A convenient package of Italian salad dressing mix provides the yummy herb flavor in these broiled sandwiches that Paula Hadley assembles for her family of 10. "I use their favorite combination of meats and cheeses, then serve the sandwiches with chips and pickles," relates the Forest Hills, Louisiana cook. "They're a hit every time."

- In a small bowl, combine butter and salad dressing mix; spread 1 tablespoonful inside each bun. On bottom of each bun, layer one slice of meat, two slices of cheese and another slice of meat; replace tops. Spread 1 tablespoon butter mixture over top of each bun. , Place on a baking sheet. Broil 6 in. from the heat for 2-3 minutes or until tops are lightly browned.

Steps:
- Heat oven to 350°F.
- Spread half the onions onto bottom of 13x9-inch baking dish.
- Cut each frank lengthwise in half, being careful to not cut all the way through to opposite side of frank. Place, cut-sides down, over onions in dish; top with remaining onions. Drizzle with steak sauce.
- Bake 20 min. or until onions are tender. Serve franks in rolls topped with onions and sauce.

HOAGIES WITH QUICK PEPPER RELISH

- For the pepper relish: Heat the olive oil in a large skillet over medium heat. When the oil is hot, add the Fresno chiles, garlic, jalapenos, bell peppers and onion and sauté for to 4 minutes to soften. Add the vinegar, honey and mustard seeds. Bring to a boil and cook, stirring occasionally, until thickened, about 10 minutes.
- For the sandwiches: While the relish cooks, grease a griddle with the butter and place it over medium-high heat. When the griddle is hot, add the sausage pieces cut-side down and cook until well browned and crisp, about 3 minutes. Flip and place 2 pieces of provolone onto each sausage piece. Cook until the cheese has melted completely, another 2 to 3 minutes. Remove to a plate.
- Build the sandwiches by spreading the mayonnaise on the bottoms of each bun and laying on a piece of lettuce. Top each with a cheese-covered sausage piece and a generous portion of the pepper relish. Replace the top half of the buns and serve.
ROAST BEEF HOAGIE ON A HOT DOG BUN
Steps:
- 1. Separate the hot dog bun and toast it for 2 minutes.
- 2. Spread a very thin layer of mayonnaise on the bun and place small bits of the Swiss cheese on the bun. Microwave on high for 30 seconds.
- 3. Place roast beef on the Swiss cheese and spread a thin layer of mayonnaise and mustard on each slice. Microwave for 30 seconds. Wait for 1 minute for the sandwich to cool. Enjoy your Hoagie!

- In a small bowl, combine the butter and Italian salad dressing mix until smooth.
- Spread 1 tablespoon of butter mixture on the inside of each hoagie bun.
- On the bottom of each hoagie bun, place one slice of meat, two slices of cheese then another slice of meat.
- Place tops of buns onto sandwiches.
- Spread 1 tablespoon butter mixture on the top of each bun.
- Place sandwiches onto a baking sheet.

STEAK & MUSHROOM HOAGIES
This is just one of those baked sandwiches that you get a craving for every once in a while. This is good "football watching" food, if you know what I mean!!

Steps:
- Slice frozen meat into long, thin strips.
- In large, deep skillet, or dutch oven, melt butter.
- Add sliced onion (and green pepper if using) and cook just until they start to sweat.
- Add mushrooms and frozen steak strips.
- Add your seasonings (season salt, garlic powder, black pepper).
- Keep heat on about medium to medium high (you are going to cook these pretty fast).
- Stir occasionally to ensure all meat is browning.
- While meat is browning, open rolls, place on cookie sheet, and"toast" in oven.
- Cook meat mixture until all meat is brown.
- (Tip: Just as meat is done, I will"recheck" seasoning, and usually end up having to add a little more) Spread each roll with generous amount of meat mixture and top each sandwich with mozzerella cheese.
- Return to oven and broil just until cheese starts to brown.
- Now hurry up and get back to that chair-- half time is almost over!
