  • Heat up a non-stick skillet on medium-low heat.
  • Spread the coconut out in the pan.
  • Stir the coconut and allow it to toast for 3-6 minutes.
  • Remove the coconut flakes from the pan the moment that they start to turn golden brown.

1 cup sweetened shredded coconut
1 cup sugar
1/2 cup butter, melted
1 egg, beaten
1 teaspoon vanilla extract
11 to 12 slices white bread

Steps:

  • In a bowl, combine the coconut, sugar, butter, egg and vanilla; mix well. Spread over each slice of bread; place on ungreased baking sheets. Bake at 350° for 15-20 minutes or until lightly browned.
