COFFEE CUSTARD

Coffee Custard image

This espresso coffee custard is an Italian inspired and simple recipe that taste just like your favourite Starbucks latte. It's creamy, easy to make and bursting with coffee flavour. We use simple ingredients to make it and you can either use real espressos or instant coffee powder. Oh, it's also vegan friendly.

Provided by Nico

Categories     Dessert     Dressing & Sauces

Time 7m

Number Of Ingredients 5

500 g plant milk (soy, almond, rice, oat)
80 g sugar
50 g cornstarch
2 tbsp instant coffee powder (or ½ cup of espresso coffee)
1 tsp vanilla extract

Steps:

  • In a pot off the heat, add plant-milk, sugar, cornstarch, vanilla and coffee. Stir well with a whisk until all the lumps of the cornstarch are gone.
  • Bring the pot on the heat, set it on low, and stir continuously until the liquid thickens into a creamy custard. It can take between 2 to 5 minutes, depending on the quantities.
  • When you have almost reached the consistency that you like, take off the heat and keep stirring for another minute. TIP: The custard will keep thickening while off the heat. Keep this in mind and turn off the heat slightly before you reach your desired thickness.
  • TIP: to check if your custard is ready take a wooden or silicone spatula, dip it in the custard, then run a finger through it. If the spatula stays clean, the custard is ready.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 10

Unsalted butter, melted, for custard cups
1 cup heavy cream
1/2 cup milk
2 tablespoons instant espresso powder
3 large egg yolks
1 large whole egg
1/4 cup sugar
1 teaspoon pure vanilla extract
Pinch of salt
1 ounce shaved chocolate, for garnish (optional)

Steps:

  • Place a roasting pan 3/4 full of hot water in an oven heated to 300 degrees. Brush four 6-ounce custard cups with melted butter. Set aside. Combine the cream, milk, and espresso in a small saucepan over medium heat and bring almost to a simmer. Remove from heat and set aside.
  • Whisk together egg yolks, whole egg, sugar, vanilla, and a pinch of salt in a medium bowl. Add a little of the hot milk mixture to the egg mixture, and whisk well. Add the remaining milk mixture, and whisk again to combine well. Strain mixture through a sieve. Pour into the custard cups, and place in water bath in the oven, making sure that the water comes 3/4 of the way up sides of cups. Bake until the custard is set, about 35 minutes.
  • Remove from the oven and water bath. Cool for about 20 minutes. Loosen custards with a knife. Invert onto serving dishes; top with chocolate. Alternatively, refrigerate, and turn out when needed.

CUSTARD BUTTERCREAM

Custard Buttercream image

Custard buttercream (German buttercream) is a very rich buttercream icing made with the addition of custard. You can change it up by adding different flavors or liquor. This is my basic time-tested recipe for decorating cakes and cupcakes. Makes enough buttercream for one 3 to 4 layer cake or 24 cupcakes.

Time 1h25m

Yield 24

Number Of Ingredients 6

1 egg
1 cup white sugar
½ cup milk
1 ⅓ cups unsalted butter, at room temperature
1 tablespoon rum
1 teaspoon vanilla extract

Steps:

  • Beat egg with a fork in a small, heavy saucepan. Mix in sugar and milk. Heat on medium-low heat, whisking constantly, until it just starts to boil. Continue beating rapidly until mixture thickens to a thin custard consistency. Remove from heat and cool completely, about 1 hour.
  • Beat butter in a bowl with an electric mixer until light and creamy, about 5 minutes. Add cooled custard, 1 to 2 tablespoons at a time, beating well after each addition. Beat in rum and vanilla extract. Keep beating until buttercream is very light and fluffy.

FROZEN VANILLA CUSTARD

Frozen Vanilla Custard image

American-style ice cream uses no eggs, but this is the French style--with eggs! It's rich and creamy and, although traditionally served soft in cones, I prefer to freeze it firm then scoop it.

Provided by Chef John

Categories     Desserts     Frozen Dessert Recipes     100+ Ice Cream Recipes     Vanilla Ice Cream Recipes

Time 3h40m

Yield 4

Number Of Ingredients 6

5 large egg yolks
⅔ cup white sugar
1 pinch salt
1 cup whole milk
2 cups heavy cream
2 ½ teaspoons pure vanilla extract

Steps:

  • Whisk egg yolks, sugar, and salt together until mixture changes from dark golden to pale yellow becomes fluffy.
  • Heat milk and cream in a heavy saucepan over medium heat. Stir occasionally to prevent sticking to the bottom. Cook just until mixture starts to simmer when little bubbles begin to appear on the surface, 5 to 8 minutes. Remove from heat.
  • Whisk a ladleful of milk-cream mixture into the egg yolk mixture. Add another ladleful and whisk thoroughly before adding the next (this will keep the eggs from cooking). Gradually add the remaining milk-cream mixture and whisk thoroughly. Whisk in vanilla. Cool completely (you can place the bowl in a larger bowl with ice water to cool it faster).
  • Pour cooled mixture into a pitcher; cover. Refrigerate until ice cold or overnight.
  • Pour custard mixture into ice cream maker and process (according to manufacturer's instructions) until custard reaches the consistency of soft ice cream, about 20 minutes. Quickly transfer to a plastic container. Place a piece of plastic wrap over the surface of the custard. Cover container and freeze until custard is firm enough to scoop, at least 3 hours.

