It is a quick recipe and tastes absolutely DELICIOUS! I make them when my tastebud crave for a spicy punch and they really fulfil my desire. Hope u'll enjoy them too.

1/4-1/2 cup oil
1/2 teaspoon mustard seeds
1/2 teaspoon cumin seed
1 tablespoon chopped garlic
4 -5 curry leaves
1 1/2-2 teaspoons red chili powder
1 teaspoon coriander powder
1/2 teaspoon salt (or to taste)
1/4-1/2 cup tamarind paste
1/2 kg potato (boiled and cubed,1-inch by 1-inch)

Steps:

  • 1-Heat oil in a skillet.
  • 2-Add cumin seeds, mustard seeds, curry leaves and chopped garlic and fry till garlic becomes golden brown.
  • 3-Remove from heat and stir.
  • 4-Add red chilli powder, coriander powder and salt. Stir.
  • 5-Add in the tamarind paste and replace on heat. Stir.
  • 6-Heat the formed paste for approx two minutes.
  • 7-While on heat, add the potatoes and mix till all of the pieces get covered with paste.
  • 8-Serve hot in a bowl and enjoy!

My husband had this dish on a recent trip to China and came home raving about how delicious it was. It is super spicy, tangy, simple, and oh-so tasty.

⅔ pound waxy potatoes
1 tablespoon vegetable oil
2 teaspoons dried crushed red pepper flakes
1/2 teaspoon ground Sichuan pepper
1 clove garlic, minced
1 tablespoon black rice vinegar (such as Chinkiang)
1 tablespoon soy sauce
1 pinch flaked salt
1 teaspoon fresh cilantro leaves, or to taste

Steps:

  • Peel potatoes and cut into 1/4-inch matchsticks. Rinse under running water until water runs clear. Soak potatoes in water for 5 to 10 minutes.
  • Drain potatoes and pat dry.
  • Heat a wok over medium-high heat. Add oil. Add pepper flakes and ground Sichuan pepper to the hot oil; cook and stir until fragrant, about 30 seconds. Add potatoes and garlic; toss and cook until potatoes begin to soften, about 5 minutes. Add vinegar, soy sauce, and salt; toss to combine. Cook until flavors have infused, 1 to 2 minutes.
  • Serve garnished with cilantro leaves.

700 g firm waxy potatoes
3 tablespoons vegetable oil
1 medium onion, finely chopped
1 teaspoon black mustard seeds
1/2 teaspoon whole cumin seed
1 piece gingerroot (20 mm cube)
3 fresh chili peppers, finely chopped
1 1/2 teaspoons ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground turmeric
1/2 teaspoon chili powder
1 1/2 teaspoons lemon juice
1 teaspoon salt
1/4 teaspoon garam masala
1 tablespoon fresh coriander (for garnish)

Steps:

  • Scrub and boil the potatoes and allow them to cool. Break the potatoes by hand until no pieces are larger than 10 mm cube.
  • Heat the oil in a wok over a medium heat. Add the mustard seeds and as soon as they begin to pop, add the whole cumin seeds. Sir for a couple of seconds and then add the chopped onion.
  • Stir fry until the onion is golden (about 4 minutes) and then add the ginger and chilies. Stir for a few seconds until the ginger changes colour then add the ground coriander seeds, ground cumin seeds, turmeric and chili powder.
  • Stir once then add the broken potatoes and stir fry for 1 minute.
  • Add 125 ml of warm water, lower the heat and stir gently for 1 minute. Add the lemon juice, salt and garam masala and cook for a further 1 minute, stirring continuously. Remove from the heat.

Awesome potato dish to serve with B.B.Qs. or cold meats, excellent with chicken,pork chops even steak and of course curries. Easy to prepare and cook, this is a dish you will make time and again. This is so simple that I forgot to post it years ago. Better than mash and simpler that roast, what more could you ask for.

2 lbs potatoes, precooked and cold diced into 1-inch cubes
6 tablespoons oil
2 teaspoons mustard seeds
2 onions, finely sliced
4 garlic cloves, finely chopped
1 teaspoon chili powder
2 teaspoons paprika
2 teaspoons salt
2 lemons, juice of
10 fluid ounces water

Steps:

  • Heat the oil in a pot, add the mustard seeds, when they start to sputter add the onions, and garlic. Cook till onions are light golden in colour.
  • Add the chilli powder and paprika, stir and cook for 1 minute.
  • add the potatoes, salt, water and lemon juice, stir and cook till potatoes are well heated through.
  • Serve.
