2 Tablespoons Country French with Orange Blossom Honey Dressing
7 oz thinly sliced roast beef lunch meat

Steps:

  • Preheat the oven to 400 F.
  • Lay a sheet of aluminum foil flat on the counter.
  • Place the thin sliced roast beef in the center of the foil and fold up all four sides to completely enclose the beef.
  • Bake in the preheated oven for 10 to 15 minutes.
  • When the beef is almost done, heat the cheddar cheese sauce in a microwave safe bowl for 30 seconds or until heated through.

  • Add 2 inches of want to a saucepan and heat until almost boiling. Heat separate skillet on a different burner over medium-high heat.
  • Lightly toast inside of hamburger bun in the skillet until it is just starting to brown, then remove bun from skillet.
  • Separating each slice of roast beef, so they are not sticking together, briefly dunk meat in hot water until cooked through and warmed. Approximately 10 seconds.

A hot roast demands plenty of marbling so that the rich fat can melt and baste the meat with its goodness. Roast beef sandwiches work better made from a leaner cut, preferably one with a mineral, earthy taste and a nice chew. A top loin roast is ideal. It's got plenty of brawny flavor, and all of the fat is on the surface, which you can easily trim off after the meat is cooked. Here, the beef is roasted low and slow to ensure rare, juicy meat. This said, if you want a more economical cut, use bottom, top or eye round here instead. Just adjust the roasting time if the cut is larger or smaller. 2 small garlic cloves, grated
2 1/2 teaspoons kosher salt
2 teaspoons black pepper
2 teaspoons rosemary leaves
2 1/2 pounds boneless beef top loin roast (leave the fat on top)
Extra-virgin olive oil, as needed

  • In a small bowl, stir together the garlic, salt, pepper and rosemary. Spread the paste all over the meat. Cover loosely with plastic wrap and refrigerate at least 3 hours or overnight.

1 tablespoon butter
1 tablespoon all purpose flour
3/4 cup milk
6 ounces sharp cheddar cheese (grated)

1 pound thinly sliced deli roast beef
1 cup beef broth
4 onion rolls (or other sandwich rolls)

Steps:

  • To make the Arby's sauce, whisk all of the sauce ingredients together in a small bowl and set aside. If the sauce seems too thick, add a tablespoon or two of water to thin it out.
  • To make the cheese sauce, heat a small saucepan over medium heat. melt the butter and the flour and cook for 1 minute. Then slowly pour in the milk while whisking. Melt the cheddar in the sauce, and season with salt. It should become smooth. Remove from heat, and set aside.
  • In a large, deep skillet, heat the beef broth until it simmers, then separate the slices of roast beef and add them to the broth. Warm the meat for 2 minutes, then remove from the heat.
  • Spread the homemade Arby's sauce on the bottom of the onion buns. Divide the roast beef evenly over each. Add cheese sauce and close the sandwich with the top bun. Serve immediately, preferably with curly fries.
