SOUR CREAM NOODLE BAKE

Steps:
- Preheat the oven to 350 degrees F.
- Brown the ground chuck in a large skillet. Drain the fat, and then add the tomato sauce, 1/2 teaspoon salt and plenty of freshly ground black pepper. Stir, and then simmer while you prepare the other ingredients.
- Cook the egg noodles until al dente. Drain and set aside.
- In a medium bowl, combine the sour cream and cottage cheese. Add plenty of freshly ground black pepper and a pinch of red pepper flakes. Add to the noodles and stir. Add the green onions and stir.
- To assemble, add half of the noodles to a baking dish. Top with half the meat mixture, and then sprinkle on half the grated Cheddar. Repeat with noodles, meat and then a final layer of cheese. Bake until all the cheese is melted, about 20 minutes.
- Serve with crusty French bread.
- To freeze: Assemble the Sour Cream Noodle Bake in a disposable aluminum oven-proof pan and seal the top of the container with the lid or heavy foil. Seal the edges to prevent freezer burn and place in the freezer.
- To cook from frozen: Place directly in a 375-degree F oven and bake, covered, for 45 minutes. Remove the lid and bake until lightly brown and bubbly, about 20 minutes more.
SOUR CREAM CHOCOLATE CHIP NUT LOAF
At any point during the 1980s, you could've opened the middle pantry drawer in our kitchen and discovered a treasure trove of baked goods from our supermarket's Entenmann's display: fudge-frosted doughnuts, mini chocolate chip cookies, thick-glazed cupcakes. My father had--and still has--an epic sweet tooth that deserves a three-hundred-page volume all to itself. The king of the drawer, though, was the Sour Cream Chocolate Chip Nut Loaf, because it only made rare appearances at the supermarket, and, much to our dismay, eventually disappeared from shelves across the country. (We never did find out why.) My father and I were the biggest fans of the loaf, and in the twenty-five years since I've seen it, I don't think I've ever walked by the Entenmann's section without secretly hoping I'll spy one amid the doughnut holes and crumb cakes. Until then, I have this homemade version, which comes about as close as you can get.

- Preheat the oven to 375 degrees F. Butter a 9-by-5-inch standard loaf pan.
- Make the cinnamon sugar: In a small bowl, mix together the sugar and cinnamon
- Make the batter: In a large bowl, using an electric mixer at medium speed, beat the eggs until frothy, about 3 minutes. Add the sugar and vanilla, beating until smooth. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Add the melted butter and sour cream to the egg-and-sugar mixture; beat until well combined. At low speed, add the dry mixture to the wet mixture a spoonful at a time, beating just until smooth. Fold in the chocolate chips.
- Spread half of the batter in the prepared pan and sprinkle evenly with about two-thirds of the cinnamon sugar. Sprinkle with the walnuts. Top with the remaining batter, spreading evenly, then sprinkle with the remaining cinnamon sugar.
- Bake for 50 to 55 minutes or until a knife or skewer inserted in the center comes out clean.

- Cook noodles in boiling salted water. Rinse in cold water and drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Brown meat in butter; add salt, pepper, garlic salt and tomato sauce. Simmer for 5 minutes. Mix cottage cheese, sour cream, onions, meat sauce and noodles. Place in a casserole dish and sprinkle with cheddar cheese
- Bake, uncovered, at 350 degrees F (175 degrees C) for 20 to 25 minutes.

- Preheat oven to 350°. Cook noodles according to package directions; drain. Transfer to a large bowl. Add the cottage cheese, sour cream, onion, Worcestershire sauce and garlic salt. Spoon into a greased 2-qt. baking dish. Sprinkle with Parmesan cheese., Bake, uncovered, until top is lightly browned, 35-40 minutes. If desired, sprinkle with paprika.

LIGHT SOUR CREAM GLAZE
This is what I used for my WW Carrot Cake. I had to use what I had on hand and this is it. Hope you enjoy. This also good on coffee cakes and cupcakes, and brownies. I have even dipped graham crackers in it to get a little sweet in now and then. I do not use the whole recipe on my cake, but I did put it as 12 servings because that is how many slices of cake I cut. Comes to 2 pts WW.

SOUR CREAM NOODLE DELIGHT
Delicious and simple "comfort food" are my favorites in the fall and winter. My DH and I like to have this with a simple tossed salad. I found this recipe in a church cookbook and have changed it up a bit to make it my own! Note --original recipe does not specify type of cheese but I have used either cheddar or colbyjack with good results. **For OAMC - this recipe doubles really well and can be frozen up to 1 month. hmmm the oven temp disappeared! Should say preheat oven to 350F.

Steps:
- Preheat oven to 350 degrees.
- Cook noodles, drain.
- Brown meat with onion and green pepper.
- Add seasonings and tomato sauce to meat mixture.
- Simmer 5 minutes.
- Combine cottage cheese, sour cream, 1/2 cup shredded cheese and cooked noodles.
- Place 1/2 of noodle mixture in greased casserole. Cover with the meat mixture. Put rest of noodle mixture on top.
- Sprinkle with 1 cup shredded cheese over all.
- Bake 20 minutes.
- Add Parmesan cheese and bake additional 10 minutes.
- ***For OAMC/Freezing - Assemble up to the point of baking and freeze. Allow to thaw before baking.
