Steps:
- Spray a skillet with cooking spray or heat a small amount of fat or oil in it.
- Brown the ground meat in the skillet in batches; transfer the browned meat to a covered bowl or pot to keep hot.
- Pack meat loosely into heated half-litre (1 US pint) OR 1 litre (1 US quart) jars.
- Leave 3 cm (1 inch) headspace.
- [Optional]: add 1/2 teaspoon pickling salt to half-litre (1 US pint) jars; 1 teaspoon of pickling salt to 1 litre (1 US quart) jars.
- Top jars up with a boiling liquid (water from a kettle, meat, stock, or tomato juice) maintaining 3 cm (1 inch) headspace.
- Debubble; adjust headspace.
- Wipe jar rims.
- Put lids on.
- Processing pressure: 10 lbs (69 kPa) weighted gauge, 11 lbs (76 kpa) dial gauge (adjust pressure for your altitude when over 300 metres / 1000 feet.)
- Processing time: half-litre (US pint) jars for 75 minutes OR 1 litre (US quart) jars for 90 minutes.

HOW TO CAN GROUND BEEF
Canning ground beef in large batches the easy way.

- Place your ground beef into a large stock pot and add enough water to cover the meat. Bring your meat to a boil then turn the heat down and simmer until your meat is cooked at least half done.
- Drain the ground beef and save the stock if desired.
- Fill your canning jars with ground beef leaving 1 inch of headspace.
- If desired add salt 1 tsp. per pint jar or 2 tsp. per quart jar.
- Fill the jars with boiling water, beef broth, or tomato juice remembering to leave 1 inch of headspace.
- Use a spatula to remove air bubbles from the jars, wipe the lids clean and place lids and rings on finger tight.
- Place jars in the pressure canner and process pints for 75 minutes and quarts for 90 minutes.
- Use 10 pounds pressure for altitudes up to 1,000 feet and 15 pounds for over 1,000 feet.
CANNING BEEF
Canning beef in a pressure canner is an easy way to preserve meat without taking up freezer space, and it's perfect for emergency preparedness or busy weeknight meals.

- Prepare a pressure canner according to the manufacturers instructions. For most models, this means adding 2-3 inches of water in to the bottom, along with the bottom trivet and then bring it up to a gentle simmer (180 degrees F).
- Brown all meat, whether it's ground beef, beef cubes or beef strips. Remove the meat from the pan with a slotted spoon, straining out as much fat as possible.
- While the meat is browning, bring canning liquid to a boil and keep it hot. Water, broth and tomato juice are all options, but I generally choose homemade beef broth.
- Pack browned meat into prepared canning jars, either pints or quarts, leaving 1 inch headspace.
- Pour boiling canning liquid over the meat in the jars, still maintaining 1 inch headspace.
- Wipe rims and seal with 2 part canning lids to finger tight.
- Load the jars into your pre-heated pressure canner, seal the lid and allow steam to vent for 10 minutes.
- After steam has vented for 10 minutes, add the canning weight (for weighted guage) to allow the canner to begin coming up to pressure.
- Once the canner is at target pressure (see notes, as the target pressure varies based on your elevation), process the jars for 75 minutes for pints and 90 minutes for quarts.
- After the jars have processed, turn off the heat and allow the canner to cool completely. Once cool, unseal the canner and remove the jars.
- Check seals, remove rings and wash jars. Store any unsealed jars in the refrigerator for immediate use. Sealed jars should maintain quality on the pantry shelf for 12-18 months if properly pressure canned.

- Tacos any day of the week! Have lettuce, tomatoes, cheese, and toppings prepped the night before; heat the ground beef and have tacos in 5 minutes!
- Make chili: use pressure-canned beans, add dehydrated onion, spices, and your other secret ingredients in the time it takes to warm it up (5-10 minutes).
- Nachos—arrange chips on a baking dish. Add refried beans if desired, ground beef, salsa, and cheese. Bake for 10 minutes or until the cheese is bubbling.
- Shepherd’s pie. Saute onions, mushrooms, and add your favorite vegetables. Warm up the beef in the concoction and add tomato sauce. Once mixed, put into a dish and top with mashed potatoes and bake for 20-30 minutes—but to make this faster, you will need to use last night’s leftover mashed potatoes, warm everything sufficiently in the skillet, and broil for 10 minutes so that potatoes brown and get crisp (without fully baking).
- Beefy Enchiladas. They will require tortillas, enchilada sauce, chili peppers, cheeses, and your other favorite ingredients on-the-ready. But once you’re ready for the assembly line, you can make them in about 20 minutes in a 400 degree oven.
- Baked Potatoes with all the fixin’s. I spend about 45 minutes baking potatoes to get them nice and crispy on the outside, but I always do extra for another meal!
- Mexican Salad—have the salad made ahead, even! Add beef and salsa to your salad, with a few corn chips on the side.
- Korean Beef & Rice—simple and delicious, go ahead and make your favorite rice your favorite way. While that is cooking, sauté onion and garlic in a skillet and add the meat.
