1 cup frozen peas
3 tablespoons unsalted butter
1 tablespoon extra-virgin olive oil
Coarsely ground black pepper
3/4 cup grated parmesan cheese (about 3 ounces), plus more for topping
1/2 cup grated pecorino Romano cheese (about 2 ounces), plus more for topping
1/4 cup chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs, adding the peas during the last 4 minutes of cooking. Reserve 1 3/4 cups cooking water, then drain.
  • Heat the butter and olive oil in a large skillet over medium-high heat. Add 1 cup of the reserved cooking water and 2 teaspoons pepper. Increase the heat to high and boil until the liquid is reduced by half, about 3 minutes.
  • Add the pasta and peas to the skillet and simmer, tossing, until well coated. Remove from the heat and sprinkle with the parmesan, pecorino and parsley; toss until the cheese melts and the sauce is creamy, adding the remaining 3/4 cup cooking water as needed to loosen. Top each serving with more cheese.

1 pound creste di gallo pasta (cockscomb-shaped) or other short pasta
2 tablespoons extra-virgin olive oil
1/3 pound pancetta, diced
1 1/2 teaspoons coarsely ground black pepper
2 cups freshly grated parmigiano-reggiano, plus more (optional) for serving
1 cup freshly grated pecorino cheese
2 tablespoons (1/4 stick) unsalted butter, at room temperature
3 cups packed baby arugula, roughly chopped

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook 2 minutes less than the package directions, about 8 minutes. Drain well, reserving 1 1/2 cups of the pasta cooking water.
  • Meanwhile, heat a large straight-sided skillet over medium heat. Add the olive oil and pancetta. Cook, stirring often with a wooden spoon, until the pancetta is crisp, about 10 minutes. Add the pepper and toast it, stirring often, for about a minute, or until fragrant. Add 1/2 cup of the reserved pasta water and scrape up any bits that are sticking to the bottom of the skillet.
  • Add the pasta and sprinkle with the parmigiano-reggiano. Add another 1/2 cup of the reserved pasta water and stir to coat all of the pasta in the cheese. Add the pecorino and butter and stir to combine, creating a light, creamy cheese sauce. Add the arugula and cook until wilted. Add additional reserved pasta water as needed to maintain the light sauce consistency. Serve with more grated parmigiano-reggiano, if desired.

Peeling fava beans is a fiddly task that includes removing the beans from their pods, blanching them and then peeling off the skins. But for a light dish of pasta, peas, cracked black pepper and cheese, it's well worth the effort. Favas can be found in farmers markets in the spring and summer. This dish is one of their highest uses.

1/2 pound English pea pods, shucked (about 2/3 cup peas)
1 1/4 pounds fava bean pods, shucked (about 1/2 cup peeled favas)
1/2 pound spaghetti
2 tablespoons unsalted butter
1/2 tablespoon very coarsely ground black pepper
1/3 cup shredded pecorino Romano, more for serving
1/2 cup grated Parmesan
Coarse kosher sea salt, to taste
Extra virgin olive oil, for serving
Freshly snipped chives, preferably with blossoms, for garnish

Steps:

  • Bring a medium saucepot of salted water to a boil. Fill a medium bowl with water and ice and set a fine mesh strainer in the bowl. (Be sure to keep ice out of strainer.) Blanch peas for 30 seconds and use a slotted spoon to transfer peas to strainer in ice bath. Let sit for 5 minutes and pull up strainer to drain peas. Repeat process with fava beans, cooking for 1 minute. (You can use same pot of boiling water that you used for peas.) When fava beans have been blanched and cooled, slip off peels.
  • Bring a large pot of heavily salted water to a boil. Add pasta and cook until 1 minute shy of al dente. Drain, reserving 1/2 cup cooking water.
  • In a large skillet, melt 1 tablespoon butter. Add pepper and sauté for 1 minute, or until fragrant. Add 1/4 cup of the cooking water and the remaining butter to pan. Stir until butter is melted and sauce begins to thicken, about 30 seconds.
  • Add cooked pasta, pecorino and Parmesan and toss until cheese melts, about 30 seconds. Add peas and fava beans. Toss very well to coat, adding more pasta water if pan seems dry. Season with salt to taste. To serve, sprinkle each portion with more pecorino and drizzle with olive oil. Garnish with chives.

