4 boneless skinless chicken breast halves (6 ounces each)
1/2 cup spreadable garlic and herb cream cheese
4 thin slices prosciutto
1/4 cup chopped oil-packed sun-dried tomatoes
8 fresh basil leaves
1/4 cup all-purpose flour
2 eggs
2/3 cup dry bread crumbs
3 tablespoons grated Romano cheese
3 tablespoons olive oil
SAUCE:
1 cup heavy whipping cream
1 tablespoon finely chopped shallot
3/4 cup crumbled Gorgonzola cheese
1/4 teaspoon salt
1/4 teaspoon pepper
Minced fresh basil

Steps:

  • Preheat oven to 350°. Flatten chicken breasts to 1/4-in. thickness; spread 2 tablespoons cream cheese down the center of each. Top with one slice of prosciutto, 1 tablespoon of tomatoes and two basil leaves. Roll up and tuck in ends; secure with toothpicks., Place flour and eggs in separate shallow bowls. In another shallow bowl, combine bread crumbs and Romano cheese. Dip chicken in flour, eggs, and then coat with bread crumb mixture., In a large skillet, brown chicken in oil in batches. Place seam side down in a greased 11x7-in. baking dish. Bake, uncovered, 35-40 minutes or until a thermometer reads 165°., In a small saucepan, heat cream and shallot over medium heat until bubbles form around sides of pan. Stir in Gorgonzola cheese, salt and pepper. Cook 4-6 minutes or until cheese is melted, stirring occasionally. , Discard toothpicks. Drizzle chicken with sauce; sprinkle with minced basil.

  • In a bowl, mix the cream cheese, chives, and garlic. Divide the mixture into 4 balls.

1 teaspoon dried parsley flakes
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon garlic powder
4 boneless chicken breasts, pounded to 1/4-inch thickness and frozen for 15-20 minutes for ease in handling
4 slices swiss cheese
1/4 cup all-purpose flour
1/2 cup seasoned dry bread crumb
2 tablespoons grated parmesan cheese
1/8 teaspoon salt
1/8 teaspoon pepper
2 eggs, slightly beaten
crisco nonstick cooking spray

Steps:

  • Preheat oven to 375ºF.
  • In small mixing bowl combine green onion, parsley flakes, salt, pepper and garlic powder.
  • Set aside.
  • Place one piece of cheese in center of each chicken breast.
  • Top with one-fourth of onion mixture. Starting at narrow edge, roll each breast tightly, tucking in sides to enclose cheese and onion mixture.
  • Dredge with flour.
  • In small bowl combine breadcrumbs, Parmesan cheese, salt and pepper.
  • Dip each rolled breast in beaten egg, then in crumb mixture to coat.
  • Spray a 9 x 9 x 2-inch pan with Crisco No Stick Cooking Spray.
  • Generously spray each of coated breasts with Crisco No Stick Cooking Spray and arrange in pan.
  • Bake for 30 to 35 minutes, or until golden brown.

¼ cup chopped fresh sage
¼ cup grated Parmesan cheese
2 tablespoons olive oil
½ teaspoon salt
4 boneless, skinless chicken thighs
2 tablespoons prepared horseradish
1 tablespoon Dijon mustard
2 teaspoons onion powder
1 teaspoon garlic powder
1 medium zucchini

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Combine butternut squash, fresh sage, Parmesan cheese, 2 tablespoons olive oil, and salt in a bowl. Toss until squash is completely coated and place on the right side of a large nonstick baking sheet (17 1/4 x 11 1/2-inches).

If you do not have horseradish cheese in your local store, try using Monterey Jack cheese with a thin spread of prepared horseradish, as it is very potent.This would also be great with pepper jack! This recipe is only for 2 since I only serve 2 but it is very easy to double. Enjoy!

2 chicken cutlets
2 tablespoons horseradish cheddar cheese
1/2 cup breadcrumbs
1 1/2 tablespoons McCormick's Montreal Brand steak seasoning

Steps:

  • Preheat oven to 350°F.
  • Spray a glass baking dish with non stick spray or line with foil for easy clean up.
  • Mix breadcrumbs and steak seasoning in a shallow dish.

4 boneless skinless chicken breast halves
2 tablespoons butter
2 tablespoons flour
1 cup half-and-half
3 tablespoons horseradish
2 tablespoons sour cream
1 tablespoon sugar
1 teaspoon Dijon mustard
1 teaspoon white wine vinegar
2 -3 tablespoons chopped fresh parsley

Steps:

  • Lightly brown chicken breast in a little olive oil and set aside.
  • In medium saucepan melt butter, add flour and stir 1 minute.
  • stir in 1/2& 1/2, horseradish, sour cream, sugar, dijon mustard and vinegar and 1/2 the parsley.
  • Place chicken in sprayed baking dish and top with half the horseradish sauce.
  • Bake in pre-heated 350 degree oven for 40 minutes.

1 lemon, halved
1/4 cup olive oil, divided
2 large baking potatoes (1-1/2 lb.), peeled, cut into chunks
2 sweet potatoes (1-1/2 lb.), peeled and cut into chunks

Steps:

  • Heat oven to 375ºF.
  • Mix cream cheese, rosemary, half the garlic and pepper. Starting at neck of chicken, use handle of wooden spoon or fingers to carefully separate skin from meat of breast, thighs and legs, being careful not to tear the skin. Spoon cream cheese mixture under skin; use fingers to spread mixture out to thighs and legs. Place lemon halves into cavity of chicken. Place chicken in shallow pan. Brush with 2 Tbsp. oil.
