EASY BATTER FRUIT COBBLER
Short of serving store-bought ice cream, you won't find a simpler, more delicious dessert than this fruit cobbler. Use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries. And if you use frozen berries, this dessert can be assembled in less than 10 minutes.

Steps:
- Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
- Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
- Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
- Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

- Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
- Blend together flour, baking powder, sugar, and milk.
- Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

QUICK & EASY FRUIT COBBLER
Easy weeknight desert can be cooked while eating dinner. You can double the fruit, but it may take more time to cook. Also good to add cinnamon &/or nutmeg to the batter, depending on your taste.

CHERRY COBBLER (FROZEN CHERRIES)
This recipe uses frozen cherries, so it's great to make all year round! This is a sweet cobbler you can reduce the sugar slightly for a less sweeter taste. Although I have never tried it, I imagine that you could also make this using frozen or fresh blueberries.

Steps:
- Set oven to 400 degrees (oven rack to second-lowest position).
- Butter a 9-inch glass baking dish.
- To make filling: cook all the filling ingredients in a 2-quart heavy saucepan over medium heat, stirring occasionally until the sugar begins to dissolve (about 3-4 minutes).
- Spoon the filling into prepared baking dish.
- To make the topping: in a medium bowl, whisk together flour, sugar, baking soda, baking powder and salt.
- Blend in the cold butter using your fingertips or a pastry blender until mixture resembles coarse meal.
- Stir in buttermilk with a fork JUST until combined (do not overmix!).
- Drop the dough in mounds over the filling, leaving space between the mounds.
- Lightly sprinkle sugar over the dough.
- Bake for about 25-30 minutes, or until the topping id golden brown and the fruit is bubbling.
- Cool slightly and serve warm.
PEACH COBBLER WITH FROZEN PEACHES
Start defrosting the peaches about 2 hours before assembling and baking the cobbler. Timing does not include defrosting and marinating of the fruit

- Preheat oven to 425 degrees.
- For the filling: Defrost peaches completely in colander. Gently toss peaches and sugar together in large bowl; let stand for 30 minutes, tossing several times. Drain peaches in colander set over large bowl. Whisk 2 tablespoons of drained juice (discard extra), cornstarch, lemon juice, and salt together in small bowl. Toss peach juice mixture with peach slices and transfer to 8-inch-square glass baking dish. Bake until peaches begin to bubble around edges, about 15 to 20 minutes.
- For the topping: While peaches are baking, in food processor, pulse flour, 3 tablespoons sugar, baking powder, baking soda, and salt to combine. Scatter butter over and pulse until mixture resembles coarse meal, about ten 1-second pulses. Transfer to medium bowl; add yogurt and toss with rubber spatula until cohesive dough is formed. (Don't overmix dough or biscuits will be tough.) Break dough into 6 evenly sized but roughly shaped mounds and set aside.
- To assemble and bake: When peaches bubble around edges, remove baking dish from oven and place dough mounds on top, spacing them at least 1/2 inch apart (they should not touch). Sprinkle each mound with portion of remaining 1 teaspoon sugar. Bake until topping is golden brown, about 18 minutes. Cool cobbler on wire rack until warm, about 20 minutes; serve.
