BREAKFAST HUEVOS RANCHEROS
Huevos rancheros are my go-to Saturday morning breakfast treat!

Steps:
- Heat 1/2 of the oil in a pan over medium heat. Add onion and bell pepper; cook and stir until softened, about 5 minutes. Add tomato, garlic, cayenne pepper, salt, and pepper. Cook for 2 minutes more. Set salsa aside.
- Heat about 1 teaspoon oil in a pan. Add tortillas one at a time; cook until heated through, about 20 seconds each. Keep warm.
- Heat remaining oil in the same pan over medium-high heat. Pour in eggs. Cook until set to your desired consistency, 4 to 6 minutes.
- Spread a thin layer of refried beans onto each tortilla. Add a spoonful of salsa. Sprinkle with shredded cheese. Add a fried egg and sprinkle some more cheese, chopped jalapeno, and cilantro on top. Serve immediately with avocado and remaining refried beans and cheese on the side.

- Combine all salsa ingredients.
- Assemble sandwich by spreading half the guacamole on one slice of bread. Top with two slices bacon, two eggs, half the cheese and half the salsa. Top with another slice of bread. Repeat for second sandwich. Serve immediately.

HUEVOS RANCHEROS RECIPE
Fried eggs served on tortillas, topped with salsa, cheese, with avocado and re-fried beans on the side. That's what I call perfection!

- The salsa. Heat oven broiler. On a baking sheet, place the tomatoes, garlic, onion, and chile. Broil for about 15 minutes, turning halfway through, until the juices begin to run from tomatoes and the skin slightly blackens. Remove the skin from the garlic and discard.
- Place the tomatoes together with all the juices, garlic, onion, 1/2 of the chile and salt in a blender or food processor and puree until smooth. Taste and add more chile if you want more heat.
- The eggs. Heat 3 tablespoons vegetable oil in a skillet until hot. When you dip the edge of a tortilla into it, the oil should bubble. Using tongs, dip the tortillas in the oil (one at a time) for 10-15 seconds per side. Drain on paper towels.
- Crack the eggs into the same pan, using the same oil, and cook to your preferred doneness. Salt to taste.
- Serving Huevos Rancheros. Place a tortilla on a plate and top it with the egg. Now top the egg with your red spicy salsa and sprinkle some cheese over it. Serve with the refried beans and avocado slices on the side. Enjoy!

- While the english muffins are toasting, peel and pit the California Avocado and use a fork to mash it. Add salt to taste. Heat up refried beans till warm and spreadable in microwave. Spread half of the bean mixture on the bottom of each english muffin, then spread half of the avocado on the top of each english muffin.
- Heat a small non-stick skillet over medium-high heat. Spray with olive oil. Crack eggs into pan, one at a time, making sure the egg whites don't touch. Sprinkle with salt and pepper according to taste preferences. Let cook for 1-2 minutes, longer if desired, then carefully use a spatula to flip the eggs over. Season again with salt and pepper. Let cook for an additional 1-2 minutes, or longer if desired. Place the cooked egg on top of the english muffin that is covered in beans. Repeat with the other egg.
- Add your desired amount of salsa on top of the egg, then place the avocado smeared half of the english muffin on top. Enjoy!
