1 cup sugar
1 egg
1 teaspoon vanilla extract

Steps:

  • In a large bowl, cream peanut butter and sugar until light and fluffy, about 4 minutes. Beat in egg and vanilla. , Shape level tablespoonfuls into balls. Place 2 in. apart on ungreased baking sheets; flatten with a fork. Bake at 350° for 16-18 minutes or until set. Cool for 5 minutes; remove to wire racks.

Make a batch of these flourless peanut butter cookies in less than 15 minutes! They are soft and absolutely delicious plain, with a dollop of jam or a drizzle of chocolate on top. We prefer these with a blend of granulated and brown sugar, but you can use just one type of sugar. (We use 1/2 cup brown sugar and 1/4 cup white) **If making the jam-filled cookies, it is best to add the jam the day of serving. If left overnight, the cookies will soften too much from the extra moisture. Store plain cookies and chocolate drizzled cookies in an airtight container up to 2 days or freeze wrapped individually up to 3 months.

1 cup peanut butter, creamy or chunky, see notes
1 large egg
3/4 cup sugar, use granulated, brown sugar or a blend
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1/2 teaspoon molasses, optional
1/4 teaspoon ground cinnamon, optional
Pinch of salt, to taste, see notes

Steps:

  • Heat the oven to 350 degrees Fahrenheit. Line two baking sheets with parchment paper or use silicone baking mats.
  • In a medium bowl, mix the peanut butter, egg, sugar, baking soda, a pinch of salt, vanilla, molasses (optional), and the cinnamon (optional) together until blended and scoopable.
  • Scoop or roll into 1-inch balls and place two inches apart on the prepared baking sheets. Press the mounds down with the back of a spoon or the tines of a fork to flatten the cookie out a bit.
  • Bake until the outer edges are starting to turn light brown and the tops look dry, 8 to 11 minutes. Cool the cookies on the baking sheet, without moving them, for 10 minutes. Transfer the cookies to a cooling rack to cool completely. (The cookies will firm up as they cool).
  • For jam-filled peanut butter cookies, before baking, use a spoon to make a small indent in the middle of the cookie dough balls. When the cookies are baked and cool, spread a teaspoon of jam into the middle of each cookie.
  • For the chocolate drizzled cookies, when the cookies are baked and cool, melt 1/3 cup chocolate chips and drizzle over cookies. For chocolate-peanut butter drizzled cookies, add one tablespoon of peanut butter to the chocolate chips before melting.

  • In a large bowl, mix together the peanut butter, sugar, and egg.
  • Scoop out a spoonful of dough and roll it into a ball. Place the cookie balls onto a nonstick baking sheet.
  • For extra decoration and to make them cook more evenly, flatten the cookie balls by pressing a fork down on top of them, then press it down again at a 90º angle to make a criss-cross pattern.

1 cup peanut butter (your choice, smooth or chunky)
1 cup granulated sugar
1 large egg
sugar, for rolling (optional)

Steps:

  • Mix peanut butter, sugar, and egg together until smooth.
  • Drop by teaspoon onto cookie sheet two inches apart. If desired, roll in extra sugar before placing on cookie sheet.
  • Press with fork; press again in opposite direction.
  • Bake 10 to 12 minutes at 350 degrees Fahrenheit.
  • Do not brown; do not over bake.

This recipe was given to my mother back in the early 50's by our next door neighbor. It is the best peanut butter cookie recipe we have ever had. Make sure you stick to the recipe, especially the Butter flavored Crisco. I usually double this recipe because the cookies disappear quickly! Enjoy!

1 cup Butter Flavor Crisco
1/2 teaspoon salt
1 cup peanut butter (I use Jif)
1 cup sugar
1 cup firmly packed brown sugar
2 beaten eggs
1 tablespoon milk
2 cups flour
1 teaspoon baking soda

Steps:

  • Preheat oven at 325°.
  • Mix all dry ingredients together in a bowl; set aside.
  • In a large mixing bowl, combine eggs and milk together, then add Crisco and peanut butter and blend well. Now add the dry ingredients and mix together. Batter will be stiff.
  • Drop by teaspoonfuls onto greased cookie sheet making sure to leave baking space between cookies. Dip a fork into water and press into dough to form a criss-cross pattern onto the top of cookie. Bake for 10-12 minutes at 325°. Remove from cookie sheet and allow to cool on waxed paper.
