HAM LOAF
"I COPIED this recipe exactly the way Grandma has written it in her worn cookbook. The only difference today is that I can't get home-smoked ham like those Grandpa used to cure in his old-fashioned smokehouse. But that never matters to hungry folks at the table-Grandma's recipe is a winner every time!"

- In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

- In a bowl, combine the mustard with the pineapple juice.
- Glaze the ham with the mustard mixture.
- Remove any plastic disk that may be attached to the bone of your ham and discard it.
- Wrap the ham tightly in foil and place it in a roasting pan, with the cut side facing down.
- You should roast it for about 10-12 minutes per pound (or according to the table above).
- Prepare the glaze by mixing the pineapple juice with the brown sugar, Dijon mustard, ginger, and cornstarch, and bring them to a boil.
- Allow the glaze to simmer for 2-3 minutes. Let it cool.
- Turn the oven up to 425 F 15 minutes before the ham is ready.
- Brush the ham with glaze and return to the oven until it reaches between 145 F and 165 F.
- Serve and enjoy.