Drizzle on a quick dressing of lemon juice, grated garlic cloves, and extra-virgin olive oil for a comfort-food update that puts even more spring in your step. Kosher salt and freshly ground black pepper
1 cup shelled fresh (or frozen) English peas
2 Persian cucumbers, or 1 English cucumber
1 pound asparagus
1/4 cup extra-virgin olive oil, plus more for drizzling
Juice of 1/2 lemon
1 clove garlic
1 handful arugula
Parmesan and pecorino cheeses, for serving

Steps:

  • Boil water in a small pot and salt it heavily. Prepare an ice bath with a fine-mesh sieve set over it to contain your peas. Add peas to boiling water and boil until crisp-tender and bright green. Strain and transfer to ice bath. Trim ends off cucumbers and shave into long ribbons using a Y-peeler. Add to ice bath to crisp up.
  • Preheat broiler, with a rack about 4 inches from heating element. Using Y-peeler, peel asparagus from root end to tip. When you get down to where you can't peel anymore, trim off ends and discard, and transfer peelings to a rimmed baking sheet. Drizzle asparagus with a bit of oil and season with salt and lots of black pepper. Toss well to coat. Broil until just charred, about 4 minutes.
  • In a large bowl, combine lemon juice and oil. Grate garlic into mixture. Drain and pat dry cucumbers and add to bowl, along with arugula, broiled asparagus, and peas. Transfer to serving plates or a platter. Grate a fluffy cloud of both cheeses over the top and stir everything together before taking your first bite.

1 cup grated Pecorino Romano cheese
½ cup freshly grated Parmigiano-Reggiano cheese
1 tablespoon extra virgin olive oil, or as needed
3 teaspoons toasted black pepper, or more to taste
½ cup shredded Parmigiano-Reggiano cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook bucatini pasta in the boiling water, stirring occasionally, until almost tender yet still firm to the bite, 8 to 9 minutes; they will not be fully cooked. Drain, reserving about 2 cups of pasta cooking water. Set pasta aside.
  • Combine Pecorino Romano cheese and 1/2 cup grated Parmigiano-Reggiano cheese in a bowl. Add 2 tablespoons of pasta water and stir into a thick paste.
  • Heat olive oil in a skillet or saucepan over medium-low heat; swirl to coat the bottom. Add cheese paste and a ladle of pasta water; whisk vigorously to combine. Keep whisking quickly and vigorously to make sure the cheese does not clump, about 30 seconds. Add cooked pasta and black pepper. Keep tossing skillet contents continuously until cheese has coated the pasta evenly and bucatini are cooked al dente, about 2 minutes. Add more water or cheese if the pasta sauce appears too thin or thick.
  • Serve immediately topped with shredded Parmigiano-Reggiano cheese and more black pepper.

This was one of those, 'What can I do with what I have in the cupboard?' recipes, partially inspired by trying Cacio e Pepe ('Cheese and Pepper') earlier this year. It turned out great and I think you'll think so too! Serve with your favorite Italian main dish and enjoy!

1 (15 ounce) can sweet peas, partially drained
1 (15 ounce) can cannellini beans, undrained
2 tablespoons butter
¾ cup grated Parmesan cheese

200g bucatini or spaghetti
25g butter
2 tsp whole black peppercorns, ground, or 1 tsp freshly ground black pepper
50g pecorino or parmesan, finely grated

Steps:

  • Cook the pasta for 2 mins less than pack instructions state, in salted boiling water. Meanwhile, melt the butter in a medium frying pan over a low heat, then add the ground black pepper and toast for a few minutes.
  • Drain the pasta, keeping 200ml of the pasta water. Tip the pasta and 100ml of the pasta water into the pan with the butter and pepper. Toss briefly, then scatter over the parmesan evenly, but don't stir - wait for the cheese to melt for 30 seconds, then once melted, toss everything well, and stir together. This prevents the cheese from clumping or going stringy and makes a smooth, shiny sauce. Add a splash more pasta water if you need to, to loosen the sauce and coat the pasta. Serve immediately with a good grating of black pepper.
