Steps:
- Combine flour, baking powder, baking soda and salt; set aside.
- In mixing bowl, beat eggs until light. Add buttermilk; mix well.
- Add dry ingredients and beat until batter is smooth. Stir in butter.
- Pour about 3/4 cup batter onto a lightly greased preheated waffle iron. Sprinkle with a few pecans.
- Bake according to manufacturer's directions until golden brown.
HUGE BATCH FLUFFY BUTTERMILK PECAN WAFFLES
I think the base of this recipe comes from Waffle House, but I've adjusted it for a large batch and tweaked it a bit - it's amazing and we all love it.

Steps:
- Melt butter in microwave safe bowl.
- Heat up waffle iron.
- Combine dry ingredients in a large bowl.
- Beat eggs, add water - use hand mixer.
- Add to dry ingredients - mix on low until fully mixed.
- Add in butter and mix until incorporated.
- Sprinkle the waffle iron with 2 T. of chopped pecans and pour almost 1 cup of batter on pre-heated, non-stick waffle iron.
- I have used the Black & Decker square waffle iron and the Proctor Silex belgium waffle maker and both work wonderfully - waffles are crispy on the outside and fluffy inside.

Steps:
- In a bowl, stir together the flour, baking soda, baking powder, sugar and salt, In another bowl, beat the egg whites until they hold soft peaks.
- In a third bowl, beat the egg yolks with the buttermilk and butter.
- Mix the dry ingredients into the egg yolk mixture just until smooth.
- Fold in the beaten egg whites and pecans just until blended.
- Heat your waffle iron and bake the waffles according to the manufacturer instructions, browning and crisping on both sides.
PECAN WAFFLES
I found this recipe in a Bisquick pamphlet and it's become my new go to waffle recipe. Sometimes I double the recipe and freeze the leftovers for a quick weekday breakfast.

- First, make the simple batter. Whisk the flour, brown sugar, cinnamon, baking powder and salt together in a large mixing bowl to aerate them. Whisk the melted and cooled butter, buttermilk, eggs and vanilla together in another bowl until smooth. Pour the wet ingredients into the dry ingredients and whisk it all together until it is a thick, smooth batter. Switch to a rubber spatula and gently fold in the chopped pecans.
- Pre-heat the waffle iron and be sure to consult the instruction manual for best results. Scoop 1/4 of the batter into the hot iron to just cover the surface. Close the iron and cook the batter for 4-5 minutes. It should puff up and become completely golden. While it cooks, make the cinnamon honey butter. Stir the soft butter, honey and cinnamon together thoroughly. When the waffle is done, serve it immediately with a dollop of the cinnamon honey butter on top. Repeat the process to make three more waffles and enjoy!
