SIMPLEST GRILLED PEACHES
Grilled peaches may be summer's greatest joy. Cook them over a medium to low gas grill or a dying charcoal fire, and serve them with ice cream, whipped cream or nothing at all.

- Heat a gas grill to medium. If you are cooking on a charcoal grill, wait until the fire has died down to medium to low heat.
- Cut the peaches along their seams, all the way around, and twist their halves off their pits. Brush the cut sides of the peaches with olive oil and grill, cut side down, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
- Brush the tops with oil, turn over and move to the side of the grill to continue cooking over indirect heat, another 4 to 5 minutes. You can add flavor by brushing them with maple syrup and bourbon, or molasses and butter. But if they are perfect peaches, they shouldn't need anything at all.

- In a saucepan over medium heat, stir together the white sugar, balsamic vinegar, and pepper. Simmer until liquid has reduced by one half. It should become slightly thicker. Remove from heat, and set aside.
- Preheat grill for medium-high heat.
- Lightly oil the grill grate. Place peaches on the prepared grill, cut side down. Cook for about 5 minutes, or until the flesh is caramelized. Turn peaches over. Brush the top sides with the balsamic glaze, and cook for another 2 to 3 minutes.
- Transfer the peach halves to individual serving dishes, and drizzle with remaining glaze. Sprinkle with crumbled blue cheese.

HOW TO GRILL PEACHES
Steps:
- Gather the ingredients.
- Prepare a gas or charcoal grill to medium heat: You should be able to hold your hand about an inch above the cooking grate for 3 to 4 seconds before pulling it away from the heat. If you are also using the grill to cook something else that requires more heat, place the peaches around the edges; they're cooler. Or cook dinner, let the fire cool down, and then grill the peaches.
- Cut the peaches in half and pit them.
- Lightly brush the peaches with the oil, being particularly aware of coating the cut sides well.
- Set the oiled peaches cut side down on the medium hot grill. Make sure they aren't touching so the hot air of the grill can circulate around each piece.
- Cook the peaches until grill marks form, turning as necessary. Then, flip the peach halves over, sprinkle with the cinnamon and sugar, if using. Cook until the peaches are tender, but not falling apart, about 8 minutes total (4 minutes per side).
- Serve grilled peaches hot, warm, or even at room temperature. Serve with dollops of crème fraîche if desired. Enjoy!

GRILLED PEACHES

- Right before cooking, slice the peaches along the seam and pit them. Coat them in oil for cooking, being sure to give them a thick, even coating. I prefer to toss them in a gallon size Ziplock bag along with the oil and gently rub the oil into the peach. This reduces mess, which is critical when you might be in the backyard, far from access to a sink. Don't use extra virgin olive oil, as the smoke point is lower and may cause the peaches to taste burnt and smoky. Grill the peaches skin side up for 5-6 minutes. When they begin to sizzle and shine, turn them over onto their skin and cook for another 6-7 minutes, or until they soften and lose a little bit of their shape. Serve immediately, with or without a garnish of whipped cream or ice cream. If you don't have room to eat all the peaches you've grilled, they can be reheated in the microwave for about 30 seconds, and they still taste great the second time around.

- Preheat the gas grill to medium-high heat on half the grill and low heat on the other half of the grill.
- Brush the cut sides of the peaches with oil.
- Place peaches on grill, cut side down over direct heat, until the fruit has developed grill marks and started to soften, about 4 to 5 minutes.
- Brush the tops of the peaches with oil, turn over and move to the indirect heat side of the grill to continue cooking, another 4 to 5 minutes.
- Heat charcoal in a chimney. Once charcoal is heated, pour the heated coals on one side of the grill.
- Brush the cut sides of the peaches with oil.
- Place peaches on grill, cut side down over direct heat, until the fruit has developed grill marks and started to soften, about 5 to 6 minutes.
- Brush the tops of the peaches with oil, turn over and move to the indirect heat side of the grill to continue cooking, another 5 to 6 minutes.
- Over two burners on a gas or electric stove, place a large cast-iron grill pan over the burners. Turn one burner to medium-high heat, and the other burner to low heat.
- Brush the cut sides of the peaches with oil.
- Place peaches on grill pan, cut side down over direct heat (over the burner turned to medium-high), until the fruit has developed grill marks and started to soften, about 4 to 5 minutes (this may take more like 5-6 minutes if using an electric stove.)
- Brush the tops of the peaches with oil, turn over and move to the indirect heat side of the grill pan (over the burner turned to low) to continue cooking , another 4 to 5 minutes. (this may take more like 5-6 minutes if using an electric stove.)

- Slice the peaches in half all the way around the stones. Remove the stones and discard.
- Heat the Foreman Grill to high.