CLASSIC CUSTARD ICE CREAM BASE

Classic Custard Ice Cream Base image

Rich, creamy and deeply satisfying, there is nothing better than a classic custard ice cream. Sometimes called French-style, this base incorporates eggs, which improve the texture and help prevent ice crystals from forming. This recipe for ice cream base may be churned on its own, but it is meant to have flavors added. See the chart here for flavor options and directions for incorporating them into the base recipe.

Provided by Melissa Clark

Categories     ice creams and sorbets, dessert

Time 45m

Yield 1 1/2 quarts

Number Of Ingredients 6

2 cups heavy cream
1 cup whole milk
⅔ cup sugar
⅛ teaspoon fine sea salt
6 large egg yolks
Your choice of flavoring (see chart)

Steps:

  • In a small pot, simmer heavy cream, milk, sugar and salt until sugar completely dissolves, about 5 minutes. Remove pot from heat. In a separate bowl, whisk yolks. Stirring constantly, slowly whisk about a third of the hot cream into the yolks, then whisk the yolk mixture back into the pot with the cream. Return pot to medium-low heat and gently cook until mixture is thick enough to coat the back of a spoon (about 170 degrees on an instant-read thermometer).
  • Strain through a fine-mesh sieve into a bowl. Cool mixture to room temperature. Cover and chill at least 4 hours or overnight. Churn in an ice cream machine according to manufacturers' instructions. Serve directly from the machine for soft serve, or store in freezer until needed.

COFFEE CREAM CUSTARD

Coffee Cream Custard image

I love desserts w/the flavor of coffee. This coffee dessert by Carol Cutler from "6-Minute Souffle & Other Culinary Delights" has the added advantage of being able to be made the day before a spec occasion. Ms. Cutler may be able to make this in 6 min, but I estimated the time more reasonably & kept in mind that we (you & me) do not have an extra pair of hands to assist us in our kitchens! Enjoy!

Provided by twissis

Categories     Dessert

Time 20m

Yield 6 serving(s)

Number Of Ingredients 7

1 cup coffee (strong & freshly made)
1/2 cup heavy cream
2 cups milk
3 eggs
3 egg yolks
3/4 cup sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F (180°C).
  • Pour milk into a 1 qt saucepan. Stir coffee into the milk & slowly bring the mixture to the boiling point.
  • Meanwhile, put the eggs & egg yolks in a lrg mixing bowl & beat together thoroughly w/a wire whisk. Then beat in the cream & sugar.
  • When the milk mixture reaches the boiling point, slowly pour it into the egg mixture, beating vigorously w/the whisk. Add the vanilla extract & beat again.
  • Pour half of the coffee cream into a 10-in pie dish or 6-cup souffle dish. Set the dish in a shallow pan filled w/boiling water to reach halfway up the side of the dish.
  • Working quickly, transfer the dish to the preheated oven & pour the rest of the coffee cream into the dish.
  • Reduce the oven temp to 325°F (160°C) & bake the coffee cream for 1 1/4 hours or till a knife plunged into the center comes out clean & dry.
  • Remove the dish from the oven & allow to cool to room temperature. Cover & refrigerate for a minimum of 3 hours to overnite.
  • NOTES: It was strongly emphasized that this dessert must be served icy cold. No other serving suggestions were included, but how could it be wrong to serve in goblets w/a sprinkle of choc shavings? NOT!

BASIC CUSTARD ICE CREAM BASE

Basic Custard Ice Cream Base image

from website TheKitchn "This custard ice cream recipe is a building block for any ice cream you have the imagination to create. It can be enriched, infused, tricked up, or paired down until you get your ice cream just the way you like it. Heating the milk before adding it to the egg mixture might seem like a needless step. Adding pre-heated milk reduces cooking time and starts to heat the eggs slowly and gently, which thickens the custard without risking cooked eggs. Be careful not to add the milk while it's still to hot or you'll get scrambled eggs. Ideally, you should be able to comfortably hold your finger in the milk for 10 seconds." ***For Milk you can use either whole milk, heavy cream, or a mix***

Categories     Frozen Desserts

Time 40m

Yield 1 container, 1 serving(s)

Number Of Ingredients 5

3 cups milk, see recipe description
1 cup sugar
8 egg yolks
1 pinch salt
1 teaspoon vanilla (optional)

Steps:

  • Have a strainer in a bowl ready over an ice bath.
  • Bring the dairy to a simmer in a medium pot over medium-high heat--about 5 minutes. Watch it carefully so it doesn't boil over. Remove from heat as soon as you see bubbles forming and let sit until it's cooled to room temperature--about 10 minutes.
  • Meanwhile, beat the eggs, sugar, and pinch of salt into a thick paste. When the dairy has cooled, stream it in while stirring the egg mixture.
  • Once combined, return everything to the pan and cook over medium-low heat. Stir gently in an "S" shape, being sure to scrape the bottom of the pan.
  • The sauce is ready when it looks silky, has thickened so it coats the back of a wooden spoon, and has reached a temperature of about 170-degrees. Strain it into a bowl set over an ice water bath and stir in the vanilla.
  • When cooled, freeze mixture in an ice cream maker according to the manufacturer's instructions.
