1 can (8 oz.) tomato sauce
2 Tbsp. canned chopped green chiles
1/4 tsp. garlic powder
1/4 tsp. chili powder
1/4 tsp. dried oregano leaves
4 eggs
1/2 cup KRAFT Shredded Cheddar Cheese

Steps:

  • Cook potatoes as directed on package.
  • Meanwhile, bring tomato sauce, chiles and seasonings to boil in saucepan on medium heat; simmer on medium-low heat 5 min., stirring occasionally. While sauce is simmering, fry or poach 4 eggs.
  • Spoon potatoes onto 4 serving plates; top with tomato sauce mixture and eggs. Sprinkle with cheese.

1 medium onion, chopped (1 cup)
1 tablespoon chili powder
3/4 teaspoon salt
6 cups frozen shredded hash brown potatoes (from 30-oz bag)
4 eggs
1 cup Old El Paso™ Thick 'n Chunky salsa (from 16-oz jar)
1 cup shredded Cheddar cheese (4 oz)
Sour cream, sliced avocado, chopped red onion, cilantro leaves, additional Old El Paso™ Thick 'n Chunky salsa, if desired

Steps:

  • In 12-inch nonstick skillet, heat 1 tablespoon of the oil over medium heat. Add onion; cook 3 to 5 minutes, stirring frequently, until softened. Add chili powder and 1/2 teaspoon of the salt; cook and stir 1 minute.
  • Add frozen hash brown potatoes and remaining 2 tablespoons oil to skillet; stir to combine. Spread hash brown mixture evenly in skillet. Cook 8 to 10 minutes or until bottom starts to brown. Using spatula, working in sections, turn hash browns over so browned side is on top. Use large spoon or spatula to make four indentations in hash brown mixture; crack 1 egg into each hole. Sprinkle eggs with remaining 1/4 teaspoon salt.
  • Spoon 1 cup salsa around eggs; sprinkle cheese over salsa. Reduce heat to medium-low; cover and cook 10 to 12 minutes or until egg whites and yolks are firm, not runny and cheese is melted.
  • Serve with remaining ingredients.

4 (6 inch) corn tortillas
1 cup refried beans with green chilies
1 teaspoon butter
4 eggs
1 cup shredded Cheddar cheese
8 slices bacon, cooked and crumbled

Steps:

  • Heat oil in a small skillet over medium-high heat. Fry tortillas one at a time until firm, but not crisp. Remove to paper towels to drain grease.
  • Meanwhile, combine the refried beans and butter in a microwave-safe dish. Cover, and cook in the microwave until heated through. When tortillas are done, fry eggs over easy in the skillet. Add more oil if the tortillas have absorbed it all.

15 small corn tortillas, each cut into 6 wedges
3 tablespoons vegetable oil
1 1/2 teaspoons ground cumin
1/2 teaspoon chili powder
Kosher salt and freshly ground pepper
1 dried ancho chile pepper, stemmed
1 14.5-ounce can tomato sauce
1 scallion, roughly chopped
1 jalapeño pepper, thinly sliced
1/2 cup packed fresh cilantro, plus more for topping
1 16-ounce can chili beans in sauce
12 large eggs
1 ripe avocado, chopped
1/2 cup crumbled Cotija cheese
Lime wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil. Add the tortilla wedges, drizzle with the vegetable oil and sprinkle with 1/2 teaspoon cumin, the chili powder, 1/2 teaspoon salt and a few grinds of pepper; toss until well coated. Spread on the baking sheet in a single layer and bake, stirring occasionally, until crisp, 20 to 30 minutes.
  • Meanwhile, combine the ancho chile and 1/4 cup hot water in a blender. Let stand until the chile is softened, about 5 minutes. Add the tomato sauce, scallion, half the jalapeño slices, the cilantro, remaining 1 teaspoon cumin, ½ teaspoon salt and a few grinds of pepper; puree until smooth. Lightly mash the chili beans in their sauce in a medium bowl until chunky.
  • Remove the tortillas from the oven. Drizzle with about 1/2 cup of the ancho sauce and top evenly with the mashed beans. Crack the eggs on top, spacing them out; season with salt and pepper. Gently run a rubber spatula through any thick egg whites to break them up and help the eggs cook more evenly. Bake until the egg whites are opaque, 15 to 20 minutes.
  • Drizzle with 1 cup more ancho sauce. Top with the avocado, cheese, remaining jalapeño slices and more cilantro; serve with lime wedges and the remaining ancho sauce.

Steps:

  • In large bowl, beat eggs with whisk. Add half-and-half, salt and pepper; beat well. In 12-inch nonstick skillet, melt butter over medium heat.   • Place poblano pepper in a 12-in. cast-iron or other ovenproof skillet. Broil 4 in. from heat until skin blisters, rotating with tongs until all sides are blistered and blackened, about 5 minutes. Immediately place pepper in a small bowl; let stand, covered, 20 minutes., Peel off and discard charred skin. Remove stems and seeds. Finely chop pepper; set aside., In the same skillet, cook chorizo over medium heat until cooked through, 6-8 minutes, breaking into crumbles; drain. 10 ripe plum tomatoes, roasted (see Note), peeled, cored, and chopped
4 serrano chiles, stemmed, seeded if desired, and coarsely chopped
1 small onion, coarsely chopped
2 large cloves garlic, coarsely chopped
1 tablespoons canola or vegetable oil
3/4 teaspoon salt
6 large, thick corn tortillas, preferably stale
1/4 cup canola or vegetable oil, or as needed
12 large eggs, preferably free-range
Salt and freshly ground black pepper
1 1/2 cups warm refried pinto beans
1 cup Crema, recipe follows, or sour cream
1 avocado, peeled, seeded, and cut into 1/2-inch cubes
1/2 cup crumbled Anejo or Panela cheese
1/2 small bunch flat-leaf parsley, leaves only, coarsely chopped
1/2 small bunch cilantro, leaves only, coarsely chopped

