CHICKEN AND BACON SALAD



Chicken and bacon salad image

This salad is really easy, but packed with tasty flavor, and easy to add more to as the mood suits.

Number Of Ingredients 7

6 leaves romaine (approx)
3 1/2 oz chicken tenders (95g, 1-2 pieces, approx weight (or thigh))
3 slices smoked bacon (2 1/2 oz/75g approx (streaky))
2 tbsp extra virgin olive oil
1 tbsp lemon juice (or wine vinegar)
1 tsp Dijon mustard (or grain mustard)
2 tsp honey

Steps:

  • Warm a small-medium skillet over a medium-high heat. When it's warm add the bacon and cook until gently brown and ideally crisp on both sides.
  • Remove the bacon from the pan and set aside. Add the chicken to the pan and cook a few minutes on both sides until cooked through.
  • Thinly slice the romaine and cut larger pieces in half (eg at top of leaves). Place all of the dressing ingredients (oil, lemon, mustard and honey) in a small bowl or jar and whisk/shake to combine. You can do these as the chicken and bacon cooks.
  • Once the chicken is cooked through, remove from pan and slice both the chicken and bacon into small bite-sized pieces. Add both to the sliced romaine, drizzle over the dressing then toss to mix. Serve, ideally with meats still warm or at room temperature.

4 boneless chicken thighs
1 head romaine lettuce, chopped
½ cup cherry tomato, halved
½ red onion, thinly sliced
2 avocados, chopped
1 tablespoon olive oil
1 teaspoon salt
2 cloves garlic, minced
1 jalapeño pepper, minced
½ teaspoon chili powder
1 tablespoon honey
4 tablespoons lime juice
4 tablespoons olive oil
2 tablespoons honey
1 teaspoon salt
½ teaspoon pepper
4 tablespoons lime juice

Steps:

  • In a medium bowl, combine all the ingredients for the chicken marinade.
  • Toss in the chicken thighs and marinate for at least one hour.
  • In a cast-iron skillet, cook chicken on high heat until there is a nice sear on the surface of the chicken, and the inside is no longer pink. Roughly four minutes each side. Set chicken aside.
  • Place chopped lettuce, tomatoes, red onion, and avocados in a large salad bowl.
  • Slice cooked chicken thighs and add to the salad bowl.
  • In a small bowl, combine all the ingredients for the dressing. Mix well.
  • Toss the salad with the dressing and serve immediately.
  • Enjoy!

2 tablespoons olive oil
⅓ cup honey
3 tablespoons stone ground mustard
2 tablespoons dijon mustard
½ lemon
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon pepper
4 chicken thighs, skinless and boneless
1 head romaine lettuce, chopped
1 cup cherry tomato, halved
¼ red onion, thinly sliced
1 avocado, sliced
1 hard-boiled egg, sliced
¼ cup cooked bacon, diced

Steps:

  • In a small bowl, add the olive oil, honey, stone ground mustard, Dijon mustard, lemon, garlic, salt, and pepper. Whisk until smooth.
  • Remove ½ of the marinade and refrigerate to use as a dressing.
  • Add chicken thighs to remaining marinade and let it marinate for two hours.
  • Add a teaspoon of olive oil to a nonstick pan. Sear chicken on each side until golden, crispy, and cooked through. Set aside and allow to rest.
  • Put lettuce in a large bowl, add tomatoes, red onions, avocado slices, and hard-boiled egg.
  • Slice chicken into strips and place in the salad.
  • Add the remaining marinade to the salad and toss.
  • Sprinkle bacon on top.
  • Enjoy!

1/4 cup extra-virgin olive oil, plus more for the grill
3 cloves garlic, chopped
1/4 cup balsamic vinegar
1 tablespoon honey
1 teaspoon dried oregano
Kosher salt
Pinch of red pepper flakes
1 1/4 pounds chicken cutlets (4 to 6)
Freshly ground black pepper
2 bell peppers, quartered
1 red onion, sliced
3/4 cup grape tomatoes
2 tablespoons extra-virgin olive oil, plus more for grilling

Steps:

  • Make the chicken: Preheat a grill to medium high and oil the grates. Whisk the garlic, balsamic vinegar, olive oil, honey, oregano, 1/2 teaspoon kosher salt and the red pepper flakes in a shallow bowl.
  • Place the chicken between 2 sheets of plastic wrap and pound with a heavy skillet or the flat side of a meat mallet until an even 1/2-inch thickness. Marinate the chicken in the vinegar mixture while you make the peperonata.
  • Make the peperonata: Toss the bell peppers, red onion and grape tomatoes with olive oil and salt. Grill the peppers and onion over medium-high heat, turning, until charred, about 6 minutes. Grill the tomatoes in a grill basket, 3 to 4 minutes. Slice the peppers and chop the onion; toss with the tomatoes, basil, balsamic vinegar, 2 tablespoons olive oil, 1/2 teaspoon kosher salt and the red pepper flakes.
  • Season the chicken with salt and black pepper and grill until browned and well marked, 2 to 3 minutes. Flip and grill until the chicken is cooked through, about 2 more minutes.
  • Top the chicken with the peperonata.

450 g new potatoes, scrubbed and quartered lengthways
175 g fine green beans, trimmed
6 slices rindless streaky bacon
120 g mixed salad greens (or your own mix of leaves)
4 cooked skinless chicken breasts, into chunks
150 ml honey mustard dressing (bought or home made)

Steps:

  • Cook potatoes in boiling water till tender.
  • Also cook the beans.
  • Drain them both and leave to cool.
  • Fry the bacon till crisp, let cool and cut into pieces.
  • Scatter salad leaves on serving plate, and put the potatoes on top.
  • Toss the chicken and beans as much dressing as you like, and spoon over the salad.
  • Top with bacon pieces and serve.

2 tablespoons oil
2 onions, chopped
1 cup slivered almonds
2 teaspoons low-fat margarine
salt & pepper
1 garlic clove, chopped
1/2 teaspoon black pepper
1 1/2 cups low-fat chicken broth
1 lemon, juice of
1 teaspoon fresh basil
1/2 cup honey
2 tablespoons cornstarch

Steps:

  • In pan, heat butter and oil.
  • Brown chicken in this mixture.
  • Season with salt & pepper if desired, remove.
  • In remaining fat, cook onion and garlic until clear.
  • Add ground or crushed almonds, basil, pepper, and honey and cook, stirring, until mixture is well blended.
  • Combine broth and cornstarch and add to pan; cook, stirring, over high heat until sauce thickens.
  • Remove from heat, stir in lemon juice.
  • Place chicken in a casserole dish, spooning sauce over.
  • Bake, covered, at 350 degrees for 1 hour, or until chicken is tender.

1/2 cup honey
2 tablespoons ground mustard

1-1/2 pounds boneless skinless chicken breasts, cut into 1-inch cubes (about 48)
SAUCE:
1 cup Dijon mustard
1/2 cup honey
4 teaspoons ground mustard
1/2 teaspoon dried rosemary, crushed
ASSEMBLY:
16 bacon strips

Steps:

  • In a small bowl, whisk the first six ingredients. Pour into a large resealable plastic bag. Add chicken; seal bag and turn to coat. Refrigerate 4 hours or overnight., In a small bowl, combine sauce ingredients; set aside. Cut bacon strips crosswise into thirds. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain., Drain chicken, discarding marinade. Wrap a bacon piece around each chicken piece; secure with a toothpick., Moisten a paper towel with cooking oil; using long-handled tongs, rub on grill rack to coat lightly.
