minutes. Open foil carefully to allow steam to escape.

ROASTED VIDALIA ONIONS
Roasted in the oven or on the grill, these onions are simple and tasty. They taste like French onion soup, and smell great. In college I used to put it on the top of my gas stove! Still delicious just the same. Very very easy and loads of flavor.

- Peel and core onions, then slice halfway through. Place onions on sections of aluminum foil large enough to wrap them completely. Place a bouillon cube in the center of each onion; place pat of butter on top. Season with salt, pepper, and paprika. Wrap the onions in foil.

- Line a baking sheet with foil. Trim the stalk ends from the onions, cutting crosswise about 4 - 6" above the bulbs. Shave the root ends from the onions and cut in half lengthwise. Toss the onions with the oil and hot sauce and lay out on the baking sheet. Sprinkle with salt. Roast in a preheated 500º oven until onions are brown and tender, turning once, about 15 minutes. Melt butter in heavy saucepan over medium-high heat. Add sugar and stir until it dissolves. Remove from heat. Add vinegar. Return to heat. Simmer until mixture thickens slightly, about 2 minutes. Drizzle glaze over the onions before serving.

- Place each onion half, cut side up, on a 10-inch square of heavy-duty aluminum foil. Drizzle with olive oil and vinegar. Sprinkle with salt and pepper. Turn onions cut side down; pat a piece of bacon onto the side of each one. Fold foil into neat packets.
- Heat grill to medium hot. Place foil packets on grill; cook 20 to 30 minutes (if grill becomes too hot, move onions to a cooler area), until tender and slightly charred. Let onions cool in packets for 15 minutes.

- Preheat the oven to 400 degrees F (200 degrees C).
- Peel onions and cut off ends. Place each onion on large sheet of aluminum foil.
- Cut 6 to 8 slices in each onion from the top down about 3/4 of the way toward the bottom; don't cut all the way through. Sprinkle 1/2 of the crumbled bouillon cube over each onion, then place 1 tablespoon butter on top of each. Season with paprika, salt, and pepper. Wrap aluminum foil around each onion to form a pouch.
