4 slices bacon, chopped
1 small onion, finely chopped (about 1 cup)
½ green bell pepper, finely chopped (about ½ cup)
1 stalk celery, finely chopped (about ¼ cup)
1 can (15.5 oz.) GOYA® Black Eye Peas
1 packet Sazón GOYA® without Annatto
2 cups cooked CANILLA® Extra-Long Grain Rice
GOYA® Adobo All-Purpose Seasoning with Pepper, to taste
GOYA® Hot Pepper Sauce, to taste

Steps:

  • Step 1 In medium, heavy saucepan over medium-high heat, add bacon. Cook until fat is rendered and bacon is crisp, about 7 minutes. Drain off and discard all but 1 tbsp. fat. Add onions, peppers and celery to pan; cook until vegetables are tender, about 10 minutes. Step 2 Add blackeye peas (and their liquid) and sazón to saucepan; bring to boil. Reduce heat to medium low. Simmer, stirring occasionally, until thickened and heated through, about 10 minutes more. Stir in cooked rice, simmer until liquid is absorbed, about 5 minutes more. Season with adobo and hot pepper sauce.

4 tbsp. butter
1 whole large onion, diced
4 cloves garlic, minced
1 whole green bell pepper, diced
2 stalks celery, diced
4 c. soaked black-eyed peas
5 c. low-sodium (or no-sodium) chicken broth
1 whole ham hock
Salt and pepper, to taste
Cayenne pepper, to taste
2 tbsp. white vinegar
White or brown rice, for serving

Steps:

  • Soak black-eyed peas in cool water for at least 6 hours. Rinse before using.
  • Heat butter in a large pot over medium-high heat. Add onion, garlic, green pepper, and celery and stir. Cook for 3 to 4 minutes. Stir in soaked beans, then add chicken broth, ham hock, salt & pepper, and cayenne to taste. Bring to a boil, then reduce heat and cover the pot for 30 minutes.
  • After 30 minutes, check the liquid level; if it's too soupy, cook with the lid off for another 15 minutes or so. If it's too thick, splash in a little more broth. Stir in vinegar, then taste for seasonings. Add more spice if needed.
  • Serve over white or brown rice, making sure to get plenty of the cooking liquid spooned over the top. Or, you may mix the bean mixture with the rice before serving.
  • Variations: Add red bell pepper, canned diced tomatoes, diced jalapenos, diced ham (instead of ham hocks), or sliced bacon (instead of ham hocks). Stir in torn-up kale when 5 minutes of cooking time remain. You can also use canned, drained black-eyed peas if preferred. Just use diced ham instead of ham hock and a little less broth, as peas won't need to cook as long.

Hoppin' John or black eyed peas with rice is said to bring good luck in the new year. I've simplified one of Bobby Flay's recipes which uses left over champagne for a delicious white sauce & shrimp to give it a little variety.

1/2 lb bacon, chopped
2 (15 7/8 ounce) cans black-eyed peas
1 medium onion, finely chopped
1 large garlic clove, finely chopped
1 cup rice
3 cups chicken broth
3 cups dry champagne or 3 cups other dry white wine
1 tablespoon chopped fresh thyme or 1 teaspoon dried thyme
1/3 cup chopped green onion
12 -16 ounces shrimp, peeled (medium or large)
1/3 cup shallot, chopped
1/4 teaspoon black pepper
1/2 cup unsalted butter, cut into half inch pieces
1/4 cup chopped parsley

Steps:

  • Cook the chopped bacon over medium heat until golden brown and crisp. Remove with a slotted spoon & reserve the bacon fat.
  • In a medium pot pour the rinsed black eyed peas and 2-3 tbsps. of the bacon grease. Add a 1/4 tsp salt, 1 tsp dried thyme, a little water (just to cover the beans) and keep over low heat. The beans are cooked so this is mostly to give them a little flavor. Most of the water would evaporate by the time you're ready to use them.
  • In a large sauce pan or a wok heat 2 tablespoons of the bacon grease over medium high heat and cook the onions until soft. (Using olive oil will make a healthier version.) Add the garlic and cook for 30 seconds just to release the flavor without burning it. Stir in the rice and cook for about 2 minutes or until it looks translucent. Add in 1 cup of the champagne or wine and cook until completely reduced. Add 2 cups of the broth and let it cook over medium heat until evaporated. Add the last cup of broth. When the liquid is gone your rice should be cooked. If you want to use more rice just use the ratio of 1:3 rice to broth.
  • When it's done set to the side and sprinkle the green onions.
  • In a sauté pan add 3 tablespoons of the bacon grease and add the shrimp in an even layer, salt & pepper. Cook until nicely pink & no longer translucent. Add those on top of the risotto.
  • Place the 2 cups champagne, shallots, vinegar & pepper in a medium saucepan and bring to a boil over high heat. Let cook until liquid is reduced to 1/4 cup. Begin whisking in the butter a few pieces at a time and continue whisking until the sauce is emulsified. Season with salt.
  • Pour the black eyed peas over the risotto, pour the white sauce, top with the bacon bits & parsley.

1 small green or sweet red pepper, chopped
2 celery ribs, chopped
6 green onions, sliced
1 cup uncooked long-grain rice
2 cups water
1/4 teaspoon salt
1/2 to 1 teaspoon cayenne pepper
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon dried oregano
1 bay leaf
1 can (15 ounces) black-eyed peas, rinsed and drained

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Drain on paper towels; discard all but 2 tablespoons drippings. Saute pepper, celery and onions in drippings until almost tender. Add rice, water and seasonings. Cover and simmer 10 minutes. Add peas and bacon; simmer 10 minutes longer. Discard bay leaf.

1 medium onion

1 bay leaf

3 tablespoons chopped fresh coriander leaves
Accompaniment: cooked rice

Steps:

  • Quick-soak black-eyed peas.
  • Quarter kielbasa lengthwise and cut quarters crosswise into 1/2-inch pieces. Chop onion and mince garlic. Cut celery crosswise into 1/2-inch-thick slices. Wearing rubber gloves, seed and mince jalapeño.
  • In a 3-quart heavy kettle cook kielbasa, onion, garlic, celery, jalapeño, and bay leaf in oil over moderate heat, stirring, until onion is softened. Add peas and broth and simmer, covered, 20 minutes, or until peas are tender. Discard bay leaf and stir in coriander and salt and pepper to taste.

2 tablespoons salted butter
½ medium onion, chopped

2 ½ cups chicken broth
2 cups diced cooked ham
½ cup chopped green onions
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste

Steps:

  • Combine water and black-eyed peas in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 15 minutes. Allow 10 to 15 minutes for pressure to build.
  • Select Keep Warm function for 5 minutes, then release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Drain peas and reserve cooking liquid. Rinse and dry the pot and return to the cooker.
  • Add onion, butter, and garlic to the cooker. Select Saute function and cook for 2 minutes. Add brown rice and mix well. Cook until rice is toasted, about 2 minutes.
