HOT CHOCOLATE POKE CAKE
Marshmallow fluff, whipped hot cocoa topping and moist chocolate cake make this Hot Chocolate Poke Cake the indulgent winter cake of your dreams!

Steps:
- Make the chocolate cake according to package instructions.
- Pour into a greased 9x13-inch pan and smooth out. Bake cake according to package instructions.
- Poke the cake all over with the bottom of a wooden spoon or any round end handles. It should be large enough for the filling to get down into.
- In a saucepan, melt mini marshmallows with butter. Mix constantly until melted and smooth.
- Pour marshmallow mixture over the cake and make sure to fill the holes.
- In another bowl, whisk the heavy whipping cream and the hot chocolate mix and whip until stiff peaks form and no longer grainy (about 3 to 4 minutes). I find this easiest to do with a stand mixer using the whisk attachment.
- Frost the cake with the whipped hot chocolate cream and garnish with chocolate sauce and mini marshmallows and/or mini chocolate chips.
- Let the cake rest in the refrigerator for a few hours so the cake absorbs the marshmallow fluff before serving.

Steps:
- Preheat oven to 375°F.
- Butter, flour and sugar eight 6-ounce coffee cups or mugs made of ovenproof stoneware.
- Wipe the rims clean.
- Place the 8 tablespoons of butter and the chocolate in a bowl over a pan of simmering water (or in a double boiler) and melt.
- Stir occasionally until combined and smooth.
- Remove from heat and let cool 5 minutes.
- Beat eggs, yolk, vanilla, salt, and 1/2 cup sugar at the highest speed until the volume doubles and the mixture becomes foamy, about 5 minutes.
- Stir the 3 tablespoons of flour into the chocolate.
- Gradually add it to the egg mixture, beating on low until it is fully combined.
- Spoon the batter into each cup until it is about 3/4 inch from the rim.
- Bake until the cakes puff and begin to crack, but the centers are still a bit runny, about 13 to 17 minutes.
- Remove from the oven.
- Sprinkle with marshmallows, return to oven for 2 to 4 minutes, until the marshmallows begin to crisp.
- Remove from oven.
- Allow to cool about 5 minutes.
- Sift cocoa on top.

HOT COCOA CAKE
Steps:
- Preheat the oven to 350° F. Spray a Bundt pan with nonstick cooking spray, and set aside.
- In a stand mixer fitted with the paddle attachment, combine the sugar and butter on medium speed until the mixture resembles wet sand. Add the sour cream and mix in well. Add the eggs and then the egg whites, one at a time, beating well after each egg is added. Once all of the eggs are in, add the vanilla extract.
- Combine the coffee powder with the hot water. Add to the mixing bowl.
- In a separate bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt. Mix until homogeneous.
- Remove the bowl from the mixer and sift the dry ingredients into the mixture. Use a spatula to mix gently until all of the ingredients are completely combined. Add the chocolate chips and mix gently until evenly.
- Pour the batter into the Bundt pan and bake for 50 to 55 minutes, until a toothpick comes out clean. Cool for 10 minutes in the pan, then release onto a cake circle or a plate.

- In a small saucepan over medium heat, warm the whole milk until it begins to simmer. Whisk in the hot cocoa mix and set aside. Wait until it's entirely room temperature before continuing on with this recipe.
- Preheat the oven to 350ºF and prepare three 6-inch or two 8-inch cake pans by spraying the sides with cooking spray and fitting the bottoms with a wax paper or parchment cake circle.
- In a stand mixer fitted with a paddle attachment, whip butter on medium speed until creamy and light in color, about four minutes. Scrape down the bowl and paddle and turn the mixer to low, then add powdered sugar, cocoa powder, hot cocoa, salt, and vanilla extract. Increase the speed to medium and beat for two full minutes.
- Once the cake layers are completely cool, torte them to the desired height. Pipe a ring of hot cocoa buttercream around the edge of the first cake layer, then fill the middle halfway with marshmallow fluff before filling the rest of the space with hot cocoa buttercream (here's a tutorial on this filling method). Add the next layer of cake on top and repeat the filling process before adding the final cake layer on top, upside down so that the smooth bottom of the cake is facing up. Crumb coat with the hot cocoa buttercream and refrigerate for 20 minutes, then frost a final layer of hot cocoa buttercream, leaving the top edge unfinished.
