HONEY CORNBREAD



Honey Cornbread image

Goat's milk adds a subtle tang, but cow's milk will work, too. Cooking the bread in a skillet gives it a nice golden crust.

1 cup medium yellow cornmeal
1 cup all-purpose flour
1/4 cup sugar
1 tablespoon baking powder
Coarse salt
1/8 to 1/4 teaspoon cayenne pepper
1 large egg
1 cup goat's milk
4 tablespoons melted unsalted butter, plus 1 tablespoon room temperature
Finely grated zest of 1 lemon (about 1 teaspoon)
2 tablespoons honey

Steps:

  • Preheat oven to 400 degrees. Whisk together cornmeal, flour, sugar, baking powder, 1 teaspoon salt, and the cayenne pepper to taste. Whisk together egg and milk. Gently stir milk mixture into cornmeal mixture. Stir in melted butter and zest.
  • Meanwhile, place remaining tablespoon butter in an 8-inch ovenproof skillet (preferably cast iron) or an 8-inch round cake pan or pie dish. Heat in oven until melted and foaming, about 2 minutes. Remove from oven, and pour batter into skillet. Bake until top is golden and a toothpick inserted into the center comes out clean, about 25 minutes. Brush top with honey; let cool.

Yield Makes 2 1/2 cups batter, enough for about 12 medium cakes (about 1 1/2-by-3-inches)

Number Of Ingredients 12

Vegetable oil, for pan
1 cup fine yellow cornmeal, preferably stone-ground
1/4 cup all-purpose flour
1/3 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 to 1/4 teaspoon cayenne pepper, to taste
1 cup low-fat buttermilk
1/2 cup whole milk
1 large egg, lightly beaten
1 ounce (2 tablespoons) unsalted butter, melted and cooled

Steps:

  • Preheat oven to 425 degrees. Lightly oil a cast-iron pan, and heat in oven, about 5 minutes. Meanwhile, whisk together cornmeal, flour, sugar, baking powder, baking soda, salt, and cayenne in a large mixing bowl. Combine buttermilk, milk, and egg in a measuring cup. Add to cornmeal mixture, and whisk together. Add melted butter, whisking to incorporate.
  • Fill heated pan with batter until almost full (batter will sizzle when first poured in). Return pan to oven, and bake until dark gold around the edges (time will vary depending on size of pan). Remove from oven, and immediately transfer cornbread from pan to a wire rack. Let cool before serving.

SCALLION AND CAYENNE CORNBREAD

2 1/4 cups all-purpose flour
7 1/2 teaspoons baking powder
6 tablespoons granulated sugar
2 1/2 teaspoons salt
1/4 teaspoons cayenne pepper
3 3/4 cups fine cornmeal
3 beaten eggs
6 tablespoons melted butter
3 tablespoons bacon fat
3 cups whole milk
2 bunches of scallions, green part chopped finely

Steps:

  • Preheat the oven to 425 degrees. With a large rubber spatula, combine the liquid into the dry ingredients with several swift strokes then add the green tops of 2 bunches of finely chopped scallions. Mix just enough to combine all the ingredients. Pour this mixture into a hot 9 by 12 baking pan that has been coated with 3 tablespoons of hot duck fat or bacon drippings. Bake for 20 to 25 minutes or until golden and set.

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.
  • In a large mixing bowl, combine baking mix, sugar, baking powder and cornmeal. In a separate bowl, whisk together the eggs, milk and melted butter until creamy. Stir in flour mixture until blended. Fold in frozen corn if using. Pour batter into prepared pan.
  • Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the bread comes out clean. Serve warm.

1 1/4 cup (or more) buttermilk, room temperature
1/4 cup (1/2 stick) unsalted butter, melted, cooled
1 egg
1 cup (about 4 ounces) lightly packed grated cheddar cheese

Steps:

  • Preheat oven to 425°F. Brush cast-iron corn stick molds with vegetable oil and place in oven. Mix yellow cornmeal, unbleached flour, dark brown sugar, baking powder, salt, baking soda and cayenne pepper in large bowl. Whisk 1 1/4 cups buttermilk, butter and egg in small bowl. Mix into dry ingredients. Stir in grated cheddar cheese. Add more buttermilk if necessary to thin to just pourable consistency. Fill corn stick molds with batter. Bake corn sticks until tester inserted into centers comes out clean, about 20 minutes. Cool in pans 10 minutes. Using tip of small sharp knife, gently lift corn sticks from molds. Serve warm.

This recipe originally came from one of Martha Stewart's cookbooks. She used heart shaped molds, but as I don't have any, I have always just rolled the dough out and used biscuit cutters. Also, I use more than 1/2 tsp cayenne pepper because I like things really spicy!

1/2 lb unsalted butter (softened)
8 tablespoons superfine sugar
3 cups all-purpose flour
1/2 teaspoon cayenne pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Cream together the butter and sugar until very smooth.
  • Sift the flour into the butter mixture and using a pastry mixer (or two forks), work the ingredients into a crumbly but very fine mixture.
  • Add the cayenne pepper.
  • On a lightly floured surface, roll dough out to prefered thickness (I usually make mine kind of thin- about 1/8 inch).
  • Cut into desired shapes and place on a nonstick baking sheet.
  • Bake until golden brown.
  • The time will depend on the size and thickness of your shortbreads.
  • I usually bake mine for about 8 minutes, but if you are unsure, check after 5 minutes to make sure that you don't overbake them.
  • Cool on racks and enjoy!

1 (14 ounce) can water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
  • Whisk sugar, flour, cornmeal, baking powder, cornstarch, cinnamon, and nutmeg together in a bowl. Add coconut milk and evaporated milk; fill empty cans with water (totaling 26 fluid ounces) and add to mixture. 2 packages (8-1/2 ounces each) cornbread/muffin mix
1/4 teaspoon cayenne pepper
2 large eggs, room temperature
1 can (14-3/4 ounces) cream-style corn
1/2 cup buttermilk
1/4 cup plus 1-1/2 teaspoons canola oil, divided
1 cup shredded cheddar cheese
1 small onion, chopped
1 can (4 ounces) chopped green chiles
1 jar (2 ounces) pimiento strips, drained
1 jalapeno pepper, seeded and chopped

Steps:

  • Preheat oven to 350°. In large bowl, combine muffin mixes and cayenne pepper. In another bowl, mix eggs, corn, buttermilk and 1/4 cup oil until blended. Add to dry ingredients; stir just until moistened.
