1 cup all-purpose flour
6 tablespoons chilled butter, chopped
½ cup hot pepper jelly

Steps:

  • Blend Cheddar cheese, flour, and butter in a food processor until dough is a coarse-meal texture and forms into a ball. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Shape dough into 1 1/2-inch balls and place 1 inch apart on a baking sheet.
  • Bake in the preheated oven for 5 minutes. Remove from oven; press thumb into top of each ball, creating an indentation. Spoon about 1 teaspoon pepper jelly into indentation. Bake until edges are golden brown, about 5 minutes.

4 oz (half of 8-oz package) cream cheese
2 tablespoons hot pepper jelly

Steps:

  • Heat oven to 375°F. Spray 24 miniature muffin cups with cooking spray. Unroll dough onto work surface. Press seams together and form into 13x7 1/2-inch rectangle. With pizza cutter or sharp knife, cut dough into 6 rows by 4 rows to make 24 squares.
  • Press 1 dough square into each miniature muffin cup. Cut cheese into 24 cubes. Place one cube of cheese in bottom of each dough-lined cup.
  • Bake 9 to 12 minutes or until edges are golden brown. Cool 3 minutes; use metal spatula to loosen edges, and remove from pan. Spoon 1/4 teaspoon jelly on top of each cup to serve.

1/2 cup crumbled feta cheese (2 oz)
1/2 cup butter or margarine, softened, cut up
1 cup Gold Medal™ all-purpose flour
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon red pepper sauce, as desired
2 tablespoons chopped fresh parsley

Steps:

  • Heat oven to 400°F. Line large cookie sheet with cooking parchment paper.
  • In medium bowl, beat all ingredients except parsley on medium speed until smooth. Stir in parsley. On lightly floured surface, knead dough 10 to 12 times; shape into ball.
  • Roll into 24 balls, using about 2 teaspoons dough per ball; place on cookie sheet 1 1/2 inches apart.
  • Bake 15 to 20 minutes or until golden brown and set. Serve warm.

Steps:

  • CUT cheese slices diagonally in half. Toss chicken with sauce. Top crackers with cheese and chicken mixture; place 6 on microwaveable plate.

85g plain flour
50g butter , chopped
50g mature gruyère , grated
25g fresh parmesan (or vegetarian alternative), finely grated
2 eggs , well beaten
1l vegetable oil , for deep frying

Steps:

  • Sift the flour and a little salt into a bowl. Set a non-stick pan on the heat with 150ml cold water and the chopped butter. Bring to the boil, stirring until the butter melts. Tip in all the flour and, using a wooden spoon, beat hard until the mix becomes smooth and starts to leave the side of the pan.
  • Remove from the heat, beat in the gruyère and half the parmesan and cool for 5 mins. Gradually beat in the eggs until you have a smooth, thick, but spoonable mix - you may not need all the egg. Can be set aside now for 2 hrs without chilling.
  • When ready to serve, heat the oil in a deep-fat frying pan to around 180C. Using 2 teaspoons scoop up neat dollops and carefully drop into the hot oil. Fry 6-8 dollops a time for 3-4 mins until golden and crisp - dunk the dollops under to brown evenly. Reheat the oil as necessary. Drain on paper towels, sprinkle with the rest of the parmesan. Serve hot.

3/4 cup mayonnaise
2 cups cheddar cheese, grated or 2 cups monterey jack cheese
1 1/4 cups cooked ham, chopped or 1 1/4 cups bacon bits
1/2 cup green onion, chopped
1 tablespoon lemon juice
1/4 teaspoon hot pepper sauce

Steps:

  • lightly brush mini tart pans with mayonnaise.
  • remove crust from bread, cut each slice into 4 squares, lightly press into tart pans.

This recipe was from Family Circle Magazine Dec. 2009. It was considered to be a healthy recipe choice for those having parties with lots of food and drink. I made them for a meeting and they were a hit. I think you have to serve them with other things because despite being healthy they are a bit rich. I like them as a great alternative to the usual cheese ball. The nuts give it crunch and the two cheeses with the three fruits was very unique. This is not for someone who doesn't like cheese though. 1/2 cup shredded reduced-calorie cheddar cheese, at room temperature
4 ounces light cream cheese
4 drops hot pepper sauce (such as Tabasco)
1/2 cup dried apple, chopped