Steps:

  • To make the sauce: In a mortar and pestle or food processor, combine the tomatoes, chiles, onion, and garlic and pound or process until blended but still with a little texture. In a large skillet, heat the oil over medium-high heat until it is very hot. Add the sauce all at once and cook, stirring constantly, for 5 minutes until thickened and orange-colored. Stir in the salt and remove from the heat (Makes 2 cups).
  • For the Huevos : If the sauce has cooled, re-warm it gently. If the tortillas are fresh, spread them in a single layer and let them dry out for 5 minutes. In a large cast-iron skillet, heat the oil over medium-high heat. Fry the tortillas, one at a time, for 2 or 3 seconds per side, just to soften them. Drain them on paper towels. Reduce the heat under the skillet to medium-low and wait a few minutes for it to cool down. Break 6 of the eggs into the skillet and let them cook slowly until set (cover the skillet if you like the yolk firm). Season the eggs with salt and pepper to taste and transfer them to a roasting pan to keep warm in the oven. Add a little more oil to the pan, if necessary, and fry the remaining 6 eggs in the same way.
  • Dip each tortilla quickly in the warm sauce and place it on a warmed breakfast plate. Spread some of the refried beans evenly on the tortilla and top with 2 fried eggs. Spoon more of the sauce generously over the edges of each tortilla and the whites of the eggs. Garnish with the crema and the avocado, then sprinkle with the crumbled cheese, parsley, and cilantro and serve immediately.

1 (15 ounce) can mild enchilada sauce
1 (20 ounce) bag Simply Potatoes Southwest Style Hash Browns
2 tablespoons vegetable oil
6 large eggs
1 1/2 cups pico de gallo

Steps:

  • Preheat oven to 400 degrees.
  • Pour enchilada sauce into a blender. Remove 1/2 cup of the hash browns from bag and place in blender. Blend until very smooth, to thicken up the enchilada sauce. (The sauce will get warm from the heat of the blender.).
  • Heat a waffle iron to medium high heat. Brush both top and bottom of waffle iron with a little oil. Scoop a scant 1/2 cup of hash browns, and place in waffle iron. Repeat 5 times, making sure the potatoes are in separate areas. (You may need to cook in batches, depending on the size of your waffle iron.) Close the waffle iron and cook until the hash brown discs are browned and cooked through. Repeat until you have 6 hash brown discs.
  • While potatoes are cooking, break the eggs into six muffin tins that have been filled halfway with hot water. (The water is not an ingredient, just a way of cooking the eggs.) Bake for 6 minutes for eggs that have a runny yolk, longer if you desire more cooked yolks.
  • To assemble, place a hot hash brown disc on a serving plate. Top with a generous spoonful of enchilada sauce. Top with a poached egg. Sprinkle with 1.4 cup of pico-de-gallo fresh salsa.

5 corn tortillas, cut 4 of them in half
14 oz black beans, 1 can
1 cup mexican blend cheese
1 ½ cups pico de gallo
6 eggs
½ cup red enchilada sauce
fresh cilantro, to taste
cotija cheese, to taste
1 cup cream mexicana, or sour cream

Steps:

  • Preheat your oven to 375˚F (190˚C)
  • In vegetable oil, lightly fry your corn tortillas. Drain on a paper towel.
  • In a 9 inch (25cm) cast iron skillet, arrange your lightly fried tortillas so they cover the bottom of the skillet.
  • Add black beans evenly over tortillas. (Some will fall in-between the tortillas, thats ok!)
  • Sprinkle Mexican blend cheese over the black beans.
  • Add pico de gallo on top of the cheese.
  • Using the back of a large spoon, create 6 wells in the pico de gallo for the eggs to rest in.
  • Crack one egg into each well (6 wells for 6 eggs).
  • Pour enchilada sauce over everything!
  • Bake for 20-25 minutes. Check on it often to make sure your yolks don't overcook!
  • Top with your favorite huevos rancheros toppings.

  • If you are using the bacon, sauté it in a large sauté pan until it is brown. With a slotted spoon remove the cooked bacon from the skillet and drain the bacon. Pour off the bacon fat and leave 2 tablespoons of fat in the skillet. If you are not using the bacon, put 2 tablespoons of oil in the pan over medium high heat. Add the onion to the pan (with the bacon fat or oil) and sauté the onion until it is translucent, about 6-7 minutes.
  • Add the garlic, the chopped cilantro stems and the basil to the skillet. Stir in the chopped Poblano pepper and all or part of the Jalapeno, depending on how spicy you like it. Saute for 3-4 minutes and then add the tomatoes and potato and stir until the potatoes are completely mixed with the tomatoes. Bring to a simmer and then immediately lower the heat to low and cover the skillet.
  • Cook the mixture for 45 minutes, stirring frequently so the sauce does not burn and the potatoes do not stick to the bottom. When the sauce is done you can refrigerate it for a day or two before finishing the dish.
  • While the sauce is cooking, preheat oven to 375 degrees. On a foil lined cookie sheet bake the tortillas for 15 minutes and then turn them over. Bake for another 10 minutes until well browned and crispy. Set aside until ready to serve the Huevos Rancheros. Ten minutes before you are ready to serve, put the tortillas back in the oven and turn the oven off.
