2 tablespoons vegetable oil
12 boneless, skinless chicken thighs
Salt and pepper
Small onion, chopped
3 cloves garlic, minced
1-inch piece fresh ginger, peeled and finely grated
1 small green chile
1 tablespoon cumin
1/4 teaspoon cayenne
2 tablespoons garam masala
1 28-ounce can pureed tomatoes
1/2 cup water
1/4 cup heavy cream

Steps:

  • Heat a large skillet over high heat. Add 2 tablespoons vegetable oil.
  • Season chicken with salt and pepper and add to hot pan. Brown on both sides. Cook in batches if needed.
  • Remove chicken from pan and add onion, garlic, and ginger. Cut a slit into the chile lengthwise and add to pan. Saute the onion mixture until softened, about 3-5 minutes. Add spices and cook for 30 seconds.
  • Add tomatoes and 1/2 cup water and stir. Add chicken back to pan and bring up to a simmer. Cover and simmer until chicken is cooked through and sauce is thickened, about 30 minutes. Turn chicken occasionally throughout cooking.
  • When ready to serve, uncover and stir in cream. Simmer for 1 minute and serve.

4 skinless, boneless chicken thighs, cubed
salt and pepper to taste
5 tablespoons curry powder
1 teaspoon paprika
¾ teaspoon ground cinnamon
¾ teaspoon ground ginger
½ teaspoon ground turmeric
1 small onion, chopped
2 cloves garlic, minced
1 bay leaf
3 tablespoons olive oil
1 (14 ounce) can coconut milk
1 (5.3 ounce) container Greek yogurt
2 tablespoons tomato paste
1 (16 ounce) canned chickpeas, drained and rinsed
1 cup frozen peas
4 tablespoons crushed pineapple
½ lemon, juiced
¼ teaspoon cayenne pepper

Steps:

  • Season cubed chicken with salt and pepper and set aside.
  • Preheat a large dry skillet over medium heat. Add curry powder and toast until lightly browned and fragrant, stirring constantly, 2 to 3 minutes. Add paprika, cinnamon, ginger, and turmeric and roast, stirring constantly, for 1 to 2 minutes. Stir in onion, garlic, and bay leaf. Pour in olive oil and mix to combine.
  • Mix chicken, coconut milk, yogurt, tomato paste, salt, and pepper into the spices in the skillet. Stir well to combine. Mix in chickpeas, peas, and pineapple. Bring mixture to a boil, reduce heat, and simmer for 20 to 25 minutes. Remove bay leaf and stir in lemon juice and cayenne pepper. Simmer for 5 more minutes. Taste and adjust the seasoning to your liking.

This is an Indian-flavored dish, which is different from normal Indian curried chicken recipes in that it doesn't contain yogurt. This is good with rice, beans, or lentils. I like to make dahl, an Indian lentil side dish with this.

2 pounds boneless, skinless chicken thighs
1 tablespoon cooking oil
1 small onion, chopped
3 cloves garlic, minced
1 teaspoon minced fresh ginger
1 pound fresh green beans, trimmed and cut into thirds
1 ½ tablespoons honey
1 small lemon, juiced
½ teaspoon garam masala
½ teaspoon salt, or to taste
½ teaspoon ground black pepper, or to taste
4 ounces fresh spinach
4 leaves fresh mint, or more to taste

Steps:

  • Cut chicken thighs in half.
  • Coat a large frying pan with cooking oil. Add chicken, onion, garlic, and ginger; cook over medium-high heat, stirring frequently, until onion is translucent and chicken is slightly seared on the outside, 5 to 10 minutes.
  • Mix in green beans, honey, lemon juice, garam masala, salt, and pepper. Reduce heat to medium-low, cover, and cook, stirring occasionally, until chicken is no longer pink in the center and the juices run clear, 20 to 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Stir in spinach and cook until wilted, about 2 minutes. Garnish with mint leaves and serve.

