4 eggs
1 medium sized tomatoes, washed and diced
1/4 onion, finely chopped
1 -2 serrano pepper, chopped
1 tablespoon butter
1 tablespoon oil
salt

Steps:

  • Melt the butter with the oil in a deep skillet, add the onion and the peppers and sauté until the onion is translucent.
  • Add the tomato and the eggs, stirring constantly to prevent sticking until the eggs are done.
  • Season to taste with salt.

1 small tomato, diced
½ small onion, chopped
½ green bell pepper, chopped
1 jalapeno pepper, seeded and diced
2 tablespoons butter
2 (6 inch) corn tortillas, cut into strips
½ cup shredded Cheddar cheese

Steps:

  • In a large bowl, lightly beat eggs. Stir in chopped tomato, onion, green pepper and jalapeno.
  • In a large skillet, melt butter over medium heat. Toss in the tortilla strips and cook briefly until soft. Add the egg and vegetable mixture and stir to combine. Cook, stirring occasionally, until eggs are set. Sprinkle with cheese and serve hot.

  • Heat oil in medium-size frying pan over a medium-high heat. Preferably use a non-stick frying pan.
  • Add chopped onion and cook for about a minute, then add the Serrano pepper and stir. Cook for 2 minutes and then add the tomato, stir and cook for another 2 minutes. We do not want to overcook the vegetables.

Pour the eggs over the vegetables, season with salt, and let them cook for about 2 minutes and then gently fold the vegetables into the eggs.
