OYSTER CHOWDER
This oyster chowder was one of Amanda Hesser's grandmother's standbys, a recipe untouched over generations and passed along to The Times in 2005. If you have oysters, the rest is fairly straight-forward: Bacon adds smokiness, while milk and potatoes lend creaminess. And, as if that weren't appealing enough, the whole thing is ready in 30 minutes or less.

Steps:
- Spread bacon in a soup pan and place over medium heat. Cook until browned and its fat has rendered. Drain. Discard all but 1 tablespoon of fat and put pan back on the heat. Scrape the onion and celery into the pan and saute until softened. Drop in the potatoes. Add enough water to cover, about 3 cups. Bring to a boil, then reduce the heat and simmer until the potatoes are tender, 15 minutes.
- Take the pan off the heat and, using a masher, lightly crush the potatoes to thicken the chowder. Add the oysters and oyster liquor and season to taste with salt and cayenne pepper. Simmer until the oysters curl, about 5 minutes.
- Pour in the milk (use 2/3 cup if you prefer it less rich), bring to a boil, then shut off the heat. Crumble in the bacon and stir in the parsley.
POTATO CHOWDER
This is another VERY QUICK and EASY, yet VERY TASTY soup. This recipe was handed down to me by my mother (who would usually rather eat out than cook). My family loves this with a salad and bread. It is comforting on a cold winter day.

- Melt butter in large sauce pan.
- Sauté carrots and onion until soft, not brown.
- Stir in potatoes, broth, salt and pepper.
- Bring to a boil, simmer 10 minutes or until potatoes are tender.
- Stir in cream and heat through.
- Thicken with flour water.

EAST COAST HALIBUT AND POTATO CHOWDER
Steps:
- In a large sauce pot over medium heat place canola oil. Add onion, garlic, shallots, bay leaf and tumeric and saute for 2 to 3 minutes. Add potatoes, clam juice, hot sauce, black pepper and bring to a boil and reduce heat and simmer for 20 minutes. After 20 minutes, check to see if potatoes are done. Add roux and mix well to thicken. Add fish and simmer for 1 minute. Stir in the milk and cream and increase the heat to bring to a boil. Garnish with parsley and serve.
IVEY HOUSE GATOR CHOWDER

- In a medium saucepan, heat the bacon grease and butter over medium heat. Add the potatoes and cook for 2 minutes. Add all remaining vegetables, then cook for an additional 3 minutes. Add the seasonings and flour. Cook for 3 additional minutes. Do not brown ¿ leave blond. Add the port wine, water, and seafood base. Cook until the mixture thickens. Add the tomato sauce, and cook for 3 more minutes. Add the alligator meat. Cook for 5 more minutes ¿ do not overcook the gator. Adjust seasoning, to taste. Serve in large soup bowls.
BASIC HASSELBACK IDAHO® POTATOES
For just a little more effort than a plain baked potato, you can make these showy Hasselback potatoes. They are easy to make and encompass two favorite potato textures - edges that are crispy like your favorite French fries with a creamy center reminiscent of mashed. - Preheat oven to 400 degrees F.
- Prepare a bowl of cold water with a squeeze of lemon juice in it. Slice off the bottom of each Idaho® Russet Potato lengthwise to make them steadier for cutting. Place potato between two chopsticks. Cut slits 1/4 apart using the chopsticks as a guide to keep from cutting all the way through. The slices should stay connected at the bottom. Carefully fan out the sliced pieces without breaking them apart. Place the cut potato in the prepared bowl of water while you cut the remaining potatoes.
- Melt butter in a saucepan over medium heat. Add a couple of sprigs of rosemary, the sliced garlic, and a sprinkle of salt and pepper. Let sit a few minutes to season the butter.
- Remove potatoes from water and dry thoroughly. Place on a baking sheet. Brush potatoes with some of the melted butter and bake for 1 hour. Halfway through cooking, the potatoes will start to fan out. When this happens, brush with some more of the melted butter.
- Remove from the oven. Brush with remaining butter, sprinkle with salt, and garnish with chopped parsley. Serve right away.

- Fry bacon until crisp in a saucepan large enough for making soup. Remove bacon. Add onion and sauté until limp. Add potatoes, carrots, boiling water and salt. Cover and cook until vegetables are tender, 8 to 10 minutes. Add seasonings. Blend flour with 1/4 cup of milk and add with the remaining milk to the vegetable mixture, stirring constantly. Heat until slightly thickened. Crumble bacon and sprinkle over the soup.

POTATO SEAFOOD CHOWDER
Young potatoes -- often called new potatoes -- are a tender, tasty addition to this hearty seafood chowder.

- Place clams and water in a medium saucepan over medium-high heat. Cover, and bring the water to a boil. Cook, stirring occasionally, until the clams have opened, 5 to 8 minutes. Remove clams, discard shells, and pass the broth through a cheesecloth-lined sieve, reserving the broth and clams separately. Set both aside.
- Melt butter in a medium stockpot over medium heat. Add onion and celery, and cook, stirring frequently, until onion is translucent, about 4 minutes. Add flour, and cook, stirring, for 30 seconds. Add the reserved clam broth and the potatoes, bay leaf, and thyme. Cover, and bring to a boil. Reduce heat to medium-low, and simmer until the potatoes are tender, 10 to 12 minutes. Uncover, and add fish and shrimp. Cover, and simmer until cooked through, about 3 minutes. Add half-and-half and the reserved clams; season with salt and pepper. Heat through, but do not return to a boil.

- Stir together the milks, ginger, garlic, lime zest, and bouillon cube in a large, heavy-bottomed pot over medium-high heat. A Le Creuset pot is perfect for this! Bring the liquid to a gentle simmer, and continue to cook for 10 minutes. Remove from the heat and put a lid on the pot to keep the chowder broth warm.
- Melt the butter in a large skillet over medium heat. Once the butter is bubbling, add the lemongrass, sweet onion, and celery. Sauté the vegetables until softened, about 10 minutes.
- Sprinkle the flour over the softened lemongrass, onion, and celery, and vigorously whisk it all together to completely coat the vegetables. Cook for 5 – 7 minutes, frequently tossing around the skillet, or until it all begins to lightly brown. Add the diced potatoes, and gradually whisk in the vegetable broth, a little at a time.
- Stir in the clams and clam juice, bring to a simmer, and cook for 10 minutes, or until the liquid thickens into a sauce-like consistency.
SEAFOOD AND IDAHO® POTATO CHOWDER

- Cook bacon in medium stockpot until just crisp. Add butter and melt. Add onions and garlic, season with salt and pepper and cook until soft. Add celery and flour and cook 1 minute, stirring continually with a wire whisk, until the flour and butter/bacon fat are smooth.
