HOPPIN' JOHN IN THE SUMMERTIME
A hearty Low Country stew adapts itself to a southern summer salad. I got this from my Low Country mother-in-law, who tweaked an idea from her mother's hoppin' john soup one year when it was just too hot.

HOPPIN' JOHN
This is a traditional dish in the Southern U.S. It's supposed to bring prosperity and good luck to eat it on New Year's Day. This version is based on the one in the 1975 edition of Joy of Cooking, but I've tweaked it a little bit.

Steps:
- Boil the black-eyed peas for two minutes, then remove from heat and set aside for 1 hour.
- Add the onion, garlic, black pepper, crushed red pepper, and bay leaf.
- Bring to a boil, cover, and simmer 1 hour, stirring occasionally.
- Stir in the salt pork and simmer 1 more hour, uncovered, stirring frequently.
- Meanwhile, prepare the rice as directed on the package.
- Remove the salt pork and the bay leaf from the beans.
- Stir in Tabasco sauce.
- Serve over rice.

SLOW COOKER HOPPIN JOHN
Using a slow cooker makes easy work of this classic, long-simmered, delicious southern dish. Serve over cooked white rice.

Steps:
- Place black-eyed peas in a large container and cover with several inches of cool water; let stand 8 hours to overnight. Drain and rinse.
- Pour 6 cups water into a pot; add ham hock. Bring to a boil, reduce heat to medium-low, and simmer until meat is tender, about 1 hour. Transfer ham hock to a plate to cool and reserve 4 cups of the cooking liquid.
- Layer soaked peas, andouille sausage, onion, celery, and garlic in the bottom of a slow cooker. Remove meat from ham hock and add meat to slow cooker. Sprinkle bay leaves, cumin, salt, and red pepper flakes over the top. Pour reserved cooking water over peas mixture.
- Cook on High until peas are tender, at least 4 hours.

HOPPIN' JOHN

Steps:
- Wash the peas in a strainer, and soak them for 4 hours in ample fresh water. When ready, heat olive oil over medium-high heat in a 4-quart pot, and brown the hog jowl on both sides. (If using bacon, omit the olive oil, and simply render the fat in the pot for 5 minutes.) Add onion, and cook until softened, about 5 minutes. Add 6 cups water, black pepper, red pepper and salt, and bring to a boil.
- Let mixture boil 10 minutes, and then add peas. Maintain a low boil, uncovered, until peas are nearly tender (25 minutes for black-eyed peas, 30 minutes for field peas). In a bowl, lightly crush tomatoes, and add to pot. Add rice to pot, reduce heat to low and simmer, covered, 20 minutes.
- Turn off flame, and allow hoppin' John to steam in pot, lid on, for 5 minutes. If using hog jowl, remove from pot, and shred meat. Fluff hoppin' John, and add shredded jowl. Serve.
