This hearty black bean dip with chicken and cheese is perfect for game day or just because.

1 (15 ounce) can refried black beans
1 (5 ounce) can chunk chicken
3 tablespoons minced onion
½ cup shredded Colby-Monterey Jack cheese
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon seasoned salt
¼ cup shredded Colby-Monterey Jack cheese
1 (16 ounce) package tortilla chips, or as needed

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 4-cup casserole dish.
  • Mix refried beans, chicken, onion, and 1/2 cup Colby-Monterey Jack cheese together in a large bowl. Stir until chicken is broken up and ingredients are well combined. Mix in chili powder, cumin, and seasoned salt and spoon mixture into the prepared casserole dish. Top with 1/4 cup Colby-Monterey Jack cheese.
  • Bake in the preheated oven until hot and bubbly, about 25 minutes.
  • Serve with tortilla chips and refrigerate any leftovers.

2 tablespoons Old El Paso™ chopped green chiles (from 4.5-oz can)
2 small onions, chopped (1/2 cup)
2 cloves garlic, finely chopped
2 cans (15 oz each) Progresso™ black beans, drained, rinsed
1 cup plain low-fat yogurt
1 teaspoon ground cumin
1/2 teaspoon salt
Tortilla chips or crackers, if desired

Steps:

  • Place chilies, onions, garlic and beans in blender or food processor. Cover and blend on medium-high speed until almost smooth.
  • Spoon mixture into small bowl. Stir in yogurt, cumin and salt. Cover and refrigerate until chilled, or heat in 1 1/2-quart saucepan over medium heat, stirring frequently, until hot. Serve with tortilla chips.

Number Of Ingredients 10

1 medium red onion, chopped
2 (16-ounce) cans black beans, drained and rinsed
2 tablespoons balsamic vinegar
1 tablespoon fresh orange or lime juice
1 tablespoon chopped fresh cilantro
1 tablespoon olive oil
1 garlic clove, peeled
1 teaspoon ground cumin
Salt and freshly ground pepper, to taste
Tortilla chips and, if you're with that sort of crowd, assorted cut-up raw vegetables

Steps:

  • 1. Transfer one tablespoon of the red onion to a cup and set aside for the garnish
  • 2. In a blender or food processor, purée the beans, remaining red onion, vinegar, orange juice, cilantro, oil, garlic, and cumin.
  • 3. Transfer the dip to a bowl; add salt and pepper. Sprinkle with the reserved red onion and serve with tortilla chips and vegetables.

I love Emerald Valley Kitchens bean dips from Eugene, OR, and I decided to find my own bean dip instead of purchasing theirs. Don't be fooled by the ingredients into thinking it's too healthy to be delicious because this is good for you and tasty too! I found this recipe on epicurious.com posted by Pableaux Johnson. He takes it to potlucks because it's simple to fix. This is great unheated just the way it is, but you could also heat it in the microwave and top with a little cheese if you prefer a hot bean dip. I mixed my salt and pepper with the other ingredients instead of adding it on top before serving. If you're using canned black beans, drain and rinse them. I used black beans already prepared from my freezer.

½ cup fat-free creamy salad dressing (ie: Fat Free Miracle Whip TM)
½ cup reduced fat sour cream
1 (4 ounce) can chopped green chile peppers
2 tablespoons chopped fresh cilantro
1 teaspoon chili powder
½ teaspoon garlic powder
1 dash hot pepper sauce, or to taste
1 tablespoon olive oil
1 tablespoon salt
¼ cup picante sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, mash the beans with a fork. Combine the salad dressing, sour cream, green chilies, cilantro, chili powder, garlic powder and hot pepper sauce. Blend well. Refrigerate for 30 minutes. Serve with the baked tortilla chips.
  • Spray the tortillas lightly with olive oil, and sprinkle lightly with salt. Bake until crisp and lightly browned.

1 plum tomato, diced
2 tablespoons diced red onion
1 tablespoon cilantro, chopped, plus sprigs for garnish
Two 15-ounce cans black beans, drained
1 tablespoon ground cumin
2 teaspoons hot sauce
Salt
Tortilla chips, for dipping

Steps:

  • Place the tomato, onion and cilantro into the bowl of a food processor and pulse until well chopped. Add the black beans, cumin, hot sauce and salt, to taste, and pulse until the mixture is mostly smooth. Scrape into a decorative bowl and garnish with cilantro sprigs. Serve with tortilla chips.

  • Roast the jalapeño pepper over an open flame, flipping here and there until the skin chars and blackens. It will start to do so in about 2-3 minutes. Alternatively, you can roast the jalapeño in the oven at 400 degrees Fahrenheit for about 20 minutes or so, until the skins blackens and bubbles up.
  • Flip the jalapeño and blacken both sides. Add the jalapeño to a paper bag or plastic baggie and seal. Let it steam in the baggie for about 5 minutes to loosen the skin.
  • Slice off the stem and give the jalapeño a rough chop. Toss it into a food processor with all of the ingredients and process until the dip is nice and smooth.