3/4 teaspoon salt

Naan flatbreads, warmed

Steps:

  • Microwave sweet potatoes and water, covered, on high just until potatoes begin to soften, 3-4 minutes., In a 5- or 6-qt. slow cooker, combine vegetables and chicken; add sauce and salt. Cook, covered, on low until meat is tender, 4-5 hours. If desired, top with cilantro; serve with warmed naan., Freeze option: Omitting cilantro and naan, freeze cooled chicken and vegetable mixture in freezer containers. I've been vegetarian on and off, so I'm not sure if I've ever tried this, but my husband *loves* it. ***cayenne & paprika*** You can combine them in any amount you like, as long as you use a total of 1 1/2 tablespoons. (I usually just use a little bit of cayenne and a LOT of paprika, so the kids can eat it too.) I use chicken legs (because they are cheap) and the marinade covers about 10 legs.

1 tablespoon cumin
1 tablespoon paprika
1 1/2 teaspoons cayenne (see note above!!!)
1 tablespoon turmeric
1 teaspoon fresh ground black pepper
2 teaspoons salt
2 -3 garlic cloves, pressed
6 tablespoons lemon juice
3 1/2 lbs chicken pieces
3 tablespoons vegetable oil

Steps:

  • Combine cumin, paprika, cayenne, turmeric, black pepper, salt, garlic, and lemon juice in a bowl and mix.
  • Rub this mixture over the chicken pieces, including into flaps and along leg bones.
  • Place the pieces in a shallow baking dish, cover with plastic wrap, and set aside (I refrigerate) for at least 3 hours.
  • Preheat oven to 400F (200C) and brush the tops of the chicken pieces with oil.
  • Bake 20 minutes.
  • Turn the pieces over and bake another 25 minutes or until tender.
  • Baste the chicken with drippings 3 or 4 times.
  • If there is sauce remaining after baking (I say "if" because I've never done this part!), pour it into a small pot and boil until somewhat reduced.
  • Arrange chicken on a platter and pour the reduced sauce over them.

This is my own adaptation from a recipe I found on Zaar for "Spicy Potatoes." Make it spicy or mild, according to your preference. This recipe is only mildly spicy.

1 lb boneless skinless chicken (thighs or breasts, your preference-I used thighs)
1 teaspoon chopped garlic
1 1/2 lbs potatoes
1 (15 ounce) can stewed tomatoes with juice
4 teaspoons oil
1 teaspoon cumin seed
1/4 teaspoon asafoetida powder
3/4 teaspoon turmeric
1 teaspoon ground coriander
3/4 teaspoon chili powder
1 teaspoon paprika
1 teaspoon salt
3/4 teaspoon cayenne pepper (to taste)
1/2 teaspoon garam masala
3/4 cup chicken broth

Steps:

  • Cut up chicken into bite-sized pieces. If you leave a little of the fat on the chicken you can use less oil in the cooking.
  • Scrub potatoes and cut into uniform bite-sized pieces.
  • Heat 2 teaspoons of oil at medium-high heat in a large saute pan. Add garlic. Saute garlic and chicken until the chicken is cooked. Remove from pan, leaving behind any oil. Set chicken aside.
  • Add 2 teaspoons oil to the pan and heat. Add cumin seeds and asafoetida and let them sizzle for about 30 seconds.
  • Add the tomatoes, turmeric, coriander, chili powder, paprika, salt and cayenne pepper. Let this mixture cook on medium-high heat for about a minute.
  • Add the potatoes and fry for about 2 minutes, stirring constantly. Then add the chicken and garam masala and mix everything well. Add the broth, bring to a boil, then lower the heat. Cover and cook until the potatoes are tender, about 20 minutes, depending on the size of the potatoes. If the mixture looks dry, add water, no more than 1/4 cup at a time.
  • Alternatively, after mixing everything, you can transfer the mixture to a crockpot and cook on medium for about an hour. Serve over rice if desired.
