1 dash dried dill weed
1 dash garlic powder
1 dash pepper

2 russet potatoes, sliced 1/8 inch thick on a mandoline or by hand with a sharp knife
Olive oil, for brushing
Kosher salt and freshly ground black pepper
1 1/2 teaspoons chili powder
4 teaspoons soy sauce
1 tablespoon toasted sesame oil
1 teaspoon grated fresh ginger
Juice of 1 lime
Sriracha or other hot sauce, as desired
4 avocados, chopped
1/2 bunch fresh cilantro, chopped
Toasted sesame seeds, for topping

Steps:

  • For the homemade chili potato chips: Preheat the oven to 450 degrees F. Line 2 baking sheets with parchment.
  • Distribute the potatoes between the prepared baking sheets in one layer. Brush with olive oil and sprinkle with salt and pepper, then flip the potatoes over, brush the other side with olive oil and sprinkle with salt and pepper. Bake, rotating the pans halfway through, until splotchy and brown, 25 to 30 minutes. Keep a close eye on them as they could burn quickly.
  • For the sesame avocado salsa: Meanwhile, whisk together the soy sauce, sesame oil, ginger, lime and some hot sauce in a large bowl. Add the avocados and toss to coat, mashing some of the avocados a little bit to bring everything together. Taste and adjust as desired (this is one of those foods that you've eaten half of by the time you're done making it because you'll probably want to taste test it again and again and again...). Top with the chopped cilantro and toasted sesame seeds.
  • When the chips are done, immediately sprinkle them with the chili powder. Let cool slightly and enjoy with the salsa.

1 tablespoon thinly sliced serrano chiles, or to taste
1 large ripe avocado - halved, seeded, and flesh scooped out of peel

A great summer chicken dinner dish. We love avocados at our house so the sauce is almost more popular than the chicken so you might want to double that part of the recipe. Also I like to take whole cumin seeds and use them freshly ground! The flavor is much better.

2 teaspoons chili powder
1/2 teaspoon ground cumin
4 boneless chicken breasts
1/2 teaspoon salt
1 dash cayenne pepper
1 avocado
1/4 cup yogurt
1 garlic clove
2 teaspoons lime juice
1 tablespoon fresh cilantro
1/2 teaspoon salt
1/4 cup water
1 tablespoon olive oil

Steps:

  • Sprinkle chicken with cumin, chili powder, salt and a dash of cayenne on each.
  • In a blender or food processor, combine avocado, yogurt, garlic, 1/4 cup water, lime juice, 1/2 tsp salt and cilantro. Blend until smooth.
  • In fry pan with lid, brown chicken in olive oil 2 minutes on each side. Cover, lower heat and cook until just done, approximately 3 minutes.
  • Serve chicken with avocado sauce poured over it.

2 garlic cloves, coarsely chopped
1 1/2 teaspoons salt, or to taste
1 small white onion, coarsely chopped
2 fresh serrano or jalapeño chilies, or to taste, stemmed, seeded and coarsely chopped
6 to 8 tomatillos (about 1/2 pound), husks removed, and quartered
1 ripe avocado
8 to 10 cilantro sprigs.

Steps:

  • In a food processor or with mortar and pestle, process or pound the garlic and salt to a paste. Add onion, chilies and tomatillos; pulse in processor, or pound to make a slightly chunky paste.
  • Scoop out the avocado flesh. For a smooth, machine-finished purée, add it and the cilantro to the processor, and process very fine. To do it by hand, finely chop the avocado, and mash it into the onion-tomatillo mixture; stir in cilantro leaves. (For a medium texture, pour the machine-processed onion-tomatillo mixture into a bowl, and mix in the chopped avocado and cilantro.)
  • Serve immediately as a dip or a sauce with chips or vegetables.

Steps:
