HONEYDEW MELON GAZPACHO



Honeydew Melon Gazpacho image

1 small honeydew melon, peeled and seeded
1 large cucumber, peeled and seeded
1 cup green grapes
1 cup packed spinach leaves
1/4 cup basil leaves
4 scallions, sliced
1 serrano chile, seeded and chopped
2 tablespoons olive oil
1 tablespoon champagne vinegar
1 lime, juiced
1 tablespoon honey
1 avocado, seeded and flesh removed
Kosher salt and freshly ground black pepper
1/4 cup cilantro leaves
Avocado slices
4 lime wedges

Steps:

  • Roughly chop the melon and add to the bowl of a food processor, reserving some for garnish. Chop the cucumber and halve the grapes and add to the food processor. Top with the spinach, basil, scallions and serrano. Splash in the olive oil, champagne vinegar, lime juice and honey. Process until the ingredients are combined, about 1 minute. Add half the avocado and process again until the avocado has been completely incorporated, about 30 seconds. Season to taste with salt and pepper and thin with ice water if necessary to reach desired consistency.
  • Transfer to a bowl, cover and refrigerate for at least 1 hour.
  • To serve: Ladle the soup into bowls and top with the diced honeydew, sliced avocado, and cilantro leaves. Serve with wedges of lime on the side.

BLUEBERRY, THYME AND SWEET CREAM ICE POPS



Blueberry, Thyme and Sweet Cream Ice Pops image

These ice pops use frozen Maine blueberries, which are deliciously sweet and can be found all year long. Sweetened condensed milk steeped with fresh thyme is a creamy, herbaceous addition. (To make the pops more kid-friendly, omit the thyme.)

2 1/2 cups frozen Maine blueberries
1/2 cup sweetened condensed milk
2 tablespoons sugar
4 tablespoons fresh thyme leaves, chopped (about 2 tablespoons chopped)
Kosher salt
2 tablespoons fresh lemon juice

Steps:

  • Take the berries out of the freezer to thaw. Bring the milk, 1/4 cup water, sugar, thyme and a pinch of salt to a simmer in a small saucepan. Cook over medium heat, stirring occasionally, for 5 minutes. Let cool completely at room temperature, at least 30 minutes.
  • Put 2 cups of the blueberries and the lemon juice in a blender. Strain the cooled milk mixture into the blender, pressing on it with a wooden spoon to extract as much flavor from the thyme as possible; discard the thyme. Puree the blueberry mixture until completely smooth, scraping down the sides of the blender partway through if needed. Transfer the mixture to a large liquid measuring cup with a pouring spout. Stir in the remaining 1/2 cup blueberries.
  • Pour the mixture into the ice-pop molds, leaving at least 1/4 inch of space at the top (the mixture will expand). Insert the sticks. Freeze until solid, 5 hours to overnight. Unmold, and enjoy immediately.

CHOCOLATE "SUNDAE" ICE POPS

Frozen treats are an excellent place to include healthier ingredients--almost anything in the form of an ice pop brings back the wide-eyed joy of childhood (and it takes a while to consume even just a few ounces!). I love making frozen pops with fruit purees and juices, but these are my favorite because they are creamy, chocolaty, and decadent. My kids think it's hilarious that they are eating avocado in their pop (oh, to be five...).

Number Of Ingredients 8

1 cup low-fat milk
1 cup low-fat evaporated milk
1 avocado, halved, pitted and peeled
1 ripe banana, peeled
3 tablespoons honey
1/4 cup cocoa powder
1 teaspoon vanilla extract
Up to 4 tablespoons chocolate syrup

Steps:

  • To a blender add half the milk, half the evaporated milk, the avocado, banana, honey, cocoa and vanilla. Blend until well combined and smooth, about 30 seconds. Add the remaining milk and evaporated milk and blend for 10 seconds until well incorporated. Drizzle each popsicle mold with 1 teaspoon of chocolate syrup. Divide the milk mixture among the molds, filling each up 1/4-inch from the top. Cover the molds with the lid (insert ice-pop sticks if needed) and freeze overnight. To unmold, dip the mold into warm water for 30 seconds to loosen the ice pops.

WATERMELON, CHILI AND BASIL ICE POPS



Watermelon, Chili and Basil Ice Pops image

These fruity ice pops give you an array of tastes: sweet, tangy, salty and spicy. If you cannot find Thai basil, which is milder than regular basil with a slight licorice flavor, regular basil will be fine in this recipe. Sprinkle any leftover chili salt on sweet summer fruits like mangos, pineapples or peaches for a spicy-sweet treat.

2 tablespoons fresh lime juice
1/3 cup sugar
1 large bunch Thai basil, stems and leaves roughly chopped (about 1 cup)
1 red Thai bird chile
2 tablespoons kosher salt
3 cups 1-inch cubes watermelon

Steps:

  • Bring the sugar and 1/4 cup water to a simmer in a small saucepan. Cook over medium heat, stirring occasionally, until the sugar is completely melted, about 5 minutes. Turn off the heat, add the basil and stir until completely wilted. Let cool completely at room temperature, at least 30 minutes.
  • Meanwhile, finely mince the chile (seeded for less heat, if desired). Add the salt to the minced chile, and run your knife through the mixture several times until the salt starts to turn light pink; set aside.
  • Put the watermelon and lime juice in a blender. Strain the basil syrup into the blender, pressing the basil in the strainer with the back of a spoon to extract as much flavor as possible; discard the basil. Puree the watermelon mixture until completely smooth, scraping down the sides of the blender partway through if needed. Transfer the mixture to a large liquid measuring cup with a pouring spout.
  • Pour the mixture into the ice-pop molds, leaving 1/4 inch of space at the top (the mixture will expand). Insert the sticks. Freeze until solid, 5 hours to overnight. Unmold, and sprinkle 1 or both sides of the pops with the chili salt, depending on how spicy you want your pops. Serve immediately with any remaining chili salt on the side.

PINEAPPLE, GINGER AND CILANTRO ICE POPS

1 large bunch cilantro, including stems and roots, rinsed
1 3-inch piece ginger, peeled
2 cups fresh pineapple juice

Steps:

  • Cut the cilantro stems from the cilantro leaves. Finely chop the stems and roots in a food processor. Transfer to a fine-mesh sieve set over a small bowl. Press on the solids to extract the juices. Discard the solids. Measure 1 tablespoon cilantro juice and place in a large measuring cup.
  • Using a Microplane or fine grater, grate the ginger into the sieve set over the bowl. Press on the solids to extract the juices. Measure out 1 teaspoon ginger juice and stir it, along with the pineapple juice, into the cilantro juice. Pour into ice-pop molds and freeze.
