- Preheat the oven to 425˚F (220˚C).
- Add the egg whites and vanilla extract to a medium bowl and use a whisk or hand mixer to beat until frothy, about 1 minute.
- Sift in the flour, sugar, and salt through a fine-mesh sieve.
- Using a spatula, gently incorporate into the batter until paste-like.
- Add the water, 1 tablespoon at a time, until the batter is smooth and falls into ribbons when the spatula is picked up.
- Place 1 tablespoon of batter onto a silpat-lined baking sheet and spread into a 3-inch (7-cm) circle.
- Repeat with another tablespoon of batter, making sure to only leave two circles on the silpat.
- Bake for 8 minutes, until the edges become golden brown.
- Working quickly, use a spatula to remove the cookies from the pan. Add a fortune in the middle, fold the cookies in half, then place the flat side on the lip of a cup, folding the edges down into a fortune cookie shape. Place the folded fortune cookies in a mini muffin tin until cooled to retain their shape.
- Repeat with remaining batter.

- Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets, or line with parchment paper. Have fortunes ready to go on small strips of paper.
- In a large glass or metal bowl, whip egg whites and sugar on high speed of an electric mixer until frothy, about 2 minutes. Reduce speed to low, and stir in melted butter, vanilla, almond extract, water and flour one at a time, mixing well after each. Consistency should resemble pancake batter. Spoon the batter into 3 inch circles on the prepared baking sheets. Leave room between for spreading.
- Bake for 5 to 7 minutes in the preheated oven, or until the edges begin to brown slightly. Quickly remove one at a time, place a message in the center, and fold in half. Fold the ends of the half together into a horse shoe shape. If they spring open, place them in a muffin tin to cool until set.

- Preheat oven to 400°. Write fortunes on small strips of paper (3-1/2x1/4-in.); set aside. Line a baking sheet with parchment. Using a pencil, draw two 3-1/2-in. circles on a sheet of parchment. - Preheat the oven to 180C/160 fan/gas 4 and line a large baking sheet with baking parchment, or use a silicone baking sheet. Write or print fortunes on paper measuring 6cm long by 1cm wide.
- Put the egg whites, vanilla, almond extract, oil and 2 tsp cold water into a bowl and whisk with an electric hand whisk until frothy, 20-30 secs. Measure the flour, cornflour, sugar and a good pinch of salt into a bowl, then sift into the egg white mixture. Whisk everything together until you have a smooth batter-like consistency. Chill the mixture for 1 hr.
- Next, put a tbsp of mixture onto the prepared baking sheet. Oil a metal spoon, then use the back of it to swirl the mixture out into a 8-10cm circle. Repeat with another tablespoon of the mixture, to create 2 cookies. Make sure there is space between each cookie as they will spread in the oven. It is best to only bake 2-3 cookies at a time, as you will need to shape them whilst they are hot. Sprinkle 1 of the cookies with black sesame seeds, then bake for 10-12 mins until the edges of the cookies turn golden.
- One at a time remove the cookies with a palette knife once they are out the oven. You want them to still be soft so you can shape them so work quickly. Turn the cookie over so that the sesame seeds are face down and put the fortune in the middle of the circle. Fold the circle in half to secure the fortune and pinch the 2 edges together to seal. Pop the cookie on the rim of a mug or cup and very gently pull the 2 corners down to get the fortune cookie shape. Hold for 10 secs, then transfer the cookies to muffin tins so that they hold their shape whilst cooling completely. Repeat with the remaining cookie mixture.

- Preheat oven to 400 degrees F. Butter a cookie sheet. Write fortunes on strips of paper about 4 inches long and 1/2 inch wide. Generously grease 2 cookie sheets.
- Mix the egg white and vanilla until foamy but not stiff. Sift the flour, salt, and sugar and blend into the egg white mixture.
- Place teaspoonfuls of the batter at least 4 inches apart on one of the prepared cookie sheets. Tilt the sheet to move the batter into round shapes about 3 inches in diameter. Be careful to make batter as round and even as possible. Do not make too many, because the cookie have to be really hot to form them and once they cool it is too late. Start with 2 or 3 to a sheet and see how many you can do.
- Bake for 5 minutes or until cookie has turned a golden color 1/2 inch wide around the outer edge of the circle. The center will remain pale. While one sheet is baking, prepare the other.
- Remove from oven and quickly move cookie with a wide spatula and place upside down on a wooden board. Quickly place the fortune on the cookie, close to the middle and fold the cookie in half. Place the folded edge across the rim of a measuring cup and pull the pointed edges down, one on the inside of the cup and one on the outside. Place folded cookies into the cups of a muffin tin or egg carton to hold their shape until firm.

