2 (20 ounce) packages potatoes (the green packages in the dairy section, southwest variety, hashbrown)
2 (10 1/2 ounce) cans cream of chicken soup (with herbs)
2 tablespoons dried minced onions
12 ounces sour cream
1 (8 ounce) package cream cheese
2 cups shredded sharp cheddar cheese
1/2 cup shredded colby jack cheese
kosher salt (to taste)
fresh cracked pepper (to taste)
cayenne pepper (to taste)

Steps:

  • In a very large mixing bowl, combine hashbrowns and remaining ingredients. Taste -- add salt, pepper, cayenne to taste -- but if you aren't a food snob this step is not necessary.
  • Spoon into a greased 9x13 dish, bake at 350 for 40-50 minutes or until top is browned (i sometimes broil the last couple minutes).

1 (10.75 ounce) can condensed cream of chicken soup
2 cups shredded Cheddar cheese
1 (8 ounce) container sour cream
½ cup melted butter
½ cup chopped onion
½ teaspoon salt
½ teaspoon ground black pepper
1 cup crushed cornflakes
½ cup melted butter

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix hash browns, cream of chicken soup, Cheddar cheese, sour cream, butter, onion, salt, and pepper together in a bowl. Arrange in a 9x13-inch baking dish. Sprinkle on top. Drizzle butter over the cornflakes.

1 cup diced yellow onion
2 tablespoons chopped canned green chiles
4 tablespoons unsalted butter
4 tablespoons all purpose-flour
2 cups whole milk
2 cups chicken broth
4 cups shredded sharp Cheddar cheese, divided
1 cup sour cream
1 teaspoon ground black pepper
1 (30-ounce)package frozen hash browns, thawed (about 20 cups)

Steps:

  • 1. Preheat oven to 350 degrees. Spray a 3-quart baking dish with nonstick spray. Set aside. 2. In a large non-stick skillet, cook sausage over medium-high heat until browned, approximately 5 minutes. Remove from pan with a slotted spoon, and set aside. Reserve rendered fat in pan. 3. Add bell pepper, onion, and Chiles to pan. Cook, stirring occasionally, until tender, approximately 5 minutes. Remove from pan, set aside. 4. Melt butter in pan. Add flour; cook 1 minute, stirring constantly. Slowly add milk and broth, stirring constantly. Bring mixture to a boil; reduce heat to medium-low. Simmer, stirring occasionally, until thickened, approximately 10 minutes. Add 3 cups of cheese, stirring until melted. Stir in sour cream, salt, and pepper. Remove from heat. 5. 1 (2 lb) bag O'Brien potatoes
1/2 lb bacon, cooked and crumbled
1/2 lb breakfast sausage, cooked and crumbled
3 green onions, finely chopped
3 garlic cloves, minced
1/4 cup onion, diced
10 ounces cream of mushroom soup or 10 ounces cream of chicken soup, undiluted
16 ounces sour cream
1 lb cheddar cheese, divided
1 teaspoon black pepper

Steps:

  • This is very important: Microwave the whole bag of potatoes for 5-10 minutes before starting casserole. You want them completely defrosted and even slightly cooked.
  • Mix all ingredients, RESERVING 2 CUPS CHEESE, in large mixing bowl.
  • Pour mixture in a greased 9x13 casserole baking dish.
  • Bake covered at 375 degrees for 1 hour.
