"I COPIED this recipe exactly the way Grandma has written it in her worn cookbook. The only difference today is that I can't get home-smoked ham like those Grandpa used to cure in his old-fashioned smokehouse. But that never matters to hungry folks at the table-Grandma's recipe is a winner every time!"

2 eggs
1 cup milk
1 cup dry bread crumbs
1/4 teaspoon pepper
1-1/2 pound ground fully cooked ham
1/2 pound ground pork
GLAZE:
1/3 cup packed brown sugar
1/4 cup cider vinegar
1/2 teaspoon ground mustard
2 tablespoons water

Steps:

  • In a large bowl, beat the eggs; add milk, bread crumbs and pepper. Add ham and pork; mix well. In a shallow baking pan, shape meat mixture into an 8x4-in. oval. Insert a thermometer. Bake at 350° for 30 minutes. , Meanwhile, combine glaze ingredients. Spoon over loaf. Bake 40 minutes longer or until the thermometer reads 170°, basting occasionally with glaze.

2 tbsp Dijon mustard
¼ cup pineapple juice
½ cup pineapple juice or orange juice
½ cup brown sugar
2 tbsp Dijon mustard
¼ tsp ground ginger
2 tsp cornstarch

Steps:

  • Preheat the oven to 325 F.
  • In a bowl, combine the mustard with the pineapple juice.
  • Glaze the ham with the mustard mixture.
  • Remove any plastic disk that may be attached to the bone of your ham and discard it.
  • Wrap the ham tightly in foil and place it in a roasting pan, with the cut side facing down.
  • You should roast it for about 10-12 minutes per pound (or according to the table above).
  • Prepare the glaze by mixing the pineapple juice with the brown sugar, Dijon mustard, ginger, and cornstarch, and bring them to a boil.
  • Allow the glaze to simmer for 2-3 minutes. Let it cool.
  • Turn the oven up to 425 F 15 minutes before the ham is ready.
  • Brush the ham with glaze and return to the oven until it reaches between 145 F and 165 F.
  • Serve and enjoy.