- Heat oven to 400 degrees. Spray a cookie sheet liberally with cooking spray. Melt butter in a small saucepan over low heat; set aside.
- In the bowl of an electric mixer, combine egg whites and sugar, and beat on medium speed, about 30 seconds. Add flour and salt, and beat until combined. Add butter, heavy cream, and almond extract, and beat until combined, about 30 seconds.
- Pour 1 tablespoon of batter onto half of the baking sheet, and spread with the back of a spoon into a thin 5-inch circle; repeat on the other half of the sheet. Bake until the edges of the cookies turn golden brown, about 8 minutes.
- Transfer baking sheet to a heat-resistant surface. Working as quickly as possible, slide a spatula (an offset spatula, available at specialty kitchen shops, works best) under one of the cookies. Lift it up, and place it on a clean kitchen towel. Using your fingers, fold the cookie in half, pinching the top together to form a loose semicircle. Hold the cookie with your index fingers inserted at each open end, and slide your thumbs together along the bottom line. Press into the center of the cookie while bending the 2 open ends together and down to form the shape of a fortune cookie. This whole process should take about 10 seconds. Once the cookie hardens, which begins to happen almost immediately, you cannot fold it. Place the fortune cookie on the kitchen towel to cool, and shape the second cookie. Repeat until all the batter is used up. To speed up the process, bake 4 cookies at a time, staggering 2 cookie sheets by 4 minutes to give you time to shape. To avoid wasting batter, practice folding with a circle of paper first.

- To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

- Fill a large, heavy bottomed pot with oil only halfway or a third full. You'll want enough oil to submerge the tortillas but don't fill the pot more than halfway full. Heat over medium heat until the oil reached 350 degrees.
- Fold the tortillas in half (check out the pictures in the post for reference) and grab the tortilla in the middle of the arc of the circle side with two fingers. Push the folded side of the tortilla towards the pinched side with your thumb, then bring the ends together to make the shape of a fortune cookie. Secure the ends together with a toothpick.
- Repeat with the rest of the tortillas.
- Once the oil has come to temperature, carefully add 2 or 3 tortillas to the oil. Fry the tortillas, turning over at least once during cooking, until golden brown on both sides about 3-4 minutes.
- Using a metal tongs, lift the tortilla from the oil and drain the oil out from the inside. Be sure to do this well, or you'll have soggy fortune cookies! Place the fried tortillas on a plate lined with paper towels and repeat with the remaining tortillas.
- Once all the tortillas are fried, melt the butter and brush on the tops of the tortillas, then coat generously with the cinnamon and sugar mixture.
- Once the tortillas have cooled, yo can gently remove the toothpicks. Serve immediately or keep on a loosely covered plate until ready to serve, but these homemade fortune cookies are best served freshly made.

Jean-Georges Vongerichten wanted fortune cookies-good ones-for his Chinese restaurant 66. With no staff and only two days to go before the restaurant was to open, I called my colleague Johnny luzzini for help. He showed me how to shape these delicate tuile disks into the iconic Chinese-American treat. That's right-an Italian kid who grew up in New York showed me, a Chinese-Thai kid who grew up in Asia, how to make fortune cookies.

- Sift together the flour, confectioners' sugar, and cocoa powder and set aside.
- Put the butter, corn syrup, and salt into the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed just until well combined, about 3 minutes. Turn the speed to low and add the flour mixture, then the egg whites, mixing until the dough comes together, about 5 minutes. Transfer to a large sheet of plastic wrap, flatten into a 1-inch-thick disk, and wrap tightly in the plastic. Refrigerate for at least 2 hours or up to 3 days.
- When ready to bake, preheat the oven to 350°F. Set out a tuile cookie pan or empty egg carton to use as a cooling rack for the cookies. You will also need a 4-inch round cookie stencil. To make your own, take the plastic lid of a large yogurt or similar container and cut off the rimmed edge. Using a razor blade or similar instrument, cut a 4-inch circle out of the center of the lid, taking care not to cut through the edge of the lid.
- Set the cookie stencil on a nonstick baking mat and use a small offset spatula or a table knife to spread 2 teaspoons of dough evenly inside the stencil, spreading the dough into a very thin, smooth circle, about 1/16 inch thick. Continue making the circles, setting them 1 inch apart, until the mat is full.
- Transfer the mat to a baking sheet and bake until the tops of the cookies are dry, about 5 minutes. Remove the pan from the oven and, working very quickly, shape the cookies: one at a time, set a paper fortune, if desired, in the center of the cookie, fold the cookie in half, and, holding the cookie with the folded edge facing up, bring the 2 pointed ends upward so that they come together above the folded edge. The cookies should still be hot to the touch as you work; if they cool too much before you fold them, they will break. If necessary, you can reheat them in the oven for about 30 seconds to make them pliable again. Set the cookies in the tuile pan or egg carton to cool, so that they will hold their shape, and cool completely. Repeat with the remaining batter. The cookies can be stored in an airtight container for up to 1 week.
