Hippocras is a medieval spiced wine. It was believed to be of use against many diseases. It can be served chilled either before or at the end of the meal, with the desserts. It can also be served warm. Beware that it is quite stronger than wine.

Number Of Ingredients 5

5 liters red wine (not too aged and strong, I use Grignolino)
750 g sugar
40 g ground cinnamon
40 g ground ginger
20 g ground galangal

Steps:

  • Mix the dry ingredients into the wine, till most of the sugar dissolves.
  • Let sit for 2 hours, stirring every now and then.
  • Filter the wine, eliminating all the spices, several times, so as to obtain a clear liquid. I use a cloth towel bag to filter out most of the spice, and then pass the wine in a percolating filter, that works fine.
  • Bottle and let sit in a cool place for at least a couple of days. Best after a month or two.

Hippocras (Non-Alcoholic) image

Hippocras is a medieval spiced drink traditionally made with wine, but the Society for Creative Anachronism feast we attended served this non-alcoholic version of it. I imagine would be as delicious hot as it was cold! A yummy and unique alternative to iced tea or mulled cider.

Yield 2 cups syrup

Number Of Ingredients 7

1 quart apple juice
1 cup honey
1 teaspoon whole cloves
1 inch piece fresh ginger
1 -2 stick cinnamon
1 medium rosemary sprig
1/2 whole nutmeg, chunk

Steps:

  • Combine all ingredients in a two quart saucepan.
  • Bring mixture to a boil.
  • Simmer mixture until it is reduced by half.
  • Strain mixture through fine sieve or cheesecloth to remove spice pieces. (Alternately, you might put all the spices into a cheesecloth or muslin spice bag at the start.).
  • Mix the resultant syrup with water, to taste.

Grains of paradise, cubebs and long pepper are very difficult spices to find, so here is a modern hypocras recipe.

Yield 3 1/2 bottles hypocras

Number Of Ingredients 10

3 to 4 quills cinnamon
1 level tablespoon ground ginger
1 level tablespoon finely chopped galangal
1 level teaspoon freshly and roughly ground cardamom
1 level teaspoon grated mace
1 level teaspoon grated nutmeg
1 sprig rosemary
6 ounces sugar
3 bottles plain red wine
2 wine glasses brandy

Steps:

  • Allow the spices and sugar to infuse in the wine and brandy for 24 hours. Strain through a coffee filter and serve. The traditional Tudor accompaniment to hypocras were wafers.
